MANGO SOUR



Mango Sour image

Number Of Ingredients 6

2 cups green unripened mango, chopped (about 1 mango)
3 garlic cloves, chopped
1-2 wiri wiri peppers or scotch bonnet (or desired amount of pepper sauce)
1/2 tsp salt or to taste
2 1/4 cups water
2 tbsp vinegar (optional)

Steps:

  • Peel and chop mango in 2-3 inch pieces. Discard the seed. Chop garlic, set aside.
  • Combine all ingredients (except vinegar, if adding), in a small pot and bring to a rapid boil for 10-15 minutes.
  • Reduce heat and simmer until mango is soft and cooked through. Mash mango until desired consistency is reached.
  • Adjust pepper and salt to suite.
  • If adding vinegar, allow mixture to cool slightly then stir in.
  • Sour will thicken up once it is cooled.

GUYANESE MANGO SOUR

Mango sour (mango chutney) is the perfect Guyanese sauce, perfect for dipping your savory foods.

2 full cups chopped mango, (approx. 2 medium mangoes)
2 cloves garlic, chopped
1 scotch bonnet pepper, chopped
1 tablespoon chopped culantro (substitute with parsley)
1 tablespoon lime juice
1/4 tsp salt
1/4 tsp sugar
2 cups water
1 tablespoon vinegar (optional)

Steps:

  • Add mango, garlic, scotch bonnet pepper, culantro, lime juice, salt and sugar to a sauce pot
  • Add water and mix together
  • Bring mixture to a high boil and boil for 19 minutes
  • Lower heat to simmer, stirring occasionally
  • As mixture simmers, mash mango as it gets soft
  • Simmer mixture till mango is a texture you desire, mashing as you stir (approximately 10 to 15 minutes)
  • Taste for salt and pepper. If you desire more heat add pepper sauce to liking.
  • Remove mixture from stove (sour will start to thicken up)
  • Cool to about room temperature and add vinegar
  • Serve at room temperature, or store in the fridge for later use

1.8 quarts Hokusetsu saké (pure rice)
7 ounces sugar syrup
10 1/2 ounces mango flesh
3 tablespoons and 1 teaspoon mango syrup
10 drops ginger juice, squeezed from the root in a ginger press

Steps:

  • Combine a little Japanese saké, syrup and fresh mango in a blender and blend.
  • Add the mango syrup and ginger juice, then strain through a cloth. Add the remaining saké and store in the refrigerator.

Garnish: fresh mango spears

a cocktail shaker; 6 (12-oz) double Old Fashioned glasses

Steps:

  • Stir together nectar, vodka, lemon juice, and sugar in a 1-quart glass measure. Shake half of mixture in cocktail shaker half filled with ice cubes until cold, about 30 seconds. Strain into glasses half filled with ice cubes. Shake and strain remaining nectar mixture in same manner.
