These cookies should never be forgotten.

Number Of Ingredients 7

2 egg whites
¼ teaspoon cream of tartar
1 teaspoon vanilla extract
Pinch kosher salt
½ cup caster sugar
½ cup semisweet chocolate chips
½ cup toasted chopped pecans

Steps:

  • Heat the oven to 350° and line a baking sheet with parchment paper. In a stand mixer set at medium speed, whisk the eggs until frothy. Add the cream of tartar, vanilla, and salt and continue to whisk until soft peaks form. Add 1 tablespoon sugar and continue whisking until the sugar has dissolved. Continue adding the sugar, 2 tablespoons at a time, letting the sugar dissolve completely between each addition (you can check by rubbing a small bit of the meringue between your fingers to make sure it's not grainy). Continue whisking until stiff peaks form.
  • Use a spatula to fold in the chocolate chips and pecans. Use a large tablespoon to spoon heaping portions of the meringue on the baking sheet, spacing them 2 inches apart (you should have enough for 12 cookies). Place in the oven and bake 5 minutes, the turn off the heat. Let the cookies dry in the oven for 8 hours or preferably overnight.

These meringues are crispy on the outside and marshmallow-y on the inside, with bits of chocolate throughout. The best part of this recipe is that you turn off the heat once the cookies go in the oven, so you can truly forget about them until the morning. A spring-loaded ice cream scoop makes fast work of forming the meringues and you can use any size you like.

3 large egg whites, at room temperature
Pinch of fine salt
3/4 teaspoon cream of tartar
1 cup superfine sugar
1 teaspoon pure vanilla extract
1 1/4 cups mini semisweet chocolate chips, plus more for garnish

Steps:

  • Position 2 oven racks in the center of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
  • Beat the egg whites and salt in a large bowl on medium speed until frothy. Add the cream of tartar and increase the speed to medium high. Beat in the sugar, 1 tablespoon at a time, then add the vanilla extract. Continue beating until the meringue is thick, glossy and holds stiff peaks, about 6 minutes. Gently fold in the chocolate chips with a rubber spatula.
  • Using a spring-loaded ice-cream scoop (or 2 spoons, using one to nudge the meringue off the other), scoop the meringue into mounds about 2 inches apart on the prepared baking sheets. Sprinkle each cookie with a few more chocolate chips.
  • Put the baking sheets in the oven, then immediately turn off the oven. Let the meringues stand in the oven until dry, at least 4 hours and up to overnight.

One of my favorite times when I was a kid was spending the night with my paternal grandmother, Lorah Nell Green. I called her Mammy. But it was a really good night when we would make Forgotten Cookies and left them in the oven over night! I was always amazed how they would "cook" with the oven off! Now, they are favorites of my grown children!

2 - egg whites
1 teaspoon(s) vanilla
1 teaspoon(s) salt
1 cup(s) semi-sweet chocolate chips
1/4 cup(s) sugar

Steps:

  • Preheat oven to 325 degrees
  • Beat egg whites and salt until it is foamy. Slowly add the sugar a couple of tablespoons at a time, this is important. Beat after each addition until stiff peaks form.
  • Stir in the vanilla and then fold in the chocolate chips.
  • Drop by tablespoons on a wax paper lined cookie sheet and place the sheets in the preheated oven.
  • After 2 minutes, turn the oven off. Leave the cookies in the oven overnight. In the morning, remove from the cookie sheet and store in airtight containers, lined with paper towels to absorb any moisture.

Steps:

  • Preheat oven to 325 degrees F (170 degrees C).
  • Beat egg whites with the salt until foamy. Slowly add sugar, one tablespoonful at a time, beating after each addition until the meringue stands in stiff peaks.
  • Stir in vanilla and fold in chocolate chips. Drop by teaspoonfuls on a lined baking sheet and place in preheated oven.
  • After 2 minutes, turn off oven. Leave meringues in oven overnight. Remove from pan and store in cookie tin lined with paper towel.

⅔ cup white sugar
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1 cup salted peanuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper or aluminum foil.
  • In a large glass or metal mixing bowl, beat egg whites and salt until foamy. Gradually add sugar, continuing to beat until whites form stiff peaks. Fold in the vanilla and chocolate chips. Add peanuts if desired. Spoon onto the prepared cookie sheets.
  • Place the cookies into the preheated oven, shut the door and turn off the oven immediately. Let cookies sit in the turned off oven for 5 to 6 hours or overnight.
