GARLIC-CHEESE MASHED POTATOES



Garlic-Cheese Mashed Potatoes image

Number Of Ingredients 8

3 pounds red bliss potatoes, quartered and boiled fork tender
2 cups heavy cream
1 stick butter
6 cloves garlic smashed
8 ounces shredded Cheddar
Cracked peppercorns
Kosher salt
Chives, for garnish

Steps:

  • Boil potatoes off in a large pot of salted water until tender. Drain the water and place potatoes back in pan.
  • In a large saucepan, heat heavy cream, butter and garlic to a light simmer. Once cream starts to simmer, turn off the heat and add to the potatoes. Mash together. Fold in cheese, peppercorns and salt, to taste. Garnish with chopped chives.

These Cheesy Mashed Potatoes are the BEST potato side dish! Cream cheese, and Colby/Jack cheese along with plenty of butter make them extra creamy, with delicious cheesy garlic flavor in every bite.

3 lbs. Russet and Yukon Gold Potatoes
10 tablespoons butter (room temperature and cut into small cubes)
4 ounces cream cheese (room temperature and cut into small cubes)
1 cup freshly shredded Colby/Jack cheese
1/2 cup milk
2 cloves garlic (minced)
1 teaspoon kosher salt (plus more to taste)
1/2 teaspoon pepper (plus more to taste)
1 tablespoon freshly chopped chives

Steps:

  • Peel the Russet potatoes, but leave the skin on the Yukon Gold. Cut the potatoes into 2-inch slices/cubes and place into large pot. Fill the pot with water to at least an inch above the potatoes.
  • Bring to boil over medium-high heat and cook for 15-20 minutes until potatoes are very soft, but not completely falling apart.
  • Drain and return to pot. Mash with a potato masher, ricer or hand mixer.
  • Add the butter, cream cheese, Colby/Jack cheese, milk, garlic, salt and pepper. Mix thoroughly.
  • Place into serving dish and garnish with chives.

This is a favorite mashed potato casserole recipe handed down through the family. These cheesy mashed potatoes are the best you'll ever taste! Everyone is sure to love it. Mama usually just throws together whatever amounts she thinks taste good. But I did get her to give me a recipe with measurements.

5 pounds potatoes, peeled and cubed
1 cup sour cream
½ cup butter
½ cup grated Parmesan cheese
6 ounces cream cheese, softened
4 ounces extra-sharp Cheddar cheese, shredded
4 stalks green onions, chopped
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
  • While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).
  • Drain potatoes and return to the pot. Mash while hot. Add sour cream, butter, Parmesan cheese, cream cheese, Cheddar cheese, green onions, salt, and pepper; beat until well blended. Transfer to a 3-quart casserole.
  • Bake in the preheated oven for 45 minutes. Serve piping hot.

3 medium potatoes, scrubbed
¼ cup olive oil
1 slice vegan Cheddar cheese (such as Daiya®)
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
¼ teaspoon chopped fresh chives, or to taste

Steps:

  • Poke vent holes in the potatoes. Microwave on high for 13 minutes.
  • Meanwhile, put olive oil, vegan cheese, garlic, salt, and pepper in a small pot over medium-low heat. Heat until cheese is fully melted and garlic is cooked.
  • Let potatoes cool slightly. Halve them and scoop the flesh out into the pot. Discard skins.
  • Mash potatoes and cheese sauce together until fully incorporated.
