BAKED HOMEMADE GRANOLA (LOWER FAT)

Baked Homemade Granola (Lower Fat) image

By making your own granola you can reduce the fat and increase the richness of nuts and seeds. This is great alone as a snack or on top of yogurt or anything! For the mixed nuts and seeds you can use all or a mixture of slivered almonds, coarsley chopped walnuts, pumpkin seeds, sunflower seeds and sesame seeds.

EASY, LOW-FAT GRANOLA

Easy, Low-Fat Granola image

Make and share this Easy, Low-Fat Granola recipe from Food.com.

Provided by Meghan at Food.com

Categories     Breakfast

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 8

2 cups old fashioned oats
1 cup crisp rice cereal
1 1/2 teaspoons ground cinnamon
1/4 cup walnuts (I use walnut pieces)
1 teaspoon vanilla
1/4 cup raw honey
1/2 cup unsweetened applesauce
1/4 cup dried cranberries

Steps:

  • Heat oven to 300°F.
  • In large bowl combine dry ingredients. Slowly stir in the vanilla, honey and applesauce until combined.
  • Spread the mixture evenly on a lightly sprayed baking sheet.
  • Bake for 20 minutes. Add in the cranberries, pressing them into the granola. (If you want the cranberries to cook and be a little firm, which the husband and I do, stir them in after 20 minutes. If you're like my brother, leave the cranberries out and add once the granola has cooked completely so they'll stay moist.) Continue cooking for a total of 30 minutes to an hour - stirring every 15 minutes - or until golden brown. If you stir less often, you'll have more clumps in your granola.
  • Cool completely and store in an airtight container or divide into individual portions. I divided my batch into 2-ounce servings, 8 servings in all.

I love this granola. It's not too sweet and has a nice citrus taste to it. It's great to give as gifts in a nice jar or plastic bag. My kids love to snack on it dry. Adapted from the Best of Bridge recipe book.

LOW FAT GRANOLA

Low Fat Granola image

This recipe is not terribly sweet and it's low in fat...but high in fiber and Omega 3's. Served with low fat yogurt, this recipe can be very addicting! I took recipes from four different source, changed it to my requirements, and came up with this.

  • Preheat oven to 300. Bake in oven for 25 - 35 minutes, stir once or twice, cooking until golden brown.
  • Add the dried fruit at the beginning of cooking if a chewier fruit is desired, otherwise, add the fruit and nuts towards the end of the cooking time.
  • Serve with low fat yogurt.
  • Note: Can use one or more of mixed dried fruit: dried blueberries, dried cranberries, raisins, and chopped dates. Can use one or more of the mixed nuts: pistachios, cashews, peanuts and almonds
  • The cooking pans will determine how crisp the final product will turn out, so if spreading the granola out onto 2 or more pans, it will cook faster.
