LUAU LAVA HAWAIIAN BAKED BEANS

Steps:
- Add the peppers and onions to a saute' pan and cook until tender.
- Mix the beans, bacon, pepper - onion mixture, and pineapple juice to a large pot. Stir to combine
- Add the brown sugar, lava sauce and Luau bacon BBQ sauce to the mixture.
- Stir to combine.
- Cook on low for 2 hours stirring often. Add your pineapple chunks and stir to combine.
- Cook for another 15 minutes to heat pineapple.

- Preheat oven to 350. In a large bowl, mix: ketchup, barbecue sauce, mustard, rapadura/maple syrup, rum, cilantro, chili powder, garlic and cumin. Fold in the beans and pineapple. Heat a saute pan over medium heat. Add bacon and beef. Midway through the cooking add the onions. Cook until meat is browned and onions are getting translucent. Add beef, bacon, onion mixture to ketchup/bean mixture with a slotted spoon. Spoon in a few tbsp (or more) of the cooking fat! Pour entire mixture into an 8x8 baking dish. Bake, covered, at 350 for 2 hours.

Take your canned beans and kick it up a notch! The recipe is for the microwave but I often times just do it on the stove. This is requested for the yearly bbq!

- Combine onions and green pepper in a 2 qt microwave safe casserole.
- Microwave on high, uncovered, for 2-3 minutes or until tender.
- Add beans, pineapple,catsup, brown sugar and soy sauce. Mix lightly.
- Microwave on high uncovered for 12-14 minutes or until steaming hot stirring twice.
- Can be transferred to a crock pot and kept on low.

- Place cast iron pot in bed of hot coals. Heat oil and add bacon, ground chuck and onions. Stir and cook until lightly browned and softened. Add chili powder, cumin, garlic, pepper and cayenne. Stir and cook until fragrant.
- In a large bowl, mix ketchup, barbecue sauce, sugar, bourbon, liquid smoke and yellow mustard. Pour mixture into pot. Stir to combine. Add beans, pineapple and cilantro, stir to combine.
- Place lid on pot and cover lid with hot coals. Cook 30 minutes.

- Fry bacon until crisp. Remove from pan and reserve drippings.
- Crumble bacon and combine in Dutch oven with onions and remaining ingredients.

BLACK BEAN LUAU SALAD
This came from a magazine ad for canned Dole pineapple. I would estimate more than 8 servings, but if the taste appeals -- the 8 may keep eating ! It takes a little forethought -prep time does not include cooking rice (white or brown) and chicken. Makes a nice luncheon salad with warm rolls and a bottle of Chardonnay.
