ROAST PORK WITH CABBAGE AND POTATOES



Roast Pork with Cabbage and Potatoes image

Pork loin is roasted in the oven with cabbage, potatoes and carrots for an easy and delicious family dinner.

4 teaspoons caraway seeds, divided
3 tablespoons olive oil, divided
1 onion, sliced
2 carrots
1 small cabbage, chopped
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon ground black pepper
3 pounds boneless pork loin roast
2 cups chicken broth
2 tablespoons molasses
15 small red potatoes, halved
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • Crush the caraway seeds in a blender or coffee grinder.
  • Heat 1 tablespoon of the oil in a skillet on medium. Saute the onion, carrots, bay leaves, 1 teaspoon of the crushed caraway seeds for 5 minutes. Put the vegetables in the bottom of a roasting pan.
  • Add 1 T oil, the cabbage and another 1 t. caraway seeds to the skillet. Saute for 5 minutes and add to the roasting pan.
  • Combine remaining caraway seeds, garlic, salt and pepper. Rub the pork roast with the mix. Then heat the rest of the olive oil and brown the pork roast on all sides. Put it on top of the vegetables in the roasting pan.
  • Add the broth and molasses to the skillet. Scrape the bottom of the skillet to deglaze it. Pour the liquid over the pork roast and vegetables. Season with salt and pepper to taste.
  • Roast uncovered in the oven for 45 minutes. Then stick the potatoes in around the roast and cook for another 45 minutes, uncovered.
  • Check the temperature with a meat thermometer and make sure the roast has reached at least 145 F. If not put it back in the oven a little longer.
  • Let rest for 10 minutes before slicing.

Ultimate Braised Tofu image

Braised Tofu is an authentic Chinese restaurant dish that you can easily make at home. Using silken tofu, all it takes is a quick fry and then a transfer into a hot wok. That's the key to replicating that restaurant flavor at home.

1 pound silken tofu ((450g, organic preferred!))
2 cups oil ((for frying))
1 cup chicken stock ((can also use vegetable stock or soaking liquid from dried shiitake mushrooms))
1 tablespoon oyster sauce ((or vegetarian oyster sauce))
1 1/2 tablespoons soy sauce
1 teaspoon dark soy sauce
½ teaspoon sesame oil
¼ teaspoon sugar
¼ teaspoon salt ((or to taste))
3 small slices ginger ((1/8 inch thick, smashed with the broad side of a knife))
3 cloves garlic ((finely minced))
2 scallions ((cut at an angle into 2 inch long pieces, white and green portions separated))
4 fresh shiitake mushrooms ((or 4 dried shiitake mushrooms soaked in warm water for 30 mins))
1 medium carrot ((thinly sliced at an angle))
2/3 cup fresh winter bamboo shoots ((or canned if fresh shoots are not available))
1 tablespoon Shaoxing wine
1/2 cup snap peas
1 1/2 tablespoons cornstarch ((mixed with 2 tablespoons water))

Steps:

  • Cut the tofu into 10 pieces, transfer to a plate, and let it sit at room temperature for 30 minutes. Carefully tilt the plate and pour off the liquid. This step allows you to remove some of the water content from the very wet silken tofu.
  • In a tall pot, heat oil to 375 to 400 degrees F. Make sure that the oil is well below the rim of the pot, so the oil does not overflow. It also minimizes splattering. You can use a candy or oil thermometer to check the temperature.
  • Use a metal spatula or slotted spoon to carefully scoop up one piece at a time and lower it quickly into the hot oil. I suggest frying 3 to 4 pieces at a time, keeping the heat at medium high, because the tofu will cool the oil quickly. You need to maintain that high oil temperature to quickly brown the outside and form a light crust.
  • Deep fry your silken tofu until light golden brown (about 2 to 3 minutes per batch) and set aside on a dry plate. Oil temperature control is key, as you want to maintain the temperature between 375 and 400 degrees F.
  • In a bowl, combine the stock, oyster sauce, soy sauces, sesame oil, sugar, and salt together in a bowl and set aside.
  • Heat your wok over medium heat and add 2 tablespoons of the frying oil around the perimeter of the wok so it is lightly coated. Add the smashed ginger to the wok and stir it in the oil for about 15 seconds. Stir in the minced garlic, the white portion of the scallions, the mushrooms, carrots, and bamboo shoots, and turn the heat up to high. Stir-fry for 30 seconds and add the Shaoxing wine and the snap peas.
  • Continue to stir-fry for another 30 seconds, and add the sauce mixture. Bring the mixture up to a boil. Once boiling, add the cornstarch and water mixture and stir for 15 seconds until the sauce starts to thicken. Add the fried silken tofu and the rest of the scallions.
  • Carefully fold the mixture together until the tofu is well-coated. Use extra care, because the fried silken tofu is still very delicate! Let your braised tofu cook for another 15 to 20 seconds and add a little more cornstarch and water if you want a thicker sauce.

1 large onion
50g pork dripping or lard
750g white cabbage
1 medium cooking apple (about 200g)
1 tsp juniper berries
1 tsp caraway seeds
500ml dry cider
4 pork chops (each weighing about 200g)
1 tbsp oil
1 chicken stock cube
mashed potatoes , to serve

Steps:

  • Finely slice the onion and put it and the dripping in a heavy-based, flameproof casserole dish. Fry the onion over a medium heat, stirring frequently, for about 5 mins.
  • Cut the core from the cabbage and finely slice the leaves. Add this to the dish and toss everything together, cooking over a low heat while you peel and slice the apple.
  • Crush the juniper and caraway seeds together and add these and the apple slices to the pan. Season and pour in the cider. Stir well and bring to a simmer, cover the dish and cook for 20 mins.
  • Heat oven to 160C/140C fan/gas 4. Season the chops on both sides. Heat a heavy-based frying pan on a medium-high heat with the oil and brown the chops on both sides. Remove from the pan and place in the casserole dish on top of the cabbage, adding the stock cube, crumbling it over. Put the lid back on and cook in the oven for a further 30 mins. If there is a lot of liquid in the dish, place on the hob and simmer until it evaporates a little. Check the seasoning and serve with mashed potato.

4 well-trimmed bone-in rib pork chops, 8 ounces each

1 large onion, finely chopped

3/4 pound small red potatoes, sliced 1/4 inch thick

Steps:

  • In a Dutch oven (5-quart pot with a tight-fitting lid), heat 1 tablespoon oil over medium-high. Generously sprinkle pork with salt and pepper. Cook until golden brown, about 3 minutes per side. Remove pork.
  • Reduce heat to medium-low. Add remaining tablespoon oil, onion, coleslaw mix, and garlic; season with salt and pepper. Cook, stirring frequently, until cabbage has wilted, about 10 minutes.
  • Raise heat to high. Add vinegar, caraway seeds, and 1 1/4 cups water; bring to a boil. Add potatoes, and reduce heat to a simmer. Cover, and cook until cabbage and potatoes are almost tender, about 20 minutes.
  • Return pork to pot; cover, and continue cooking until pork is just cooked through and potatoes are tender, 10 to 15 minutes more.

12 g garlic
100 g spring onions
300 g Chinese cabbage
40 g dried shiitake mushrooms
400 g pork loin roast
500 g tofu
1 tablespoon caster sugar
1 tablespoon lime juice
1 tablespoon fish sauce
2 tablespoons light soy sauce
1 tablespoon hoisin sauce
1/2 teaspoon white pepper
250 ml water
2 teaspoons cornflour

Steps:

  • Combine the stir-fry sauce ingredients in a bowl and set aside.
  • Reconstitute the dried shitake mushrooms in 2 cups of boiling water.
  • Heat the oil in a wok and sauté garlic and green onions.
  • Add Chinese cabbage and cook for 3-5 minutes.
  • Meanwhile, steam the roast pork in a separate saucepan until heated through.
  • Set the cabbage and green onions aside on a plate.
  • Add the stir-fry sauce to the wok and simmer until thickened.
  • Drain the shitake mushrooms and add to the sauce and cook for 2 minutes.
  • Add the cabbage and pork to the wok and stir through the sauce.
  • Add the tofu to wok and gently stir through, cook for 2-3 minutes.

1 small head green cabbage, cut into 8 wedges
4 tablespoons unsalted butter (2 tablespoons melted)
Kosher salt and freshly ground pepper
2 small pork tenderloins (about 1 3/4 pounds total), trimmed
2 teaspoons ground coriander
1 red bell pepper, finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon paprika
2 tablespoons white wine vinegar
1 teaspoon sugar
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 500˚. Place the cabbage on a baking sheet, leaving room for the pork. Brush the cabbage all over with the melted butter; season with salt and pepper. Roast 15 minutes.
  • Meanwhile, rub the pork with salt, pepper and the coriander. Melt 1 tablespoon butter in a large skillet over medium-high heat. Add the pork and cook, turning, until browned all over, 8 minutes (reduce the heat if the pork is getting too dark). Transfer the pork to the baking sheet with the cabbage; reserve the skillet. Roast the pork and cabbage together until a thermometer inserted in the center of the pork registers 145˚, 13 to 15 minutes; transfer to a cutting board. Continue roasting the cabbage until browned, 5 to 10 more minutes.
  • Melt the remaining 1 tablespoon butter in the reserved skillet over medium-high heat. Add the bell pepper, onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is soft, about 5 minutes. Add the paprika and stir until toasted, 30 seconds. Stir in the vinegar and sugar, then pour in 1/3 cup water, scraping up the bottom of the skillet. Cook until a thin sauce forms, 1 to 2 minutes; season with salt and pepper.
  • Slice the pork and divide among plates along with the cabbage. Spoon the bell pepper mixture over the pork; top with the parsley.

2 ripe pears , peeled and cut into chunks
small piece fresh ginger , grated
250ml vegetable stock
2 tbsp balsamic vinegar
50g walnut , roughly chopped
450g pork fillet , trimmed of all visible fat
2 tsp olive oil
2 tsp wholegrain mustard

Steps:

  • Put the cabbage, pears, ginger, stock and vinegar into a pan. Bring to the boil, then reduce heat. Cover, then gently cook, stirring occasionally, for 40 mins. Stir in the walnuts.
  • Split the pork fillet almost in half down its length, then open out like a book. Rub on all sides with the oil and smear with mustard. Grill for 15 mins, turning once, until the pork is browned and just cooked. Cover with foil, rest for 2 mins, then slice and serve with the cabbage.

2 tbsp vegetable oil
1.5-2kg boneless pork belly , cut into 8 pieces, skin left on
2 onions , sliced
8 spring onions , sliced
4 tsp caster sugar
3 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp rice wine vinegar
1 tsp chicken stock powder
900g firm tofu , cut into cubes
3 small packs Thai basil , leaves only
50g ginger , peeled and roughly chopped
6 garlic cloves , roughly chopped
10 fat green chillies , seeds left in, roughly chopped
2 tbsp vegetable oil

Steps:

  • Heat 1 tbsp of the oil in a heavy, wide flameproof casserole dish and brown the skin side of the pork pieces for about 5 mins. You'll need to do this in batches, setting the pork aside each time. Meanwhile, make the spice paste. Put the ginger, garlic, chillies and oil into a food processor and pulse until finely chopped.
  • Heat another 1 tbsp oil in the dish, add the onions and spring onions, and fry for 10 mins until soft. Turn the heat to low, add the spice paste and gently fry for 2-3 mins until fragrant.
  • Nestle the pork pieces in the onions and pour in enough cold water to just cover. Stir in the sugar, soy sauces, vinegar, stock and 1 tsp salt, and bring to the boil. Cover with a lid and simmer on a low heat for 1 hr 30 mins. Add the tofu and Thai basil, and continue to cook for another 30 mins, by which time the pork will be very tender. Season to taste, then serve.

The flavor of the stir-fry is propelled by using the coriander plant multiple ways: Combining coriander seeds with fresh stems and leaves - also known as cilantro - creates a range of complex but related flavors. Then there's what might be the quickest - and your new favorite - way to cook cabbage: When large pieces of cabbage are cooked undisturbed in a hot pan, they don't have a chance to turn to mush. 1 small red onion, thinly sliced
Kosher salt
1/4 cup cornstarch
1 (14-ounce) package extra-firm tofu, patted dry and torn into 1-inch pieces (see Tip)
1/4 cup neutral oil (such as canola or grapeseed), plus more as needed
About 1 1/2 pounds green or red cabbage, cored and cut into 1-inch pieces, leaves separated
1 tablespoon low-sodium soy sauce or liquid aminos, plus more to taste
1 tablespoon coriander seeds, crushed
1/2 cup coarsely chopped cilantro leaves and stems
2 tablespoons lime juice (from 1 large lime)

Steps:

  • In a large bowl, sprinkle the red onion with salt and stir to combine. In a medium bowl, stir together the cornstarch and 1 teaspoon salt. Add the tofu and toss to coat.
  • Heat 2 tablespoons of oil in a large (12-inch) cast-iron skillet over medium-high. Add the cabbage and cook, undisturbed, until charred underneath, 3 to 4 minutes. Stir, spread into an even layer, and cook, undisturbed, until charred in spots and crisp-tender, another 3 to 4 minutes. Stir in the soy sauce, and season with salt. Transfer to the bowl of red onions.
  • In the same skillet, heat the remaining 2 tablespoons of oil over medium-high. Add the tofu and cook until golden on all sides, 2 to 3 minutes per side, adding more oil and scraping the bottom of the pan as necessary. Remove from heat, add the coriander seeds and stir gently until fragrant and toasted, 1 to 2 minutes. Add the cabbage-onion mixture and stir to combine, then stir in the cilantro and lime juice. Season to taste with soy sauce.

STIR-FRIED CABBAGE, TOFU AND RED PEPPER

Start cooking the rice or quinoa that you will serve this with, prep your vegetables and make the stir-fry. The prep is the most time-consuming but there aren't too many ingredients. You can be sitting down about 35 minutes after you begin.

12 ounces firm tofu
1/2 cup chicken stock or vegetable stock
2 tablespoons soy sauce
1/2 teaspoon sugar
1 tablespoon rice wine vinegar or dry sherry
2 teaspoons sesame oil
1 teaspoon cornstarch
2 tablespoons peanut oil, rice bran oil or grape seed oil
1 tablespoon minced ginger
2 large garlic cloves, minced
1/2 medium cabbage, chopped (about 1/2 pound, 5 cups chopped)
1 red pepper, cut in 2-inch long julienne
Salt and freshly ground pepper to taste
1/4 cup broken walnuts
Cooked rice or quinoa for serving

Steps:

  • Cut the tofu into dominoes and drain between paper towels. In a small bowl or measuring cup combine the stock, 1 tablespoon of the soy sauce, the sugar, rice wine or sherry, and the sesame oil. Remove 1 tablespoon to a small bowl and stir in the cornstarch. Stir until it has dissolved. Have all the ingredients within arm's length of your pan.
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil by adding it to the sides of the pan and swirling the pan, then add the tofu and stir-fry until golden, about 3 minutes. Add 1 tablespoon soy sauce (or to taste), toss together for a few seconds, and transfer to a plate.
  • Swirl in the remaining oil, add the garlic and ginger to the wok and stir-fry for no more than 10 seconds. Add the red pepper and stir-fry for 1 minute, or until it begins to soften, and add the cabbage and walnuts. Stir-fry for 1 minute, add salt and pepper to taste, and stir-fry for another 1 to 2 minutes, until crisp-tender. Return the tofu to the wok, stir in the walnuts and the stock/soy sauce mixture and stir-fry for another minute, until it has just about evaporated. Stir in the cornstarch mixture and stir-fry until the ingredients are lightly glazed. Remove from the heat and serve with quinoa or rice.
