- Place carrots in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam until tender, 5-8 minutes. Transfer carrots to a large bowl. Add the brown sugar, butter, vinegar and salt; toss until butter is melted and carrots are coated. Sprinkle with chives.

- Cut up carrot and boil in water until it's almost soft.
- Discard most of the water (like, leaving only a table spoonful or two) and add a little sugar and butter. Continue boiling until the carrot is soft.
- They are just regular carrots, and you don't have to use a lot of sugar. Carrots are naturally sweet when boiled; a little butter makes the sweetness more noticeable.Serve hot with rice.

HIBACHI SWEET CARROTS
Super easy sweet carrots that go perfectly as a side dish to your favorite homemade hibachi dinner!

Steps:
- Place the carrots in a small pot with 1 cup of water (approximately), enough water to cover the carrots by about half. Add the sugar and salt to the water.
- Bring the carrots to a boil and let boil uncovered for 5-7 minutes, testing after 5 minutes, until tender.
- Drain any remaining water and return the carrots to the hot pot. Add the butter and swirl to coat and melt.
- Serve as a small side dish to your favorite dinner. enjoy!
CARROT & BACON MASHED POTATOES
One of my German husband's childhood favorites. He likes to turn it into a more savory dish by crumbling some fried bacon over it. Nice with fried meat like pork chops or sausages and green beans or broccoli.

Steps:
- Heat oil in a medium-sized pot with a tight fitting lid over medium high heat. Add onions and carrots and fry until onion is transparent, about 2 minutes.
- Add water, cover and bring to a boil. Reduce heat to low and simmer for about 5 minutes.
- In the meantime peel potatoes and cut into 1 inch dice. Add to carrots,cover, bring to a boil again and cook over low heat for 30 minutes until vegetables are completely soft and almost all liquid has evaporated.
- If there is some water, cook it off uncovered over high heat, shaking pot to avoid sticking.
- Mash vegetables with a masher.
- Add milk gradually, beating with a whisker until desired consistency. Depending on the starch in potatoes this might require about 1-1 1/4 cups milk.
- Add butter, salt, cayenne and nutmeg to taste.
- If using fried bacon bits, mix one half into vegetables and sprinkle other half on top.

MAKOTO-STYLE JAPANESE SALAD DRESSING
This recipe is kind of a copy cat of a dressing from a local restaurant that, in the last few years has been available by the bottle in local supermarkets. I have been to MANY a Japanese restaurant and I have had yet to find a dressing I enjoy as much as this one....most are too sweet and cloying for my taste. I think this recipe is pretty close to the original (which if you haven't tasted it, it is hard to appreciate how close it really is). I hope you enjoy it!
