This is truly the Best Ever Italian Sausage Stuffing recipe. It is my mom's treasured family recipe that has been on our table every Thanksgiving. The stuffing includes sausage, onion, celery and fresh herbs. We love the crunchy top and soft and buttery middle.

16 ounces bread cut into 1-inch pieces (day old bread if possible)
1 Tablespoon extra-virgin oil
1 pound mild pork sausage (or sweet or spicy Italian sausage, casings removed (you could use turkey, chicken, or vegan sausage))
1/3 cup unsalted butter
1 cup finely chopped yellow
1 cup chopped celery (from 3 stalks)
1/2 cup chopped flat-leaf parsley
1 Tablespoon fresh chopped rosemary (no stems)
1 Tablespoon fresh chopped sage
1/2 teaspoon sea salt or more to taste
2 cups low sodium vegetable broth
1 egg lightly whisked

Steps:

  • Preheat oven to 350 degrees F.
  • Place the cubed bread on a baking sheet. Bake for 7-10 minutes, or until dried and toasted. They should be golden brown. Transfer the bread cubes to a very large bowl.
  • Add 2 cups of broth (I used vegetable) to a large sauce pan. Heat on medium-low.
  • Meanwhile, in a large skillet heat the oil over medium heat. Cook the sausages over medium heat for about 10 minutes, until browned and cooked through, breaking up the sausage with a fork while cooking. I didn't find ground sausage so I bought sausage in the casing and removed it from casing before browning it. Use ground sausage if you found it.
  • In another skillet, add the other part of oil and butter (I used vegan butter sticks to keep it dairy-free)in medium heat.
  • When it is heated up, add the onions, celery, parsley, sage, rosemary or thyme. Add just a dash of salt and pepper, if you like. Saute over medium heat for 10 minutes, until the vegetables are softened.
  • Add the browned sausage, toasted bread to a large bowl. Next, add in the onion mixture.
  • Add in one cup of the broth. With a large spoon, gently stir the ingredients together. Add in the whisked egg. Gradually add the remaining broth 1/4 cup at a time until the stuffing is wet. With each addition, gently stir and pat the stuffing ingredients together. Take care not to over mix it, you're just combining it all together. The goal is to have it wet, but not soaked and drippy. You may need the whole 2nd cup of broth and you may need less. You may even need a little bit more than a full 2 cups of broth.
  • When the broth is soaked in and combined, spoon the stuffing into a 2qt. baking dish (or 9x12-inch baking dish); then cook for 30-40 minutes, or until it's heated through and golden brown on top. Check it at about 25 minutes and if it seems to be browning too much, cover with foil paper. I baked mine a full 40 minutes. Every oven is different. You may even need to bake it a few minutes longer to get that nice golden brown and have the inside fully heated through.
  • Remove from the oven. Sprinkle with additional parsley, then serve.

Lovely stuffing that has been in my family for over 20 years. I think it's really good and I stuff in bird right before cooking.

3/4 lb Italian sausage
1 cup chopped celery
1 medium chopped onion
1/4 lb sliced mushrooms
1/2 cup mozzarella cheese
3/4 cup dry white wine
4 cups herb-seasoned stuffing cubes (I use Pepperidge Farms)
olive oil, to saute onion

Steps:

  • Prepare stuffing as indicated, but replace water with wine.
  • Saute onions, celery and mushrooms.
  • In seperate pan, cook sausage thoroughly and remove grease. You can substitute salami for sausage if you like and also provolone for mozzarella, or both!
  • Add ingriedients and mix well.
  • Enough for 14lb. bird.

Each Thanksgiving we all looked forward to my Mom's delicious turkey with Italian meat stuffing. When she got older and could no longer cook, I took over the Thanksgiving dinners. She is no longer with us but each year members of my family continue to ask for Grandma's recipe so they can make it for their own family. I would now like to pass it on to you.

1 pound ground beef
½ (1 pound) loaf day-old Italian bread
1 large onion, chopped
2 large stalks celery with leaves, chopped
½ cup chopped fresh mushrooms
4 cloves garlic, chopped, or more to taste
1 tablespoon chopped fresh flat-leaf parsley
½ cup freshly shredded Parmesan cheese
1 large egg
salt and ground black pepper to taste
1 (15 pound) whole turkey, neck and giblets removed
2 tablespoons olive oil
2 lemons, cut in half
2 cloves garlic, chopped, or to taste
2 teaspoons garlic powder, or to taste
1 cup water

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the ground beef into a skillet, and cook and stir the meat until browned and crumbly, breaking it up into chunks as it cooks, about 10 minutes. Drain grease. Place the ground beef into a large mixing bowl.
  • Tear the bread into rough chunks, and place into a bowl; soak bread in water until moistened, and squeeze the water out of the bread. Crumble the wet bread into the bowl with the ground beef. Mix in the onion, celery, mushrooms, 4 cloves of garlic, flat-leaf parsley, Parmesan cheese, and egg until thoroughly combined. Season with salt and black pepper.
  • Rinse the turkey, and pat dry with paper towels. Lightly stuff the turkey with the ground beef mixture, and place into a roasting pan with a lid. Rub the turkey with olive oil, squeeze lemons over the turkey, and sprinkle 2 more cloves of garlic, the garlic powder, and more salt and black pepper over the bird.
  • Roast the turkey uncovered in the preheated oven until the skin is browned, about 45 minutes. Reduce heat to 350 degrees C (175 degrees C), and cover the turkey with the lid. Continue roasting until the juices run clear and an instant-read meat thermometer inserted into the thickest part of a thigh reads 180 degrees F (80 degrees C), about 5 more hours. Baste occasionally. If the bottom of the roasting pan looks dry, pour in water.

My Dad's Italian-American Turkey Stuffing image

This is the stuffing I grew up on. My dad insisted the pilgrims were eating mozzarella and pepperoni on the Mayflower! I think he cracked that joke so many times that he started to believe it...I love what the cheese does when baked inside the bird. The pepperoni becomes almost like bacon or Pancetta here when mixed with the otherwise traditional stuffing ingredients. If you don't want to use or don't have the turkey gizzard and heart, simply omit. Take a chance on this stuffing and you will never go back...

1 1/2 sticks (12 tablespoons) unsalted butter
3 medium yellow onions, thinly sliced
8 stalks celery, stalks trimmed of leaves and ends and cut into thin slices
Kosher salt
Freshly ground black pepper
8 slices white sandwich bread
2 tablespoons fresh thyme, stemmed
10 fresh sage leaves, stemmed and cut into thin strips
1 teaspoon dry rosemary
1 turkey heart, cut into small pieces
1 turkey gizzard, cut into small pieces
12 ounces pepperoni, casing removed, cut into small cubes
1 pound loose pork breakfast sausage, broken into small pieces and cooked
1 1/2 pounds mozzarella cheese, cut into 3/4-inch cubes
1 cup low-sodium chicken stock, boiled and cooled

Steps:

  • Preheat the oven to 375 degrees.
  • Cook the vegetables: In a large skillet, melt 2 tablespoons (1/4 stick) of the butter. Add the onions and celery. Season with salt and pepper. Cook the vegetables, over medium heat, until translucent, 3 to 5 minutes. Remove the skillet from the heat and transfer the contents to a bowl. Set aside.
  • Toast and season the bread: Arrange the bread slices in a single layer on a baking sheet and toast until light brown. Alternatively, brown them in a toaster. While the bread is still hot, lightly butter both sides of each piece with 1 tablespoon of the butter. Cut into 1-inch squares and transfer them to a large bowl. Toss with salt, pepper, the thyme, sage and rosemary. Mix to blend. Set aside.
  • Cook the turkey innards and pepperoni: Heat a tablespoon of the butter and, in a large skillet, quickly saute the heart and gizzard pieces, 30 seconds. Season with salt and pepper. Remove from the heat and add it to the bowl of celery and onions. Stir to blend. In the same large skillet, add the remaining 1 tablespoon of the butter and saute the pepperoni pieces over high heat until crispy, 2 to 3 minutes. Drain on a paper towel.
  • Make the mix: Combine the celery and onion mixture, the cooked breakfast sausage, the mozzarella and the pepperoni in the bowl containing the toasted bread. Mix to blend and add the cup of chicken stock to moisten all of the ingredients.
  • Pour the mixture into a large baking dish and cover with foil. Bake 30 minutes, then remove the foil and continue baking until golden brown, about 20 more minutes.

CLASSIC EASY TURKEY STUFFING

This is an easy basic stuffing recipe, that will easily stuff a 12-14 pound turkey, I have stuffed a large roasting chicken also with this recipe. If you have any remaining stuffing just bake in a small buttered baking dish, or you may wish to bake the complete stuffing recipe in a casserole dish in a 325 degree oven, covered for about 25-30 minutes then uncover and bake for about 10-15 minutes more, or until lightly browned on top. For this recipe two (1 pound) loaves of bread is enough, I just use two 400-gram loaves, make certain that the bread is a couple days old but not mouldy, or you can place it in the refrigerator overnight to help firm up for slicing. Now to this basic stuffing you can add in raisins, water chestnuts, pecans etc. If you are serving this to a crowd and baking it in the oven, I suggest to double the ingredients and bake in two separate casseroles. Please use only butter for this stuffing. This is very good, and a recipe that you will use time and again! Just a suggestion, make up an extra unbaked stuffing mixture, it will freeze well in containers or freezer bags to serve later. To reheat, thaw and bake in a greased dish, rather than in the bird at 325°F until golden brown on top.

1/4-1/2 lb bacon, chopped
3/4 cup butter
3 stalks celery, chopped
2 medium onions, chopped
2 tablespoons fresh minced garlic (or to taste)
14 cups bread cubes (must be stale but still soft and cut into about 1/2-inch cubes)
2 teaspoons poultry seasoning (to taste) or 2 teaspoons rubbed sage (to taste)
2 teaspoons seasoning salt
black pepper
1 cup low sodium chicken broth (you might use more than 1 cup)
1 1/4 cups dried cranberries (optional but really good to add)

Steps:

  • In a large frypan fry the bacon until crisp; (do not drain the drippings) remove and crumble; set aside.
  • Add 3/4 cup butter (no less than 3/4 cup!) to the bacon drippings and melt.
  • Add in chopped celery, onions and garlic; sauté until tender.
  • Add HALF of the bread cubes to the butter; stir to coat, and keep stirring with a wooden spoon until the bread cubes are lightly browned and the butter is absorbed.
  • Transfer to a large bowl (or finish in the frypan, if you have a large enough frypan to hold all ingredients) and add in remaining bread cubes, salt, pepper and poultry seasoning or sage (if using).
  • Add in crumbled bacon and the cranberries or other ingredients that you choose to use; mix to combine.
  • Drizzle with the chicken broth (mixing with a wooden spoon) until you have reached the desired moistness, you might have to add in more than 1 cup, but do not add in too much or your bread will become too "soggy".
  • Immediately stuff the turkey, and cook.
  • **NOTE** the flavor of the stuffing will vary depending on ingredients and type of bread used.
