Low Fat Oaty Apple Raspberry Muffins image

I made these up based on extensive testing (yum!) and tweaking to get my preferred balance of fruit overload and low fat. It's flexible, along with the apples, chuck in any other fruit. If you don't want apples try canned apricot - the trick is to get heaps of moisture from the fruit.

1 1/2 cups self raising flour, wholemeal
2 tablespoons butter, melted
1/2 cup skim milk
1/2 cup rolled oats
400 g apple pie filling, chopped roughly
3/4 cup frozen raspberries
1 egg
1 tablespoon raw sugar

Steps:

  • Mix flour, sugar, oats in bowl.
  • Mix melted butter, lightly beaten egg and milk in another bowl.
  • Add chopped up apple and raspberry then pour all into dry ingredients.
  • Mix lightly until ingedients are barely wet.
  • Put into small muffin pan.
  • Bake in 180 degree over for 15-20 minutes or until cooked.

Cooking spray
1 1/2 cups all-purpose flour
2 1/2 cups yellow cornmeal
1 1/2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
2 cups low-fat buttermilk
1/2 cup apricot nectar
3 tablespoons grapeseed oil
2 teaspoons vanilla extract
1 teaspoon orange zest
4 large egg whites
2 cups frozen raspberries

Steps:

  • Preheat the oven to 375 degrees F. Line a 12-cup muffin pan with paper liners or 6-inch squares of parchment paper and mist with cooking spray. (Use parchment paper if you want a more domed muffin; the batter will cling to the paper as it rises.)
  • Whisk the flour, cornmeal, 3/4 cup sugar, the baking powder and salt in a medium bowl. In another bowl, whisk the buttermilk, apricot nectar, grapeseed oil, vanilla extract and orange zest until combined.
  • Beat the egg whites and remaining 3/4 cup sugar in a large bowl with a mixer on medium-high speed until stiff peaks form, about 8 minutes. Whisk the buttermilk mixture into the dry ingredients until just moistened. Gently fold in the egg-white mixture until almost combined, then fold in the raspberries; do not overmix.
  • Divide the batter among the prepared cups (an ice cream scoop works well). Bake until a toothpick inserted into a muffin comes out clean, 30 to 35 minutes. Remove the muffins from the pan and cool on a rack.

What I like the most about these muffins is that the spices make the muffin what it is. The raw cane sugar and whole wheat pastry flour are the best to use because they are the least processed ingredients available and retain more of their natural goodness. The chunky apple bits give me more for my bite and add another level of sweetness to the muffin. These make a great breakfast or brunch item, or you can have one with a cup of coffee and unwind! 1 cup whole wheat pastry flour
1 cup all-purpose flour
½ teaspoon baking soda
1 pinch salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon ground ginger
2 large egg whites
⅔ cup skim milk
⅔ cup nonfat plain yogurt
1 cup raw sugar
1 tablespoon canola oil
¼ teaspoon vanilla extract
1 cup chopped peeled apple

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Whisk the whole wheat pastry flour, all-purpose flour, baking soda, salt, cinnamon, nutmeg, allspice, and ginger together in a large bowl until evenly combined. Use your fingers to make a well in the center of the dry ingredients.
  • In a separate bowl, whisk the egg whites, skim milk, yogurt, raw sugar, canola oil, and vanilla extract until smooth; mix in the chopped apple.
  • Pour the liquid ingredients into the well in the dry ingredients, and mix to make a thick batter.
  • Pour the batter into the prepared muffin cups, filling them about 2/3 full.
  • Bake the muffins in the preheated oven until lightly golden brown and a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes.
  • Cool the muffins in their cups for about 5 minutes before removing to finish cooling on wire racks.

1 1/2 cups apple juice
2 teaspoons vanilla extract
1 1/2 cups whole wheat flour (or spelt flour)
1/2 cup sugar
2 teaspoons baking powder
2 medium apples, grated
1 teaspoon cinnamon
4 egg whites, beaten to soft peaks
apple, wedges to garnish (with or without peel)

Steps:

  • Soak the oats, apple juice, sugar and vanilla for 30 minutes.
  • Mix in the flour, baking powder, grated apple and cinnamon.
  • Fold in the beaten egg whites; Spoon into 12 muffin tins.
  • Top muffins with 2 sliced apple wedges (cut quarters of apple into 3 or 4 wedges) and bake at 170° C (338°F) for 25 - 30 minutes until muffins and cooked though and golden.
  • Cool in pan for a few minutes, then remove from pan and cool on wire rack.

I've been searching for a recipe for something like Starbuck's low fat raspberry apple muffins, and this is the closest I've managed to get. It's based on a recipe from Waitrose magazine from February 2000.

Number Of Ingredients 12

250 g plain flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 pinch salt
1 large dessert apples
4 tablespoons clear honey
1 lemon, finely grated zest
1 large egg, lightly beaten
200 ml nonfat milk
2 tablespoons canola oil
150 g raspberries (frozen are ok)
sugar

Steps:

  • Preheat the oven to 180°C Lightly oil a non-stick muffin tray.
  • Sift the flour, baking powder, baking soda and salt into a large bowl.
  • Roughly grate the apple, with its skin but without its core, into the bowl.
  • Mix it in with the honey and lemon zest.
  • Roughly stir in the egg, oil and milk until the batter is just mixed but still a little lumpy.
  • Toss the frozen raspberries in the sugar (fresh ones can go straight in) then quickly fold them in to the batter.
  • Spoon into the muffin tins, filling each to the top as these don't rise too much.
  • Bake for 20 minutes until a thin knife inserted into them comes out clean.
  • Let cool in the tin for 10 minutes, then on a wire rack. Enjoy!
