A delicious, heart-warming winter stew that you can make ahead of time

4 TBSP. olive oil
2 red onions, chopped
5-6 medium carrots, sliced diagonally into 1" chunks
2 celery sticks, sliced into ½" chunks
4 medium cloves of garlic, minced
--- sea salt and freshly ground pepper
5 sprigs fresh thyme
3 TBSP. tomato paste
3 lbs. well-marbled chuck beef, cut in 1-1½" chunks
--- sea salt and freshly ground pepper
½ cup flour
2 cups dry red wine
2 cups beef stock
1 ½ small red potatoes, cut into small cubes
1 lb. Cremini mushrooms, sliced
2 TBSP. butter
--- sea salt and freshly ground pepper
4 TBSP. fresh parsley, chopped, for serving (optional)

Steps:

  • Heat the olive oil in a large Dutch oven or large pot then add the onions, carrots and celery, season with salt and pepper. Cook for a few minutes until the vegetables are fragrant and lightly browned. Toss in the garlic and cook for another minute or so. Stir in the thyme and the tomato paste, which will add a bit of sweetness and a lovely color to the stew. After everything is well incorporated, turn off the heat and transfer the contents of the pot to a bowl and set it aside.
  • Pat dry the beef cubes with paper towels and then season them generously with salt and pepper. Working in batches, dust the beef cubes with the flour and shake them to get rid of the excess flour. Sear the meat on all sides and in the same pot, without crowding them, for about 3-5 minutes. Remove the seared cubes to a bowl and continue with the next batches until all beef is nicely browned. Add some more oil, as needed, before searing additional batches. Remove to a bowl and set aside.
  • Add the wine and scrape the bottom of the pot to deglaze it. Return the seared meat to the pot along with its juices. Add the bay leaves and the beef stock, so the meat is almost covered.
  • On your stovetop, bring the pot to a boil, reduce to a simmer, add the vegetables, cover and simmer for about 1½ hours or until the meat and vegetables are tender when pierced with a fork.
  • Cut the potatoes into small cubes and add them to the pot as well. Continue cooking for 10 minutes.
  • Meanwhile, dry-roast the sliced mushrooms in a hot skillet for a few minutes, then add 2 or 3 tablespoons of butter to the skillet. Season the mushrooms with salt and pepper and cook over medium heat for about 8 minutes, stirring frequently. When they are soft and caramelized, add them to the pot as well. Check the stew to make sure there is enough liquid (if needed add some hot water). Simmer for another 15-20 minutes or so, uncovered, until the potatoes are tender and the liquid has thickened. Taste and adjust the seasoning if needed. Turn off the heat, remove the bay leaves, and let the stew sit uncovered on the stove for 10 minutes. A stew appreciates a little time to rest before serving.
  • Serve with some crusty bread, or let it cool, refrigerate and serve later. The stew will taste even better the next day!

I like to make fresh stew, but double the ingredients and freeze the second portion for a quick dose of comfort food mid-week.

⅓ cup all-purpose flour
1 teaspoon Spanish smoked paprika
½ teaspoon seasoned salt
½ teaspoon ground black pepper
2 pounds beef chuck, cut into 1-inch cubes
1 tablespoon olive oil

1 (8 ounce) package mushrooms, chopped
3 potatoes, diced
5 carrots, sliced

¼ cup Marsala wine
1 tablespoon Worcestershire sauce
3 (10.5 ounce) cans organic beef broth
1 (14.5 ounce) can crushed tomatoes
1 (1 ounce) package dry onion soup mix
1 teaspoon Spanish smoked paprika, or to taste
salt and ground black pepper to taste
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Combine the flour, 1 teaspoon smoked paprika, seasoned salt, and 1/2 teaspoon black pepper in a large, resealable plastic bag. Add the beef, and seal the bag. Shake the bag thoroughly to coat the beef with seasoned flour.
  • Heat the olive oil in a large skillet over medium-high heat. Shake the excess seasoning off the beef, then stir the beef into the hot skillet with the onion and mushrooms. Cook and stir until the beef is evenly browned and no longer pink. Drain and discard any excess grease.
  • Place the beef mixture into a slow cooker. Place the potatoes, carrots, celery, garlic, Marsala wine, and Worcestershire sauce into the cooker with the beef mixture. Pour the beef broth and tomatoes into the cooker, and stir in the onion soup mix and 1 more teaspoon of smoked paprika. Cook on High for 4 to 6 hours, or on Low for 10 to 12 hours. Season to taste with salt and black pepper.
  • For a thicker stew, combine cornstarch and water in a small bowl. Gradually stir the mixture into the stew until thickened.

This hearty stew is cooked in the Instant Pot®. It relies on potatoes and aromatics breaking down during the cook to form a rich gravy for tender meat and delightful mushrooms. If you want to add a thickener, use the optional directions for cornstarch. We liked it over wide egg noodles, but it would also work on top of rice or mashed potatoes. My guys liked it, so I guess it is a man-pleaser!

2 pounds chuck roast
salt and ground black pepper to taste
1 tablespoon avocado oil, or more as needed
2 medium onions, chopped
½ cup minced celery
4 cloves garlic, minced
1 teaspoon herbes de Provence
2 large bay leaves
½ cup red wine
1 ½ cups beef stock
3 tablespoons tomato paste
1 tablespoon soy sauce
1 tablespoon fish sauce
2 cups diced russet potatoes
3 (8 ounce) packages mushrooms, quartered
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Cut roast into pieces that will fit the inner pot and pat dry with paper towels. Season one side with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add enough oil to cover the entire bottom surface of the pot and wait until indicator reads "Hot". Carefully add a piece of beef to the pot, seasoned side down, and saute until nicely browned, about 6 minutes. Season the other side with salt and pepper and turn, using tongs. Brown for an additional 6 minutes and remove to a plate to keep warm. Repeat with remaining beef.
  • Add onions and saute in the drippings until softened, about 3 minutes. Add celery, garlic, herbes de Provence, and bay leaves, and saute until garlic is fragrant, about 1 minute. Pour in red wine and use a wooden spoon to stir all the browned bits off of the bottom of the pot, and cook for about 2 minutes. Turn off Saute function.
  • Cut browned beef into cubes about 1 1/2 inches thick, removing fat and any gristle. Return to the pot.
  • Stir beef stock, tomato paste, soy sauce, and fish sauce together in a small bowl. Add to the pot and stir in potatoes. Gently push meat pieces until they are at or below the liquid level.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 22 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully, about 5 minutes. Unlock and remove the lid.
  • Stir in mushrooms. Make sure most of the mushrooms are partially submerged in the liquid. Adjust seasonings, if desired. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully, about 5 minutes. Unlock and remove the lid.
  • Stir stew well. Mix corn starch with water in a small bowl. Stir until there are no lumps, then stir into the pot. Select Saute function and cook until gravy is bubbly, stirring frequently, to assure that there is no sticking, 3 to 5 minutes. Remove bay leaves and serve.

3 pounds beef chuck, cut into 1-inch pieces
Kosher salt and freshly ground pepper
4 carrots (1 roughly chopped, 3 cut into 1/2-inch rounds)
4 stalks celery (1 roughly chopped, 3 cut into 1/2-inch pieces)
1 onion, roughly chopped
1 tablespoon tomato paste
1 cup hearty red wine, such as shiraz
2 quarts beef stock or reduced-sodium beef broth
2 sprigs thyme
1 1/4 pounds russet potatoes, peeled and cut into 1-inch chunks
1 pound mixed mushrooms (such as cremini, chanterelle, oyster and/or stemmed shiitake), sliced or quartered if large
4 tablespoons unsalted butter
1/2 cup all-purpose flour
Chopped fresh parsley, for topping

Steps:

  • Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Season the beef with 2 teaspoons salt and 1 teaspoon pepper. Add to the pot in batches and cook, turning and adding more oil as needed, until browned all over, about 5 minutes. Transfer to a bowl with a slotted spoon.
  • Add 2 more tablespoons oil to the pot and reduce the heat to medium. Add the roughly chopped carrot, celery and onion and cook, occasionally stirring with a wooden spoon and scraping up the browned bits on the bottom of the pot, until the vegetables soften, about 5 minutes. Move the vegetables to one side and add the tomato paste to the empty side. Cook until it darkens around the edge, about 2 minutes; stir into the vegetables. Add the wine and bring to a boil.
  • Return the beef and any juices to the pot; add the stock. Bring to a boil, skimming any foam off the top. Add the thyme. Reduce the heat to low, cover and simmer until the beef is tender, about 2 hours.
  • Strain the beef and vegetables in a colander set over a large bowl, reserving the cooking liquid. Tent the beef mixture with foil. Let the cooking liquid stand for 5 minutes and then skim off the fat on the surface. Return the liquid to the pot. Add the remaining carrots and celery and the potatoes and bring to a simmer over high heat. Reduce the heat to medium and simmer until the vegetables are just tender, about 20 minutes.
  • Meanwhile, heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add the mushrooms; cook, stirring occasionally, until they release their juices and brown, 10 minutes. (Pour off any extra liquid, if necessary.) Season with salt and pepper. Remove from the heat and set aside.
  • Melt the butter in a saucepan over medium-low heat. Whisk in the flour to make a roux, then let it bubble (do not brown), 2 minutes. Whisk in 2 cups of the reserved cooking liquid. Stir this sauce into the pot with the vegetables; bring to a simmer. Reduce the heat to medium low and simmer, stirring often, until thickened, 5 minutes.
  • Return the beef to the pot, discarding the roughly chopped carrot, celery, onion and thyme. Add the mushrooms and simmer until heated through, 5 minutes. Season with salt and pepper; sprinkle with parsley.

  • Drop shallots into pot of boiling water; cook 1 minute. Drain and peel shallots. Add to stew and simmer, uncovered, until beef and vegetables are tender and sauce thickens, about 30 minutes.
