This popcorn has only 8.5 carbs per serving. A friend of mine's daughter has diabetes. She was looking for a popcorn recipe that was diabetic friendly. I stumbled upon this recipe. This is a really great recipe.

13 c fresh air popped popcorn
1 egg white
2 Tbsp dark molasses
2 tsp vanilla extract
3/4 c splenda (sugar substitute)
1/2 c dry roasted peanuts

Steps:

  • 1. spray baking sheet with cooking spray
  • 2. pop the popcorn
  • 3. in a large bowl place popcorn.in a small bowl-add egg white molasses,and vanilla,salt,and granular splenda. Whisk ingredients well.
  • 4. add peanuts and stir well.pour over popcorn,and toss until coated.
  • 5. put in baking sheet,and bake at 325 for 20-25 minutes.turn it a bit while baking.
  • 6. pour on to waxed paper or parchment paper and let cool.cool to room temp. before serving.
  • 7. Nutrition information 8.5 carbs per serving 3 grams of sugar per cup 100 calories per cup

4 tablespoons coconut oil ((or cooking oil of choice))
1/2 cup popcorn kernels ((organic preferred))
5 tablespoons low carb sweetener ((see Recipe Notes for options))
1/2 teaspoon salt

Steps:

  • Put oil in large pan (or stirring style popper) with 3-4 kernels. Cover with a lid.
  • Shake the pan back and forth a few times (or stir the popcorn with the popper's crank handle) to combine.
  • When the first kernel pops, put the rest of the ingredients (sweetener and salt and the remainder of the popcorn) in the pan / popper.
  • Shake the pan (or turn the crank handle) continuously until the popping stops.
  • Put the popcorn in large (non plastic) bowl and let cool.
  • In the unlikely event that there is leftover kettle corn, store in an airtight container.

CINNAMON-SUGAR POPCORN

I first tried this when I was visiting my sister in West Virginia. After trying it, I loved it, however I neglected to ask her for the recipe. 10 years later, I have it, and I still love it! The kids can help make it if you use an air popper (which I did to reduce fat and calories...there's enough in the butter!) I used my deep dish lasagna pan to cook it in the oven. You can use a roasting pan or any other large, deep dish pan. It makes a lot, so either invite your friends or store it in an airtight container for later.

1 cup unpopped popcorn
⅓ cup butter
⅔ cup white sugar
2 teaspoons ground cinnamon
½ teaspoon salt
½ teaspoon vanilla extract

Steps:

  • Preheat an oven to 250 degrees F (120 degrees C). Pop the popcorn using an air popper according to manufacturer's directions. Place into a large mixing bowl, and set aside.

2 tbsp vegetable oil
100g popcorn kernels
250g caster sugar
50g salted butter , cubed

Steps:

  • Put the oil in a large saucepan with a tight-fitting lid over a medium heat. Toss the popcorn kernels in the oil to coat. Put the lid on, and keep over a medium heat until you hear the first popcorn pop, then turn the heat to medium-low. When you begin to hear lots of popping, give the pan a shake. Continue to shake frequently until the popping stops. Turn off the heat and leave in the pan.
  • Line a large baking tray with baking parchment. Put the sugar and 60ml water into a medium heavy-based saucepan and bring to the boil. Stir until the sugar has dissolved, then leave over a medium heat, without stirring, for 6-8 mins. It should start to turn into a golden caramel, swirl it around and add the butter - stand back as it may spit a little. Stir well until combined.
  • Pour the caramel over the popcorn in the pan and stir immediately to coat the popcorn, being careful not to touch the hot caramel. Carefully transfer onto the lined baking tray and press down with the back of a spoon to spread evenly. Leave to cool for 5 mins, then break apart and eat.
