MAC AND CHEESE IN A POTATO
This is My very own twist on a great comfort dish. If you love potato's and Mac and cheese, then this is for you.

- Combine olive oil, garlic or garlic powder, salt and pepper into a bowl. Brush on or rub onto potatoes. Bake at 375°F for an hour and a half.
- Boil water for macaroni.
- In a separate pot, add 2 tablespoons of butter. When melted, add the flour and keep stirring. Once the Roux gets a golden brown color, Add in chicken broth (keep stirring) then add in cream. At this time you should have the macaroni almost cooked and ready to strain. Now start to add the cheese into the roux one small Handle full at a time. Make sure cheese is completely melted before adding another handful.
- Now shut off the flame to your cheese sauce and drain your macaroni. Add macaroni slowly into Sauce. Sit a side and let cool.
- Take potatoes out of oven and let cool. Slice in halves and core out middle of potatoes. Take remaining Butter and place into center of potato skins.
- Now, scoop macaroni into Potatoes and sprinkle cheese on top of potatoes. Bake for 10 minutes on 350°F Then move to broiler and broil tops of potatoes until golden brown.
- Let cool, Garnish with parsley or chives and serve.
- Remember, Mac and cheese should be enjoyed, not devoured. Good Luck!

ÄLPLERMAGRONEN (SWISS ALPINE MACARONI AND CHEESE)
Alpine macaroni (älplermagronen or alpen macaroni) is essentially Swiss mac and cheese with potatoes. Macaroni and cubed potatoes collectively drown in a decadent cheese sauce! This fall and winter cozy classic is topped with caramelized onions and crispy bacon lardons, and is served with a side of applesauce.

- To make the bacon lardons: add the bacon pieces to a cold frying pan and turn on the heat to medium heat. Cook lardons, stirring regularly, until the fat renders and the bacon is browned and crispy, about 8 to 10 minutes. Remove lardons with a slotted spoon and drain on a paper towel-lined plate.
- To make the caramelized onions: In a frying pan over medium-low heat melt the butter. Alternatively cook the onions in 2 tablespoons bacon fat if you are cooking bacon lardons for the garnish (just use the same frying pan and remove all but 2 tablespoons of the fat from the pan). Add the onions, season with salt, and cook, stirring regularly until soft and golden, about 30 minutes. Set aside.
- To make the applesauce: Place the apples in a saucepan with water and cover. Simmer gently on medium-low heat, stirring once or twice, until the apple is completely tender, about 20 minutes. Mash with a fork until smooth. Set aside.
- To make the macaroni: Add the cubed potatoes to a large pot and cover generously with salted water. Bring to a boil, add the macaroni and continue to cook until the macaroni is barely al dente and the potatoes are tender. The exact time will depend on the macaroni shape. It's about 10 minutes for ziti. If using a smaller shape with shorter cook time (like elbows which need only 6 minutes for al dente) you may want to boil the potatoes for a couple minutes on their own before adding the macaroni. Drain the macaroni and potatoes.
- Return to the drained macaroni and potatoes to the pot, add the cream and return to medium heat. Stir until the cream starts to heat up (a minute or so) and then add the grated cheese, a little salt, and a bit of freshly grated nutmeg. Keep stirring until the cheese has melted into a thick and luscious sauce.
- Serve the cheesy Alpine macaroni on individual plates topped with caramelized onions, crispy bacon lardons (optional), and with applesauce on the side to eat either with the macaroni or afterwards as dessert based on personal preference.

OH MY GOD this is by far the best recipe for mac n cheese I've ever gotten and the best part is NO processed cheese product!! It is well worth the effort put into it. It may seem a little difficult, but if a clod like myself can do it, trust me, so can you!

Steps:
- Preheat oven to 350°F.
- In a large pot of boiling salted water cook the pasta to al dente.
- While the pasta cooks, in a separate pot, melt the butter.
- Whisk in the flour and mustard and keep it moving for about 5 minute Make sure it is free of lumps.
- Stir in milk, onion, bay leaf and paprika. Simmer for 10 minute and remove bay leaf.
- Temper in the egg.
- Stir in 3/4 of the cheese.
- Season with salt and pepper.
- Fold the macaroni into the mix and pour into a 2 quart baking dish.
- Top with remaining cheese and potato chips.
- Bake 30 minute Let stand for 5 minutes before serving, then bask in the compliments during dinner!
POTATO AND MACARONI GRATIN

- Preheat oven to 350°F. Butter 8 x 8 x 2-inch baking dish. Cook potato in large pot of boiling salted water until tender, about 10 minutes. Using slotted spoon, transfer potato to large bowl. Add macaroni to same pot of boiling water; cook until just tender but still firm to bite. Drain macaroni. Add to bowl with potato.
- Meanwhile, melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add sliced onions and sauteé until tender and brown, stirring often, about 15 minutes.
- Add onions, cream, milk and cheese to potato mixture and mix well. Season to taste with salt and pepper. Transfer to prepared dish. Bake until heated through and cheese melts, about 20 minutes. Let cool 5 minutes; serve hot.
