Italian dressing chicken is one of the easiest and most delicious chicken recipes. Chicken breasts are marinated in Italian salad dressing then topped with parmesan cheese and baked until incredibly juicy and flavorful. You will LOVE this recipe!

4 boneless skinless chicken breasts
1 cup Italian dressing (try our homemade Italian dressing)
½ cup grated parmesan cheese

Steps:

  • Lay the chicken in a baking dish just big enough to hold the chicken. (See notes.) Pour the Italian dressing over the top. Cover the chicken then place it into your fridge for up to 24 hours, turning the chicken over once halfway through marinating. (See notes.)
  • Remove the chicken from the fridge then preheat your oven to 420 degrees.
  • Bake the chicken, uncovered, for 25 minutes. Sprinkle the parmesan cheese evenly over the chicken breasts then continue to cook for another 5-10 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit. Serve with a few spoonfuls of the sauce in the baking dish over the top.

5 tablespoons thawed apple juice concentrate
1/4 cup cider vinegar
1/4 cup lemon juice
1 garlic clove, minced
1/2 teaspoon each onion powder, paprika, ground mustard and dried oregano
1/4 teaspoon dried basil
1/8 teaspoon dried thyme
1/8 teaspoon dried rosemary, crushed

Steps:

  • In a jar with a tight-fitting led, combine all ingredients. Chill several hours or overnight. Shake well before serving.

4 boneless skinless chicken breast halves (6 ounces each)
1 envelope Italian salad dressing mix
1/4 cup water
1 package (8 ounces) cream cheese, softened
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (4 ounces) mushroom stems and pieces, drained
Hot cooked pasta or rice
Minced fresh oregano, optional

Steps:

  • Place the chicken in a 3-qt. slow cooker. Combine salad dressing mix and water; pour over chicken. Cover and cook on low for 3 hours. Remove chicken. Cool slightly; shred meat with two forks. Return to slow cooker., In a small bowl, beat cream cheese and soup until blended. Stir in mushrooms. Pour over chicken. Cover and cook until chicken is tender, 1 hour longer. Serve with pasta or rice. If desired, sprinkle with oregano.

I tweaked our favorite Italian Dressing recipe so it was healthier and more WW friendly. The original recipe (which is Recipe #20158) is fantastic, but it is 2 points plus per Tablespoon. This version is 1 point plus for the WHOLE recipe! We use it on salads, Italian subs, pasta, chicken and even as a dip for bread. You can use red or white wine vinegar. I actually prefer the taste of the red, but it looks more like Italian dressing if you use the white.

1 tablespoon cornstarch
1 cup cold water
1/3 cup wine vinegar
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dry mustard
1/4 teaspoon paprika
1 garlic clove, minced (or 1/8 tsp. garlic powder)

Steps:

  • Mix the cornstarch and water together in a small saucepan. Cook, stirring constantly, over high heat until it begins to thicken and is clear. (It will thicken even more once it is cool.).
  • Combine all the ingredients, including the cornstarch mixture, in a jar with a lid. Cover and shake to mix thoroughly.
  • Let stand for at least 2 hours to blend flavors. Shake well before using. Store at room temperature.

1 (16 ounce) bottle Italian-style salad dressing

Steps:

  • To Marinate: Pour salad dressing into a large, resealable plastic bag. Add chicken breasts, seal bag and shake to coat. Place in refrigerator for at least 1 hour or overnight (the longer you marinate, the more taste the chicken will absorb).
  • Preheat oven to 350 degrees F (175 degrees C).

4 chicken breasts
1/2 cup low fat zesty Italian dressing
2 teaspoons parmesan cheese
1 teaspoon salt
1 teaspoon sugar
1 teaspoon steak seasoning

  • place breasts in a ziplock bad and dump italian dressing on top.
  • let marinade in the refrigerator for at least 2 hours.
  • in the meantime combine all of the rub ingredients.
  • without wiping off excess dressing, sprinkle rub on one side of chicken and place on grill season side down.
  • sprinkle other side of chicken and cook indirectly for 10-12 minutes each side or until done.

4 boneless skinless chicken breasts
2 tablespoons low-fat Italian salad dressing
1/2 cup breadcrumbs
1 teaspoon italian seasoning mix
1 cup thick spaghetti sauce or 1 cup tomato sauce
1/4 cup grated parmesan cheese
1/2 cup grated low fat mozzarella

Steps:

  • Remove any clinging fat from the chicken and discard; wash and pat dry.
  • Lay chicken between sheets of waxed paper- I save cereal box liners for this purpose; gently pound with the fleshy part of your fist (or a meat mallet) to flatten slightly.
  • Rub all over with Italian dressing& let it sit while measuring out the remaining ingredients.
  • Combine bread crumbs and seasonings on a piece of wax paper.
  • Spray a large non-stick frying pan with cooking spray and place over medium heat.
  • When hot, dredge dressing coated breasts through the bread crumb mixture and sauté until golden, about 5- 8 minutes per side.
  • Spoon some spaghetti sauce on top of each breast, sprinkle with Parmesan& top with mozzarella; cover pan and continue to cook over medium heat until sauce is hot and cheese melts, about 3-5 minutes.

4 boneless skinless chicken breasts
1/2 cup balsamic vinegar
2 cups olive oil
2 tablespoons dried crushed italian seasoning mix
2 tablespoons minced garlic
1/4 teaspoon crushed red pepper flakes
1 medium yellow bell pepper, seeded and julienned
1 medium red bell pepper, seeded and julienned
1 medium orange bell pepper, seeded and julienned
1 large red onion, peeled and julienned

Steps:

  • If you are purchasing the chicken breasts halves, make sure they are partially frozen before slicing them. Place your hand on top of the chicken and carefully draw your knife lengthwise throughout the piece to form two 1/4 lb cutlets. Place the chicken cutlets into a large plastic, sealable bag.
  • To make the dressing, simply pour the vinegar, oil, herbs, garlic and red pepper flakes into your shaker bottle, or a small bowl; shake the bottle to mix or whisk in the bowl. Set 1/4 cup of the mixture aside and pour the remainder into the plastic bag. Work the dressing throughout the chicken, seal the bag and refrigerate for a minimum of two hours, but no more than four hours.
  • Preheat the oven to 350F; have a nonstick jellyroll pan ready (baking sheet with a 1/4 inch lip on all sides). Heat a nonstick large skillet on medium-high heat; place 4 pieces of chicken into the skillet and sear for two minutes on each side; transfer the chicken to the pan. Repeat with the next 4 pieces; wipe any residue out of the skillet. Place the pan into the oven and finish cooking the chicken off for seven minutes.
  • Take the reserved 1/4 cup of marinade, place it in the skillet, medium-high heat again; and toss to coat the julienned bell peppers and onions. This will continue to cook in the skillet during the seven minutes the chicken is finishing up in the oven. Occasionally move the vegetables around as you're using minced garlic and you do not want to allow it to brown or burn.
  • Serve a piece of chicken with a side portion of the peppers and onions, or slice the chicken, place inside a sub roll with the peppers and onions to make a sandwich serving.

  • Cover a large cutting board with a sheet of plastic wrap, lay the chicken on top, then stretch a second sheet of plastic wrap across the top. Lightly pound the chicken breasts to an even 1/2-inch thickness (this will help them cook more quickly and evenly). Uncover the chicken and discard the plastic. Sprinkle the chicken with 1/2 teaspoon kosher salt and place in a large ziptop bag.
  • In a large measuring cup or mixing bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, garlic powder, black pepper, and remaining 1/2 teaspoon salt. Pour half of the mixture into the ziptop bag (watch for spills). Seal the bag, removing as much air as possible. Gently "squish" and turn the bag so that the chicken is evenly coated with the marinade, then lay the bag flat in a baking dish to catch any drips. Place in the refrigerator to marinade for 30 minutes or up to 8 hours.
  • While the chicken marinates, prepare the vegetables. Leave the tomatoes whole. Cut the zucchini into 3/4 inch dice (you can leave the peels on). Trim the ends off of the green beans. As you cut, place the vegetables in a second ziptop bag. Pour in the remaining balsamic mixture, seal, and place in the refrigerator with the chicken.
  • When you are ready to cook, preheat your oven to 425 degrees F. Remove the chicken and veggies from the refrigerator and let stand at room temperature while the oven heats. Generously coat a large, rimmed baking dish with nonstick spray or line with parchment paper or a silicone baking mat. Arrange the veggies around the edges of the pan and place the chicken in the center. The veggies can overlap a little, but make sure the chicken is not sitting on top of them.
