3 cups whole milk, divided
¼ cup cornstarch
⅓ cup white sugar, or more to taste
1 cup semisweet chocolate chips
1 pinch salt

Steps:

  • Combine 1/2 cup milk and cornstarch in a small bowl. Whisk or stir with a fork until smooth and all lumps have been incorporated.
  • Combine remaining milk with sugar in a medium saucepan over low heat. Slowly whisk in the cornstarch mixture. Cook, whisking as needed to prevent lumps from forming, until mixture begins to thicken, 8 to 10 minutes. Add chocolate chips and salt. Continue stirring until chips are completely melted and pudding is smooth and thickened, about 7 minutes more.
  • Pour pudding into 1 large bowl or 6 individual bowls. Place plastic wrap directly on top of the pudding to prevent a skin from forming; smooth it gently against the surface. Refrigerate for at least 3 to 4 hours before serving.

This is a traditional Scottish recipe. The Macallan was added later by a chef at a restaurant in Glasgow, so it still qualifies as a "Scottish" in my opinion!

1/2 cup extra finely granulated sugar
4 ounces margarine
1/2 cup cocoa powder or 1/2 cup drinking chocolate
1 1/2 cups flour
2 eggs
25 ml whiskey (Macallan, 2 tbsp)
2 tablespoons skim milk
1/2 cup raspberries (or soft berries of choice, 2 oz.)
4 ounces dark chocolate (70% cocoa)
3/4 cup double cream
25 ml macallan whiskey (2 tbsp)
1 tablespoon golden syrup (light corn syrup is the closest in the US)

Steps:

  • Blend sugar and margarine until light and fluffy.
  • Sieve cocoa powder or chocolate into flour.
  • Whisk eggs together, then add to sugar/margarine mix, adding a little flour mix to thicken. Add whiskey and more flour mix until both flour and whiskey have been used. Add skimmed milk, to soften. Grease 4 individual pudding moulds with margarine and dust with caster sugar.
  • Place a spoonful of the mix into each mould, cover with tin foil and secure tightly. Place in a pot of warm water which reaches halfway up the moulds. Bring to the boil then simmer for 40 minutes.
  • For the sauce : melt chocolate in a bowl over boiling water, add cream, whiskey and syrup.
  • Remove puddings and place on plates. Then pour over the chocolate sauce, adding a few soft berries before serving.

1 cup sugar
1/2 cup baking cocoa
1/4 cup cornstarch
1/2 teaspoon salt
4 cups whole milk
2 tablespoons butter
2 teaspoons vanilla extract
OPTIONAL: Sweetened whipped cream and M&M's

Steps:

  • In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. Gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. If desired, garnish with whipped cream and M&M's.

I absolutely love boozy desserts! If you're a huge fan as well then this recipe was created specifically for you. This easy-to-make chocolate pudding cake is the ultimate comfort dessert. It's decadent and consists of a layer of whiskey fudge sauce which magically forms underneath the cake while baking. I like to serve mine warm with a scoop of dulce de leche ice cream.

1 cup plus 2 tablespoons cake flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon fine salt
1/4 teaspoon ground cinnamon
3/4 cup whole milk
3 tablespoons vegetable oil
1 teaspoon pure vanilla extract
2/3 cup packed light brown sugar
1/4 cup unsweetened cocoa powder
1/4 cup mini chocolate chips
1/3 cup whiskey
1 cup boiling water
Unsweetened cocoa powder, for dusting
Your favorite ice cream, for serving

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • Combine the cake flour, granulated sugar, 1/4 cup of cocoa powder, baking powder, salt and cinnamon into a 1.5- to 2-quart round or oval baking dish. Whisk until combined.
  • In a liquid measuring cup, whisk to combine the milk, vegetable oil and vanilla extract. Pour into the baking dish and whisk with the dry ingredients until fully incorporated.
  • For the whiskey hot fudge: In a medium bowl, whisk together the light brown sugar, cocoa powder and chocolate chips. Evenly sprinkle the mixture over the cake batter.
  • In a heatproof liquid measuring cup, stir to combine the whiskey and boiling water, then slowly pour it over the cocoa mixture. Do not stir.
  • Bake until the center is almost set, with a pudding-like texture, 32 to 37 minutes.
  • For serving: Let the cake cool for 15 minutes, then dust with cocoa powder and serve with your favorite ice cream.
