This recipe is from the Magic Bullet website. Time and quantity was not given...so I may be way off. This calls for a large hothouse cucumber (the one you find in plastic wrap)

1/2 cup mayonnaise
2 -3 teaspoons horseradish
1 teaspoon Dijon mustard (deli)
1 teaspoon Worcestershire sauce
4 1/4 ounces crabmeat
1 cucumber, cut into 1/2 inch rounds
pimento stuffed olive, sliced

Steps:

  • Add the mayo, horseradish, mustard, Worcestershire and crab to the tall-cup.
  • Pulse a few times until the ingredients are blended together but still slightly chunky.
  • Spoon the crab mixture onto the cucumber rounds.
  • Top each with an olive piece.

This recipe was posted for a Magic Bullet photo demo posted here in the Kitchen Gadgets forum. It really is a super easy recipe that my 5 year old actually made herself. I did the baking though, of course. ;) The cherry topping is also from the book, but I always add almond extract any time I use cherry pie filling, so I put that in the recipe also. The Cook Time includes refrigeration/cooling time, for planning purposes. (Or, so you don't end up eating dessert at 10:30 at night, like we did! LOL)

8 ounces cream cheese
2 eggs
1/2 cup sugar
1 teaspoon vanilla
1 graham cracker crust
1 (15 ounce) can cherry pie filling
1/2 teaspoon almond extract

Steps:

  • Preheat the oven to 350°.
  • Add all ingredients (except crust) to the TALL CUP.
  • Twist on the CROSS BLADE, and place cup onto the power base.
  • Turn cup clockwise on the base to LOCK ON, and mix until smooth.
  • Pour the mixture into the graham cracker crust and bake for 20-25 minutes, or until set.
  • Cool on rack for 30 minutes and then cool one hour in the refrigerator.
  • Spread topping (if using) onto chilled cheesecake and enjoy!

1 1/2 cups cooked smoked ham
1/3 cup chicken broth
1 tablespoon deli Dijon mustard

Steps:

  • Add ingredients in the order they appear to the tall-cup and twist on the cross blade.
  • Give it 5-6 pulses. Then another pulse, let the ingredients settle, then repeat until you've reached a good consistency.
  • SUGGESTIONS:.
  • Serve sandwich-style on bread or pulse until smooth and serve it pate-style as a spread on crackers or slices of crusty Italian or French bread.
  • Pinwheel sandwiches. Spread the ham and some cream cheese evenly over lavash bread and roll up into a log. Slice into 1/2-3/4 inch rounds -- you may need toothpicks to fold the wheels together.

2 cucumbers
1/2 lime (for rubbing)
1 red pimiento chile (I use jalapeno red pepper)
3 ounces cream cheese
1 teaspoon cream
1 teaspoon basil
1 tablespoon green onion, chopped
1 garlic clove, chopped
salt and pepper (to taste, I add more salt)
1 pinch paprika

Steps:

  • Cut the cucumbers down the middle, lengthwise, peel and remove the seeds.
  • Rub the cucumbers with lime juice, and salt and pepper.
  • Cut the red pepper down the middle, remove the seeds, and dice into small pieces.
  • Combine the cream cheese and cream together with the remaining ingredients and mix well.
  • Fill the cucumbers with this lovely mixer and refrigerate for (at least!) 2 hours.

This is my version of the pickled vegetables they serve at Vietnamese restaurants. I have eliminated the sugar by using Splenda. This is a very refreshing and bright tasting side dish. It goes very well with rice based dishes or grilled meats. FYI - You can buy already prepared matchstick carrots in the grocery store.

1 English cucumber
1/2 medium sweet white onion
1/3 cup carrot (cut into matchsticks or sliced into 1/4" thick half-rounds)
1/3 cup rice vinegar
3 packets Splenda sugar substitute

Steps:

  • Peel the cucumber leaving small strips of green remaining.
  • Cut in half.
  • Slice halves into 1/2" thick slices.
  • Cut the onion into 1/4" thick rings.
  • Quarter the rings and separate the pieces.
  • Take the carrot matchsticks or half-rounds, onion, and cucumber and place them in a glass bowl.
  • In a small bowl, mix the rice vinegar and Splenda.
  • Pour over the vegetables, cover with plastic wrap, and refrigerate for 30 minutes.
  • The pickled vegetables need to be used within 24 hours.
