Lower-Fat Green Bean Casserole image

This is a slightly different version of Cooking Light's green bean casserole. It has a bit more flavor and I think less soggy.

1 teaspoon butter
1 small onion, minced
1 teaspoon flour
1 (4 ounce) can sliced mushrooms, drained
2 (15 ounce) cans French style green beans
1/4 cup skim milk
15 ounces cream of mushroom soup
2 teaspoons soy sauce
1/2 cup shredded swiss cheese
1/4 cup sour cream
1 teaspoon pepper
1 cup prepared stuffing
1 teaspoon butter, melted

Steps:

  • Preheat oven to 350°F.
  • Heat butter over med-high heat and sauté onions for 5 minutes.
  • Add flour and stir constantly for 3-5 more minutes or until you cook the lour taste out.
  • Gradually add milk stirring until blended.
  • In a large bowl mix together beans, soup, soy sauce, sour cream, swiss cheese, onion mixture and pepper. Stir well.
  • Mix stuffing with butter.
  • Place into a casserole dish and sprinkle stuffing mix over the top.
  • Bake for 25 minutes.

  • Position a rack in the upper third of your oven and preheat to broil. Lightly coat a 2-quart, broiler-safe baking dish with nonstick spray.
  • In a small bowl, stir together the Panko, Parmesan, parsley, and 2 tablespoons olive oil. Set aside.
  • Blanch the green beans: Bring a very large pot of water to a boil. Prepare an ice water bath and set out a large, clean kitchen towel. Place the beans in the water and cook just until crisp-tender, about 3 minutes. Plunge into an ice bath to stop the cooking, then drain and transfer to the towel. Lightly pat dry.
  • Meanwhile, heat 1 tablespoon oil in a large, wide saucepan over medium heat. Add onion and mushrooms. Cook, stirring frequently, until the onion is soft and golden and the mushrooms brown and have given up their liquid, about 15 minutes. Add the remaining 1 tablespoon olive oil. Sprinkle the flour over the top. Cook, stirring, for 1 to 2 minutes more, until all of the flour turns golden and no white bits remain.

  • Toss green beans in a large bowl with 1 tablespoon oil until well coated. Divide between 2 baking sheets and spread in an even layer. Roast, stirring once and rotating the pans top to bottom about halfway through, until tender and beginning to brown, 20 to 25 minutes.
  • Meanwhile, heat 1 tablespoon oil in a large saucepan over medium heat. Add onion and cook, stirring frequently, until very soft and golden brown, 5 to 8 minutes. Add flour, salt and pepper; cook, stirring, for 1 minute more. Add milk and continue to stir, scraping up any browned bits.
