Whoopie Pies are one of those comfort foods that make you want more than one. They just don't get any better. Though Whoopie Pies can be delicious any old way...the preferred way to have them is about 5-10 minutes out of the freezer. Tall glass of milk and one of these Whoopies...you will not have a care in the world! The frosting is phenomenal, but make sure you remember that when making it, it will look like a real mess until you've beaten it on high for at least five minutes. Sometime after that it will become like nothing you've seen or eaten. This makes a big batch and is easily halved.

½ cup vegetable shortening
2 cups milk
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
½ cup unsweetened cocoa powder (such as Hershey's®)
2 tablespoons unsweetened cocoa powder (such as Hershey's®)
1 tablespoon baking soda
1 ½ teaspoons salt
1 cup milk
1 cup butter at room temperature
1 cup vegetable shortening
2 cups white sugar
2 tablespoons all-purpose flour
2 teaspoons vanilla extract
2 (7 ounce) jars marshmallow creme

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Cut and set aside 25 pieces of plastic wrap about 5 inches square.
  • For cookies, beat 1/2 cup of vegetable shortening, 2 cups of milk, 2 cups of sugar, the eggs, and 2 teaspoons of vanilla extract together in a large mixing bowl until smooth and creamy. In a separate bowl, whisk the 4 cups of flour with both amounts of unsweetened cocoa, baking soda, and salt until thoroughly combined. Beat the flour mixture into the wet ingredients just until smooth.
  • Scoop up the batter by teaspoons, and drop onto ungreased baking sheets in small round dollops about 2 inches apart. Recipe should make about 50 cookies. The cookies will rise and expand a lot.
  • Bake in the preheated oven until the cookies are set in the middle, 8 to 10 minutes. Allow to cool on baking sheets for several minutes before removing to finish cooling on racks.
  • To make the filling, place 1 cup milk in a microwave-safe measuring cup, and cook in microwave until hot but not simmering, 1 to 2 minutes. Pour the heated milk into a large mixing bowl. Add the cup of room temperature butter, 1 cup of vegetable shortening, 2 cups of sugar, 2 tablespoons of flour, 2 teaspoons of vanilla extract, and the marshmallow creme. Beat the mixture on high speed until the frosting is fluffy, 5 to 10 minutes. At first the frosting will appear lumpy, but keep beating.
  • To fill the cookies, choose 2 cookies that are about the same size, and spread about 1 1/2 tablespoon of the frosting onto the flat bottom of a cookie. Top with the other cookie, flat side down, and wrap the filled cookie in a sheet of plastic wrap. Place the filled cookie into the freezer. Repeat with remaining cookies and frosting, wrapping each whoopie pie in plastic wrap and freezing.
  • To serve, remove whoopie pies from the freezer and allow to thaw until very cold but not frozen, 10 to 15 minutes.

1 cup granulated sugar
1 stick plus 6 tablespoons unsalted butter
2 1/2 cups flour
2 1/2 teaspoons baking powder
2 1/2 teaspoons baking soda
1 1/4 teaspoons salt
1 teaspoon ground nutmeg
1 teaspoon ground mace
2 teaspoons ground ginger
1 cup milk
1/4 cup heavy cream
1 cup raisins
Butter for greasing pan
2 1/2 cups light brown sugar
1 tablespoon molasses
1/2 cup fresh lemon juice
1/3 cup dark rum
1 pint heavy cream
1 tablespoon confectioner's sugar
2 tablespoons dark rum

Steps:

  • Preheat oven to 375 degrees.
  • Cream the sugar with 1 stick butter. Combine flour, baking powder, baking soda, salt, nutmeg, mace and ginger. Combine milk and cream; add, one-third at a time, to creamed butter-sugar alternately with the dry ingredients, mixing well after each addition.
  • Add raisins and mix well. Grease a large rectangular pan (10 by 14 inches) and pour the batter into the pan, tilting to distribute it evenly.
  • Bring 8 cups water to a boil. Mix boiling water with brown sugar, molasses, 6 tablespoons butter, lemon juice and rum. Pour liquid ingredients over batter, place in oven and bake one hour.
  • When ready to serve, combine garnish ingredients and beat to lighten. Serve the warm pudding with the cream on top.

Indian Pudding is an old Maine and probably New England dessert. It is corn meal cooked very slowly with milk, molasses, and cinnamon. It should be soft and should separate or whey somewhat. It is important to use as good a molasses as you can for the finest flavor, although any will do. Let a true Indian Pudding stand for about one-half hour after baking so that it will be slightly firmer. I got this recipe from an old cookbook years ago. My husband loves Indian Pudding.

1/4 cup yellow cornmeal
1/4 cup cold milk
1/2 cup dark molasses (not blackstrap)
1 teaspoon salt
1/4 cup sugar
1 teaspoon cinnamon
4 tablespoons butter
1 3/4 cups cold milk

Steps:

  • Scald 2 cups milk in a double boiler.
  • Mix until smooth the corn meal and the 1/2 cup cold milk.
  • Then stir into the hot milk and cook over the hot water for 20 minutes, stirring frequently.
  • Add the dark molasses, salt, sugar, cinnamon, and butter; mix well.
  • Pour into a buttered pudding dish.
  • Pour the last 1 3/4 cups of cold milk over the top of the pudding.
  • Bake at 250 degrees for 3 hours (yes, 3 hours is correct).
  • Let sit for about 1/2 hour after it comes out of the oven.
  • Serve with heavy cream or vanilla ice cream.

1 c flour
1/2 tsp salt
2 tsp baking powder
3/4 c granulated white sugar
1 tsp vanilla
4 Tbsp vegetable oil
1/2 c milk
1/2 c granulated white sugar 2nd layer
1//2 c packed brown sugar
6 Tbsp unsweetened cocoa powder
1 c water or cooled coffee
1 tsp vanilla
nonstick cooking spray

Steps:

  • 1. Spray a 9" cake pan or 1 quart ovenproof casserole with nonstick cooking spray. Layer1 In the baking dish, lightly and thoroughly mix the dry ingredients.
  • 2. Combine the milk, vanilla extract, and oil.
  • 3. Mix wet and dry ingredients thoroughly, and spread out in dish.
  • 4. Layer 2 Over layer 1, sprinkle white & brown sugars, and cocoa powder.
  • 5. Mix water/coffee with vanilla extract and pour slowly over the sugars/cocoa layer. DO NOT MIX.
