SOFT MALTED CHOCOLATE CHIP COOKIES

makes 24 large cookies

Number Of Ingredients 10

2 1/2 cups flour
1/2 cup malted milk powder
1 tsp baking powder
1 1/4 tsp kosher salt
2 tsp cornstarch
1 cup butter, melted
1 1/2 cups light brown sugar
2 eggs
1 Tbsp vanilla
2 cups chocolate chips, (optional ~ plus 1 more cup for pressing into tops of cookies)

Steps:

  • Whisk flour, malted milk powder, baking powder, salt and cornstarch together. Set aside.
  • Melt butter in a small saucepan over medium low heat. Remove from heat.
  • In large mixing bowl combine the butter and brown sugar, using wooden spoon or mixer set on lowest setting.
  • Stir in eggs and vanilla with mixer still on lowest setting until combined.
  • Stir in dry ingredients until evenly incorporated.
  • Fold in chocolate chips.
  • Chill dough for 2 hours or up to 3 days.
  • Preheat oven to 350°
  • Line baking sheet with parchment paper.
  • Scoop approximately 2 Tbsp of dough and form into a ball. Place dough 3 inches apart on lined baking sheet. Press additional chocolate chips into the top of the dough balls if desired.
  • Bake for 11-12 minutes until the edges golden. Don't over-bake.
  • Allow to cool on baking sheet for 3 minutes and then transfer to a wire rack to continue cooling.

1 cup white, (oat, or spelt flour)
1/2 tsp baking soda
1/4 tsp salt
1/4 cup sugar,
1/4 cup brown sugar or coconut sugar
1/3 cup chocolate chips
2 tbsp milk of choice, (plus more if needed)
2 tbsp oil or melted vegan butter
1/4 tsp pure vanilla extract

Steps:

  • Combine all dry ingredients in a bowl, then stir in wet to form a dough - it will be dry at first, so keep stirring until a cookie-dough texture is achieved. If needed, add 1-2 tbsp extra milk of choice. Form into one big ball, then either refrigerate at least 2 hours or freeze until the dough is cold. Once dough is chilled, preheat oven to 325 F. Form dough balls, and place on a greased baking tray, leaving enough room between cookies for them to spread. Bake 11 minutes on the center rack. They'll look underdone when you take them out. Let them cool on the baking tray 10 minutes before touching, during which time they will firm up. If for whatever reason the cookies don't spread enough (climate can play a huge role), just press down with a spoon after baking. You can also choose to make extra cookie dough balls and freeze them to bake at a later date. I can only vouch for the flours listed, but feel free to experiment!View Nutrition Facts

2 sticks unsalted butter, softened
3/4 cup golden brown sugar
3/4 cup granulated sugar
2 whole eggs
2 teaspoons vanilla extract
1/2 cup (rounded) malted milk powder
2 cups all-purpose flour
1 1/4 teaspoon baking soda
1 1/4 teaspoon salt
One 12-ounce bag milk chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Cream the butter, then add both sugars and cream until fluffy. Add the eggs and beat slightly, then add the vanilla and beat until combined. Add the malted milk powder and beat until combined.
  • In a separate bowl, sift together the flour, baking soda and salt. Add to the butter mixture, beating gently until just combined. Add the chocolate chips and stir in gently.
  • Drop by teaspoonfuls (or use a cookie scoop) on an ungreased baking sheet, leaving plenty of space between the cookies (they spread out quite a bit). Bake for 9 to 11 minutes. The cookies will be very flat and very chewy. Allow to cool slightly before removing from pan with a spatula.
  • Optional: Allow to cool completely, then use 2 cookies to make an ice cream sandwich. Add sprinkles to the sides of the ice cream, then wrap individually in plastic wrap.

1/2 cup instant malted milk powder
2 tablespoons chocolate syrup
1 tablespoon vanilla extract
1 large egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips

Steps:

  • In a mixing bowl, combine shortening, brown sugar, malted milk powder, chocolate syrup, and vanilla; beat for 2 minutes.
  • Add egg and mix.
  • In a small bowl mix flour, baking soda, and salt.
  • Gradually add to creamed mixture.
  • Stir in chocolate chips and chunks.
  • Shape into 1 1/2 - 2-inch balls; place about 3-inches apart on ungreased baking sheets.
  • Bake at 350° for 10-12 minutes or until golden brown.
  • Cool for 2 minutes on pan before removing to wire racks to cool completely.

140g butter , softened
50g golden caster sugar
100g soft light brown sugar
2 medium eggs
200g plain flour
175g malted milk drink powder (we used Horlicks)
½ tsp baking powder
100g bar dark chocolate , chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking sheets with baking parchment. Beat the butter and sugars in a bowl until light and fluffy, then beat in the eggs one at a time.
  • Add the flour, malted milk drink powder, baking powder and a good pinch of salt, then stir with a wooden spoon until the mixture forms a dough. Tip out onto the work surface and gently knead in the chocolate. Divide the mixture into 20 pieces, roughly the size of a whole walnut. Roll each piece into a ball and place on the baking trays, leaving plenty of room for the cookies to spread. Flatten each ball slightly with your hand.
  • Bake for 10-12 mins until starting to turn golden brown on the edges. Remove from the oven, leave on the baking tray for 5 mins to cool slightly then transfer to a wire rack to cool completely. Will keep in a cake tin or cookie jar for up to 5 days.

1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup unrefined sugar

1/4 cup canola oil
1/3 cup non-dairy chocolate chips

Steps:

  • Preheat oven to 350°F (176°C).
  • In a bowl, sift in the flour, baking powder, and baking soda.
  • Add the sugar and salt, and stir until well combined.
  • In a separate bowl, combine the maple syrup with the molasses and vanilla, then stir in the oil until well combined.
  • Add the wet mixture to the dry, along with the chocolate chips, and stir through until just well combined (do not over-mix).
  • Place large spoonfuls of the batter on a baking sheet lined with parchment paper and flatten a little.
  • Bake for 11 minutes, until just golden (if you bake for much longer, they will dry out).

  • Note: If, as you are mixing together your batter it appears quite floury and thick, simply mix together a couple of teaspoons more canola and maple syrup and incorporate it into the batter. Sometimes humidity, type of flour used, and other factors can affect the density of the batter and so a touch more liquid may be needed.

Steps:

  • Preheat oven to 350°F.
  • Mix all the dry ingredients together.
  • Mix all the wet ingredients together.
  • Mix everything together.
  • Shape into 8-12 balls, put on cooked sheet lined with parchement. Flatten slightly. Leave room between them because the will spread out.
  • Bake for 10-12 minutes at 350°F.
