This is a family favorite but the magic comes in where there is no greasy flavor. I was turned off by meatloaf for so many years because I grew tired of removing the pan and draining the grease. 1 lb ground beef
1 tsp mixture of garlic powder, black pepper & salt
1 medium onion, chopped (optional)
1 medium bell pepper, chopped
1 c grated cheedar
2 Tbsp worcestershire sauce
1/2 c sour cream
1 c crushed ritz crackers
1 tsp seasoned salt (lawry's)
2 slice white or any other bread
SAUCE:
1 can(s) 10 3/4 oz. of cream of mushroom soup
1 c milk
1 1/2 c grated cheddar

Steps:

  • 1. Preheat oven to 350 degrees. Mix all ingredients together except bread slices and sauce. Shape into a loaf. Line a 1 1/2 qt. loaf pan bottom with bread slices. Place the meatloaf on top.
  • 2. Bake for 45 mins. The bread absorbs the grease and should be discarded immediately after removing from oven.
  • 3. Sauce: 1 Can of condensed Cream of Mushroom soup 1 c. Milk 1 1/2 c. Grated Cheddar Heat the soup and milk over medium heat, add the cheese. Pour gravy into gravy boat. Serve over the sliced meatloaf.

This recipe came with my Rival crock pot. The meat loaf is very moist and tender on the inside and a little bit crunchy around the outer edges. I cook mine on low for 9 hours.

2 lbs lean ground beef
2 eggs
2/3 cup quick-cooking oats
1 (1 ounce) package dry onion soup mix
1/2 cup ketchup

Steps:

  • Reserve 2 T. ketchup.
  • Combine ground beef, eggs, oats, soup mix and remaining ketchup.
  • Shape into loaf and put into crock pot.
  • Top with remaining ketchup.
  • Cover, cook on low 8 - 10 hours.

2 1/2 pound(s) ground beef 85% lean
2 stalk(s) celery,minced
1/2 - onions, vidalia, peeled,minced
1 package(s) goya sazon seasoning,can be found in the mexican aisle of your supermarket.
1 teaspoon(s) salt
1 teaspoon(s) black pepper
2 large eggs
1/2 cup(s) romano cheese, grated
1/4 cup(s) parsley, italian,chopped
1 cup(s) water, cold
2 cup(s) bread crumbs, fresh
2 cup(s) mozzarella cheese,shredded,whole milk only,not skim

Steps:

  • Combine everything together and form half of the mixture into a meatloaf pan or on a lipped baking sheet,then add the mozzarella to the center and add the other half on top smoothing the surface over with moistened hands to prevent cracking when baking.
  • Bake in a 350 pre-heated oven for 45 to 50 minutes,let it rest for five minutes before slicing. Serve with your favorite brown or red gravy and a generous helping of mashed Yukon gold potatoes and a side of fresh vegetables! Enjoy!! :)

1 1/2 lbs hamburger
1 egg, beaten
1/4 cup milk
1 1/2 teaspoons salt
2 slices bread, crumbed
1/2 of a small onion (chopped)
1/4 cup ketchup

Steps:

  • Mix egg, milk, salt and bread crumbs. Allow for mixture to soften. Thoroughly combine with hamburger. Shape into a loaf and place in Crock Pot. Top with ketchup. Cover and set to High for 1 hour then turn to low for 6-7 hours.

  • In a small bowl whisk together ketchup, vinegar and brown sugar. Brush half of the mixture on the top of the meatloaf.
  • Bake in preheated oven for 50 minutes. Brush the remaining glaze on top the last 10 minutes. Bake until the beef is cooked throughout and 160 degrees.
