Cold pasta salad with Greek yogurt for my dear friend who doesn't like vinegar.

Ingredients

½ (8 ounce) package penne pasta
1 cup frozen peas
5 ounces sharp Cheddar cheese, cubed
6 slices cooked crispy bacon, minced
½ bell pepper, chopped
¼ onion, minced
1 (6 ounce) container plain Greek yogurt

Steps:

Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain pasta and transfer to a large bowl. Mix in frozen peas (which will thaw and cool the pasta at the same time).
Add Cheddar cheese, bacon, bell pepper, and onion; mix well. Stir in Greek yogurt. Serve immediately or refrigerate for later.

Ingredients

1-3/4 cups whole grain elbow macaroni, uncooked
1-1/2 cups each small broccoli and cauliflower florets
1 red pepper, chopped
1 cup KRAFT Bacon Flavored Reduced Fat Mayonnaise
1/4 cup plain nonfat Greek-style yogurt
2 Tbsp. GREY POUPON Dijon Mustard
2 hard-cooked eggs, chopped

Steps:

Cook macaroni in large saucepan as directed on package, omitting salt and adding vegetables to the boiling water for the last 2 min.; drain. Rinse with cold water; drain well. Place in large bowl.
Mix mayonnaise, yogurt and mustard until blended. Add to macaroni mixture along with the eggs; mix lightly.
Refrigerate several hours or until chilled.

Bring a large pot of lightly salted water to a boil over high heat. Add macaroni, stir and cook until al dente, according to package instructions. Drain and rinse under cool running water. Drain thoroughly.
Meanwhile whisk yogurt, mayonnaise, mustard, vinegar, herbs, salt and pepper in a large bowl until smooth. Add shallot.
Mix the cooked macaroni into the yogurt mixture until coated. Add carrots, peas and cheddar and stir to combine. Transfer to a serving bowl and chill until ready to serve. Garnish with cherry tomatoes just before serving.
