Mango lassi, a popular creamy Indian drink made with ripe sweet mangoes, yogurt, cardamoms and a sweetener. Garnished with sliced nuts and saffron, this is best served chilled.

1½ cup Mangoes chopped (( sweet ripe mangoes or 1 cup canned pulp))
1 cup Plain yogurt
½ cup whole milk ((or water or 4 ice cubes, refer notes))
2 to 3 tablespoons sugar ((adjust to taste))
¼ teaspoon cardamom powder ((optional))
1 teaspoon chopped nuts
1 pinch saffron strands
4 tablespoons whipped cream

Steps:

  • Skip this step is using canned mango pulp. Rinse the mangoes and chill them for a few hours. Peel and cube them. This keeps your mango lassi cold after blending.
  • To a blender jar, add mangoes, yogurt, milk (or water or ice), cardamom powder and sugar.
  • Blend until the mango lassi is super smooth. It should be thick yet of pouring consistency.
  • Taste test and add more sugar if you want it sweeter or more milk or ice if you prefer it thinner. If you want more mango flavor, add more mangoes and a splash of water.
  • Pour Mango Lassi to serving glasses. If you prefer it colder, refrigerate it for an hour.
  • Garnish with sliced pistachios or with saffron.
  • Add ½ cup chilled mango pulp (or puree), ½ cup cold Greek yogurt, ¼ cup cold milk, 2 tbps sugar, a pinch of cardamom powder and 1 to 2 ice cubes to a mason jar.
  • Whisk it very well until mixed. Or Secure the lid tightly and shake the jar for 2 mins just until combined. Serve mango lassi immediately.

1 cup chopped very ripe mango (see how to peel and chop mango ), frozen chopped mango, or a cup of canned mango pulp
1 cup plain yogurt
1/2 cup milk
4 teaspoons honey or sugar, more or less to taste
A dash of ground cardamom (optional)
Ice (optional)

Steps:

  • Add ingredients to the blender: Put the mango, yogurt, milk, honey (or sugar), and cardamom into a blender and blend for 2 minutes. If you want a more milkshake-like consistency and it's a hot day, either blend in some ice as well or serve over ice cubes.

a pinch ground cardamom (crush the seeds from 1-2 pods)
1 tbsp honey
2 limes , juiced, to taste

9 fluid ounces (255 milliliters) plain yogurt
4 1/2 fluid ounces (130 milliliters) milk
4 1/2 fluid ounces (130 milliliters) canned mango pulp or 7 ounces (200 grams) from 3 fresh mango, stoned and sliced
4 teaspoons sugar, to taste, or feel free to try salt and cardamom seeds

  • Put all the ingredients into a blender and blend for 2 minutes, then pour into individual glasses, and serve. Feel free to try salt and cardamom seeds. The lassi can be kept refrigerated for up to 24 hours.

This recipe comes from the cookbook author Madhur Jaffrey, who said, "Mangoes are supposed to be good for the eyes." This recipe calls for fresh or canned mango pulp. Like other South Floridians, the chef Niven Patel of Ghee Indian Kitchen in Miami has access to fresh, locally grown, exceptionally flavorful varieties of bananas and mangoes he can ripen to perfection. Elsewhere in the country, that's not the case: In fact, Mr. Patel said, most Indian restaurants use a canned ripe Indian mango purée to remedy that problem. But by roasting the mangoes or bananas first with sugar and warm spices, you can get good flavor from fruit of any quality or ripeness. Mr. Patel makes his own yogurt, which gives this lassi a complex tartness that balances the sweet spiced fruit, but a very good-quality regular plain yogurt (as in not strained or Greek) is a fine stand-in. The mango yields a slightly thicker lassi than the banana; if you'd like, add a little extra milk to thin it out, tasting as you go to make sure you don't dilute the flavor.

2 ripe medium mangoes or bananas, peeled and cut into large chunks
1/2 cup brown sugar
1/2 vanilla bean, split lengthwise and seeds scraped
1 green cardamom pod, lightly crushed
2 cups plain whole milk yogurt
1/2 cup whole milk
1/2 cup ice

Steps:

  • Heat oven to 350 degrees.
  • Put the fruit in a small ovenproof skillet or baking dish. Sprinkle with sugar, then add vanilla bean seeds and pod, and the cardamom pod, stirring so the fruit is coated with sugar.
  • Roast the fruit until soft, stirring every 5 minutes, until most - but not all - of the liquid the fruit releases has evaporated and begins to bubble and thicken, about 25 to 30 minutes for the bananas and 40 minutes for the mangoes. (If you let them cook too long, the sugar mixture will stick to the pan.) Discard vanilla bean and cardamom, and let the fruit cool completely, then refrigerate until chilled. This step can be done several hours or the day before.
  • Measure out 3/4 cup of the chilled roasted fruit. (You may have a little left over, depending on the size of the fruit you started with.) In a blender, combine the roasted fruit with yogurt, milk and ice. Process just until smooth, scraping down the sides of the pitcher once or twice, and serve immediately.
