MAGGIE'S DECADENT BROWNIES
The ULTIMATE BROWNIE! This recipe is from Paula Deen's show. There's probably nothing more that needs saying here! I'll do it anyway, these are absolutely FABULOUS! After this experience, you will never want to fix brownies any other way!

Steps:
- Preheat oven to 350 degrees F.
- Grease a 13 by 9-inch baking pan.
- Melt the chocolate and butter in a 2-quart bowl in the microwave on high for 3 minutes, stirring every 20 to 30 seconds until the chocolate is completely melted.
- Add the eggs, sugar, and vanilla and mix well with a spatula. Add the flour and stir to combine.
- Spread the batter evenly in the prepared pan.
- Bake for 25 minutes.
- FROSTING: While the brownies are baking, make the frosting. Melt the chocolate and butter in a medium bowl in the microwave on high for 3 minutes stirring every 20 to 30 seconds until the chocolate is completely melted.
- Add the egg substitute, vanilla, and sugar and stir with a spoon until smooth.
- Working quickly, stir in the marshmallows. They will soften but you do not want them to melt completely.
- Spread the frosting over the warm brownies. The frosting will set up when the brownies are completely cooled. When cool, cut into 1 1/2-inch squares and store in the refrigerator in a plastic container with a snap-on lid.

MAGGIE'S HEAVENLY HASH
My Grandmother, Maggie, was a marvelous chef. Simple, but good, was her ideal dish. This is one of her signature recipes.

Steps:
- Mix Jello with 1 cup boiling water and 1/2 cup cold water.
- Let set until the consistency of egg whites.
- Beat the whipping cream until stiff.
- Fold the whipped cream into the Jello; also.
- Fold in the pineapple with juice, and pecans.
- Return to refrigerator to let set.
- Serve on angel food cake slices.
MIXED DORIA
This is a response to a request. It looks so yummy. Fried rice and seafood in a sort of bechamel sauce and covered in cheese then broiled. You can't go wrong with cheese and seafood...mmm..my faves. This recipe is from a good friend of mine. Cook time is an estimate.

Steps:
- Cut the mushrooms into thin slices and the bacon into very thin slices.
- Heat 30g butter and olive oil in a frying pan.
- Add the mushrooms and bacon and fry together.
- Add the cooked rice, making sure it does not stick, then flavor with salt and pepper.
- Add the minced parsley.
- In a separate frying pan, melt butter to taste.
- Fry the minced onions without burning them.
- Add heated white sauce and mix thoroughly.
- Fry the shrimp, whitefish and scallops separately, then cut into random sizes.
- Grease a gratin dish with 10g butter.
- Transfer the fried rice, mushrooms and bacon to a serving dish, placing the fried shrimp, whitefish and scallops, then half of the Gruyere cheese on top of it.
- Put the white sauce over the whole, and with the remaining Gruyere cheese, scatter it around. Bake in a 180C oven until it browns. When the doria has browned, transfer to a serving dish.

MAGGIE'S DORIA
Japanese-style creamy and delicious doria that I threw together one night. You can change up the ingredients as you like to make it meatless or even double the white sauce and omit the cream of mushroom soup (in which case, seafood works really well).

Steps:
- Saute chicken, mushrooms and onions in a large frying pan in butter on medium heat until cooked through and mushrooms have released their juice, adding a dash or two of salt and pepper to taste. Stir in cooked rice and mix well.
- White sauce (double this if not using canned soup): In a saucepan on low-med heat, melt butter and whisk in flour. Gradually add in milk and whisk until sauce thickens.
- Once the sauce thickens, you can either pour it and the canned soup (or double white sauce if not using the soup) on top of the rice mixture and mix well OR you can go to the next step and just add the white sauce/soup to the top without mixing, just before adding cheese.
- Grease an ovenproof dish (or 4 smaller gratin/doria/personal casserole dishes) with butter or cooking spray, add the rice mixture and top with cheese.
- Bake uncovered for about 20 minutes at 210°C or 410°F.
