PERFECT MANHATTAN
Here, the word "perfect" refers not to the quality of the classic cocktail (though we do love this version), but to the equal amounts of sweet and dry vermouth used to make it.

Steps:
- In mixing glass or cocktail shaker filled with ice, combine whiskey, vermouth, and bitters. Stir well, about 20 seconds, then strain into cocktail glass. Add cherry or twist lemon peel directly over drink to release essential oils, and serve.

- In a large pitcher, combine whiskey, sweet vermouth, dry vermouth, and bitters. Add ice, stir, then strain into coupe glasses.
- Run orange peels through a flame, then twist and garnish the cocktails. Serve.

- Combine the rye, dry vermouth, sweet vermouth and bitters in a cocktail shaker, add ice, and stir until chilled. Strain the mixture into a chilled coupe glass. Garnish with the lemon twist and serve immediately.

Steps:
- Fill a cocktail shaker or small pitcher with ice. Add the bourbon, both vermouths, and the dash of bitters. Cover and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.) Strain into a chilled cocktail glass. Garnish with the cherry or orange twist and serve.

- Fill martini glass with ice cubes and pour cold water to the brim. Set aside to chill for 5 minutes or so. (or chill glass in the freezer for 10 minutes)
- Fill shaker with 1 cup of ice cubes. Pour in bourbon, vermouths and bitters. Stir with a spoon for about 20 seconds to fully chill. Pour ice water out of the chilled martini glass, and shake excess water off. Cover martini shaker with strainer top and pour contents into the chilled glass. Add cherry.
- Hold grapefruit peel just above the surface of the drink, skin-side-down.Crease it in a few places to release a mist of grapefruit oil into the drink. Rub the pith side around the rim. Serve Immediately.
