SHREDDED BBQ BEEF
This Shredded BBQ Beef is fall-apart tender and flavorful! Beef chuck roast is seasoned & braised in the oven (or crock pot). It is finished with a homemade BBQ seasoning giving it tons of flavor.

Steps:
- Preheat the oven to 325°.
- In a small bowl mix together all the BBQ Seasoning ingredients. Expert Tip - make sure all the brown sugar clumps are separated before moving on.
- Reserve 2 tbsp of the BBQ Seasoning and set aside.
- Pat the beef dry with paper towels. Then cut it into 3 inch chunks. Discard any large pieces of white fat.
- Season all sides of the beef with the BBQ Seasoning.
- In a large pot (that has a lid, like a Dutch oven) whisk together the beef broth, Worcestershire and tomato paste. Add the onions and garlic to the pot.
- Place the seasoned beef pieces on top of the onions in the pot.Expert Tip- mop up any excess seasoning with the beef pieces before placing in the pot.
- Pop the lid on and place in the preheated oven for 3 hours, until the beef shreds easily.Expert Tip- if at the end of 3 hours your beef is not tender, add 20 minute increments until it is ready.
- Remove the beef pieces from the pot, place on a rimmed baking sheet and shred with 2 forks.Remove any large pieces of fat you may come across.
- Optionally you can add the garlic and cooked onions from the braising liquid to your shredded beef. The actual braising liquid is discarded in this recipe. It can tend to be quite greasy and would also make your bbq beef greasy.
- Sprinkle 1/2 of the reserved BBQ Seasoning over the shredded beef and toss to coat. Give it a taste and add more seasoning to your liking.
- Mix the beef with 1/2 cup of your favorite BBQ Sauce.
- Serve the Shredded BBQ Beef on buns or rolls with additional BBQ sauce, coleslaw, pickles and/or cheese.... whatever toppings you like!

Something to cook on a five- to six-hour car trip. This is not my creation. It appeared in the Baton Rouge Morning Advocate newspaper and I believe it was taken from a published cookbook.

Steps:
- Start with a 2- to 3-pound roast, the flatter the better.
- Season with dry Good Seasons Salad Dressing mix or dry mushroom soup, salt and pepper or any way you season a roast before roasting.
- Double or triple wrap in heavy-duty aluminum foil, crimping on sides so liquid will not leak when you turn the roast. Place on or against the flat part of exhaust manifold or against hot part of engine block.
- Drive five to six hours.
- Turn once halfway to destination.
- You will arrive with a tender, juicy roast, ready to eat, and you will enjoy the smells of a home-cooked meal en route. Note: This will not work on all vehicles, only those with appropriate engine design.

BARBECUED ROAST BEEF
The aroma of this meat baking is awesome...at a social gathering. I knew I wanted this recipe from my girlfriend even before I tasted it! This is a dish you can prepare then forget about for a few hours! Serve it with any salad of your choice, crusty rolls, whatever cool drink you prefer and you've got it made! Steps:
- Put meat in roaster pan with 1 1/2-2 inches of water.
- Sprinkle meat with dry seasonings, salt and pepper and rub over meat.
- Pour sauces over meat.
- Cover and bake in oven at 325°F for 5 hours.
- (You may be able to use a crockpot too!)
- While meat is baking, you can make the sauce.
- Combine all sauce ingredients in saucepan.
- Bring to boil.
- Lower heat.
- Cook and stir for 10 minutes; set aside.
- Take meat out of oven and let set for about 10 minutes.
- Slice meat as thinly as you can.
- Cover with barbecue sauce and keep warm till ready to serve.

- Prepare an outdoor rotisserie grill for medium heat.
- Cut slits on all sides of the roast, and insert garlic slices.
- In a small bowl, mix paprika, salt, pepper, rosemary, and thyme. Rub the mixture over the roast.
- Place roast on the prepared rotisserie, and cook 2 to 5 hours, to a minimum internal temperature of 145 degrees F (63 degrees C). Allow to rest about 20 minutes before slicing.

- Mix enough bar-b-que sauce to make moist.
- Put into bowl with a lid.
- Refrigerate overnight or freeze.
- When ready to use, thaw, if frozen and microwave until hot, usually 2 minutes at a time until hot.
- Serve on buns with sliced onion and pickles.
