CHOCOLATE COVERED BANANA POPS

4 medium ripe but firm bananas
8 wooden craft sticks
3 tablespoons finely chopped lightly salted peanuts
6 ounces good quality dark chocolate (60 to 70 percent cocoa solids), chopped

Steps:

  • Peel, then cut each banana in half crosswise and insert a craft stick into each half. Place on a tray, cover with plastic wrap and place in the freezer until frozen, about 3 hours.
  • Place the peanuts in a shallow dish or on a plate. Melt the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the bottom of the top pan. Pour the melted chocolate into a tall glass. Dip each frozen banana into the chocolate, turning it to coat, and immediately roll in the peanuts. Place on a tray covered in waxed paper. Serve immediately or wrap individually in plastic wrap or waxed paper and freeze for up to 2 weeks.

Steps:

  • Combine all the ingredients in a blender or mixie jar.
  • Blend until smooth and creamy.
  • Adjust the sweetness if needed by adding more honey.
  • Pour the mixture into popsicle molds and freeze overnight or until set.
  • To remove the popsicles from the mold, run the water on the outside of the molds for some time until the ends are loose.

4 to 5 firm-ripe bananas, cut into 2-inch pieces
6 ounces semisweet chocolate chips (1 cup)
1 tablespoon sprinkles

Steps:

  • Insert a toothpick into each banana piece. Arrange bananas, toothpick side up, on a parchment-lined baking sheet and freeze until firm, 2 hours.
  • In a medium microwave-safe bowl, heat chocolate chips in 10-second increments, stirring between each, until melted and smooth. Working quickly, dip each banana piece in chocolate, shake off excess, and cover with sprinkles. Chocolate should set quickly, but if necessary, freeze pops to harden coating before serving.

3 tablespoons maple syrup
1/2 cup salted, roasted peanuts, finely chopped
Special equipment: six 3- to 4-ounce ice-pop molds

Steps:

  • Break the bananas into chunks, and puree in a food processor until the mixture is smooth and creamy. Add the cocoa powder, cream and maple syrup, and puree until combined. Spoon the banana mixture into ice-pop molds, and freeze until firm, 8 hours or overnight.
  • Spread the peanuts on a plate. Run hot water over the ice pops to help loosen them, then unmold, roll them in the peanuts and serve (or keep them frozen on a parchment-lined baking sheet until ready to serve).

12 sugar free chocolate chip cookies, finely crushed
6 wooden popsicle sticks
6 small bananas, peeled
3 teaspoons light butter, melted
1 teaspoon honey
1/4 teaspoon cinnamon
3 tablespoons chocolate syrup

Steps:

  • Take a popsicle stick and push about 3 inches of it into the center of the bottom of each banana.
  • In a pie plate, combine the cookie crumbs, butter, honey, and cinnamon.
  • Mix well.
  • Roll each banana in the crumb mixture.
  • Place the bananas on a 17x11x1-inch baking sheet lined with parchment paper.
  • Drizzle each banana with chocolate syrup.

¾ cup butter
⅔ cup white sugar
⅔ cup brown sugar
1 egg, beaten
1 teaspoon vanilla extract
1 cup mashed bananas
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jelly roll pan.
  • In a large bowl, cream butter, white sugar and brown sugar until fluffy. Beat in egg and vanilla. Fold in mashed banana. In a separate bowl, mix flour, baking powder and salt. Fold flour mixture into butter mixture. Stir in chocolate chips. Spread in prepared pan.
  • Bake in preheated oven 20 minutes, until set. Cool before cutting into squares.
