An easy all around spice for a little "happy mouth" from rustic dishes. After many disasters that were way more spicy than my firiends could handle, I developed this recipe. Not spicy hot but enough for my friends to enjoy a little heat in their dishes. Add 3 tablespoons to average family quanity dish.

3 tablespoons ground cayenne pepper
2 tablespoons garlic salt
2 tablespoons celery salt
2 tablespoons basil
1 tablespoon paprika
1 tablespoon salt

Steps:

  • Mix all together thoroughly and keep in sealed glass jar in refrigerator.

2 tablespoons black pepper
2 tablespoons rosemary
2 tablespoons dried thyme
1 cup dried parsley
2 chicken legs
6 bratwursts
1 lb beef bone
2 cups chicken broth
2 teaspoons minced garlic
1 bay leaf
1 onion
1 stalk celery
2 large carrots
1 cup cabbage
30 ounces tomato sauce
1/2 lb red potatoes
1 cup peas
1 cup green beans
1 lemon

Steps:

  • Mix thoroughly by rotating all directions in a larger volume glass jar.
  • Store in air tight pint jar.
  • Use 1 1/2 tablespoons SEASONING for 1 gallon serving Booyah.

Black Magic seasoning is an essential part of Southern cuisine and my kitchen is never without it. This seasoning adds extra kick as 1 of the components of Marlowe's BBQ dry rub, but it is also fabulous by itself. Try spicing up your chicken or fish by adding a liberal amount of this seasoning before grilling or pan-frying.

Day in and day out seasoning by my Matthews Family as a kid. I think? Memory's tend to change things! Original first version was; 3T.black pepper, 3T.salt, 1T.garlic powder, 1T.cayenne powder. Dammit got older and no longer enjoy the "Cajun Heat".

1 cup water
1 egg
2 cups flour
1 tablespoon seasoning (Luv #520519)
1 (4 lb) whole chickens, cut into 8 pieces
1/2 quart oil, for frying, preferably lard

Steps:

  • Wash chicken, trim loose parts and fat off.
  • In a medium size bowl, beat the egg with the water. Put flour into 1 gallon zip lock bag. Season the flour with the house seasoning. Dip the chicken in the egg, and then coat well in the flour mixture.
  • Heat the oil to 350 degrees F in a deep pot or cast iron Dutch Oven. Do not fill the pot more than 1/2 full with oil. To save cook time, partially precook chicken in 350 F oven for 20 minutes before "wash & flour".
  • Fry the chicken in the oil until brown and crisp. Dark meat takes longer then white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.

SWEET CORN-DEEP FRY

Summer and corn on the cob! Yipee and Yep MadCity Dale is having fun like a kid on the Sweet Corn Farm (Ideal Acres) back home in Indiana! In a heavy Dutch oven preheat peanut oil or other oil to 375 degrees F. Make a batter by combining the 1/2 cup cornmeal, 1/2 cup buttermilk and 3 beaten eggs. Combine flour, garlic powder, salt and black pepper (Dale's LUV seasoning) in a medium bowl or pan and set aside. Dip corn-on-the-cob ears into cornmeal batter to coat. Roll in flour mixture. With cooking tongs, holding at a distance, slowly place a few ears of corn in hot oil, 1 at the time. Fry for about 3 minutes per ear or until golden brown. Drain on paper towels. Serve with corn holders in each end and in corn dishes (if you have them) while hot. Season as desired with salt and black pepper.

1/2 cup buttermilk
2 eggs
1/2 cup cornmeal
1/2 cup flour
3/4 teaspoon baking powder
1 tablespoon madcity dale # 2 seasoning

Steps:

  • Preheat oil in Cast Iron Dutch Oven to 350F at a depth of about 3" to 4".
  • Shuck, wash, pat dry, cut in half, and set aside Corn on cob.
  • Crack the eggs into medium bowl beat with a fork, mix in the buttermilk, then whisk in the cornmeal. If batter looks thin, stir in another few tablespoons of cornmeal. Set aside.
  • In another bowl, mix together dry ingredients (white) flour, baking powder, seasoning and spread out on a plate.
  • Oil at 375F, use tongs, coat a piece of corn in the buttermilk batter, shake off excess batter, then roll in the flour mixture on the plate.
  • Lower a piece of corn into oil until golden brown, about 3 minutes.
