Chocolate Waffles image

To make cookie-size chocolate waffles, spoon a tablespoon of batter in the middle of each waffle grid. Bake the waffles on the iron's lowest setting so they don't burn before fully cooking.

1 cup all-purpose flour
1 cup unsweetened cocoa powder
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
8 ounces semisweet chocolate
8 tablespoons (1 stick) butter
4 large eggs, separated
2 cups heavy cream
3 tablespoons pure vanilla extract

Steps:

  • Heat waffle iron. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and sugar. Place chocolate and butter in a heatproof bowl set over a saucepan of barely simmering water. Stir until melted; combine well. Remove from heat; whisk in the egg yolks, cream, and vanilla. Pour over the dry ingredients; stir briefly until just combined.
  • In a medium bowl, beat egg whites until stiff but not dry. Fold into the batter.
  • Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid; bake 3 1/2 to 4 minutes at the waffle iron's lowest setting, until no steam emerges from the iron.
  • Transfer the cooked waffles to a baking sheet; place in an oven set to low heat, about 200 degrees, while using the remaining batter. Serve warm.

1 1/4 cups all-purpose flour
1/2 cup dutch-process cocoa
1/4 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1/2 cup oil
1 1/2 to 1 3/4 cups milk

Steps:

  • Preheat you waffle iron as directed.
  • In a medium mixing bowl add the flour, cocoa powder, sugar, baking powder, and salt. Use a whisk to combine. Make a small well in the center of the dry ingredients.
  • Add the eggs, oil, and milk to the well, and use the whisk to slowly combine the wet and dry ingredients. Stir well, until very few lumps remain.
  • Pour the batter into your waffle iron according to manufacturers directions.
  • When the waffle is done cooking, carefully place it on a wire rack to cool, taking care not to stack the waffles on top of each other. Repeat with remaining batter.
  • Serve waffles hot with your favorite topping, such as buttermilk syrup, strawberries, and whipped cream.

2 ¼ cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
¾ teaspoon salt
¾ cup butter
1 cup semi-sweet chocolate chips
1 ½ cups milk
6 egg whites
1 tablespoon vanilla extract

Steps:

  • In a medium bowl, stir together the flour, sugar, baking powder, and salt. Set aside.
  • Place the butter and chocolate chips into a microwave-safe bowl. Cook on High power for 1 minute, then stir. Continue to cook for 15 seconds at a time, stirring each time until chocolate is melted and smooth. Set aside to cool slightly.
  • When the chocolate mixture is fairly cool, stir in the milk, egg whites, and vanilla. Pour this into the dry ingredients, and mix just until blended.
  • Preheat the waffle iron, and coat with cooking spray. Spoon waffle batter onto the hot iron in desired amounts. Close, and cook until the iron stops steaming, and waffles are easy to remove. Repeat with remaining batter.

3 tablespoons unsalted butter
3 tablespoons vegetable shortening
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons sugar
3 large eggs
1 cup milk
1/2 cup chocolate syrup, plus more for topping
1/2 teaspoon vanilla extract
Cooking spray
Confectioners' sugar and/or berries, for topping (optional)

Steps:

  • Melt the butter and shortening in a small saucepan, stirring to combine; remove from the heat and set aside. Whisk the flour, baking powder, salt and sugar in a large bowl.
  • Whisk the eggs, milk, chocolate syrup and vanilla in a large liquid measuring cup or a separate bowl. Whisk the egg mixture into the flour mixture until combined. (The batter will be slightly lumpy.) Whisk in the butter mixture until combined.
  • Preheat the oven to 250 degrees F. Preheat a waffle iron and spray with cooking spray. Ladle some of the batter into the waffle iron to within an inch of the edge (1/3 to 1/2 cup batter, depending on your waffle iron); cook until crisp. Transfer the waffle to a baking sheet and keep warm in the oven. Repeat with the remaining batter.
  • Divide the waffles among plates. Dust with confectioners'sugar and top with berries and/or chocolate syrup.

3 whole eggs, beaten
2 ounces unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
16 ounces buttermilk, room temperature
4 ounces chocolate chips, approximately 3/4 cup
Vegetable spray, for waffle iron

Steps:

  • Preheat waffle iron according to manufacturer's directions.
  • In a medium bowl whisk together the flour, sugar, cocoa powder, baking powder, salt, and baking soda. In another bowl beat together the eggs and melted butter and vanilla, and then add the buttermilk. Add the wet ingredients to the dry and stir in the chocolate chips just until combined. Allow to rest for 5 minutes.

Steps:

  • Heat waffle iron to medium-high (spray with cooking spray before heating if necessary). Heat 1/3 cup chocolate chips and the butter in 1 1/2-quart saucepan over low heat, stirring constantly, until melted. Stir in remaining ingredients except 1/2 cup chocolate chips and the powdered sugar.
  • Drop 1 tablespoon batter onto each section of ungreased waffle iron. Close lid of waffle iron. Bake 2 to 3 minutes or until steaming stops.
  • Remove from waffle iron to wire rack. Immediately sprinkle each cookie with about 1 teaspoon chocolate chips and powdered sugar. Serve warm.
