Low Fat Beef and Sour Cream Enchilada Casserole image

This dish helps my craving for Mexican flavors without feeling I've totally blown my resolve to eat more healthy. Serve with a crisp cool salad and your done. This also freezes well just omit the cheese and cilantro until after baking.

1 lb lean ground beef
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
2 garlic cloves, minced
1 (15 ounce) whole kernel corn, drained
1 (15 ounce) ranch style beans, drained
1 (10 1/2 ounce) fat-free cream of mushroom soup, undiluted
1 (10 1/2 ounce) Rotel Tomatoes, drained
1 (1 1/4 ounce) package taco seasoning mix
8 corn tortillas, halved
1/3 cup fat free sour cream
1/3 cup reduced-fat Mexican cheese blend
1/2 bunch chopped fresh cilantro

Steps:

  • Brown the beef with onions, peppers, and garlic, stirring to break up the beef.
  • Cook until no longer pink. Drain the meat mixture well. I like to press the mix with paper towels to remove as much excess fat as possible.
  • Return the beef to the skillet.
  • Add the corn, beans, Rotel tomatoes, soup, sour cream and taco mix to the beef and simmer on low for 5 minutes.
  • Spray a 13x9 pan with cooking spray.
  • Layer 8 halves of tortillas on the bottom of pan and top with 1/2 of the beef mixture. Repeat layer with remaining tortillas and beef.
  • Bake at 350°F for about 30 minutes.
  • Remove from oven and top with grated cheese.
  • Let set 5-10 minutes, then top with fresh chopped cilantro and serve.

Since starting Weight Watchers, I've been experimenting with how to make some of my favorite dishes lower in fat and calories. If I've figured correctly (using 93% lean ground beef and part-skim cheese), these enchiladas should have about 7-8 points each. (The nutritional information that RecipeZaar provides does not always coincide with actual package nutritional information, so please use your own judgement.) My non-Weight watching husband enjoyed them as well. Feel free to add more sauce if you like more of that, as well as add the jalapeno with a few seeds, if you like a hotter enchilada.

1 lb extra lean ground beef (93% lean)
1/2 cup chopped onion
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
2 teaspoons chili powder
1/4 teaspoon black pepper
1/2 teaspoon oregano
1/4 teaspoon cumin
1/4 teaspoon paprika
1 jalapeno pepper, chopped, without seeds
2 cups shredded reduced-fat cheddar cheese
1 (20 ounce) can enchilada sauce
8 low-fat flour tortillas

Steps:

  • Brown the ground beef, onions and jalapeno pepper till beef and onions are done. Drain fat. Add all spices, 1 cup of the enchilada sauce and 1 cup of the low-fat cheese. Mix well.
  • Fill the tortillas, and place seam side down in a large baking dish (may take 2 dishes).
  • Pour remaining sauce on top. Sprinkle with the rest of the cheese.
  • Bake at 350 degrees for approximately 30 minutes until bubbly.
  • Serve with additional salsa, chopped green onions, or low-fat sour cream, if desired.

1/2 cup onion, finely chopped
8 ounces extra lean ground beef
2 teaspoons cumin
1 cup pinto beans
1 (14 1/2 ounce) can crushed tomatoes
1 (4 ounce) can diced green chilies
4 low-fat flour tortillas
1 (10 ounce) can enchilada sauce
1/2 cup reduced-fat monterey jack cheese, shredded

Steps:

  • Preheat oven to 350 degrees. Coat an 8-inch square baking dish with nonstick cooking spray.
  • Heat oil in a large nonstick skillet. Sauté onions until translucent.
  • Crumble in beef and cook until no longer pink.
  • Add cumin, beans, tomatoes and chiles.
  • Cook for 10 minutes until sauce is reduced.
  • Spread a little enchilada sauce on each tortilla.
  • Spoon beef mixture into each of the four tortillas.
  • Roll up and place seam down into the baking dish. Four will fit into the dish perfectly.
  • Pour remaining enchilada sauce over the tortilla rolls.
  • Top with shredded cheese.
  • Bake for 20 minutes until sauce is bubbly and cheese has melted.

1 (15 ounce) can beans
2 cups mushrooms
1 onion
1/2 cup plain low-fat yogurt
1 teaspoon cumin
1 garlic clove
1/3 cup reduced-fat cheese (shredded)
8 corn tortillas
1 1/4 cups red enchilada sauce

Steps:

  • Preheat oven to 375 degrees.
  • Mince mushrooms and onion, and mix together with beans, yogurt, cumin, garlic, and 1/4 cup enchilada sauce in a frying pan over medium-high heat until excess moisture boils off and onions are soft.
  • Mix in most of the shredded cheese, reserving a small amount for garnish.
  • Prepare a pan by spraying with Pam and coating the bottom with a little enchilada sauce.
  • Place a scoop of the mixture into each of the 8 tortillas, roll, and place in pan seam side down.
  • Pour the rest of the enchilada sauce evenly over enchiladas.
  • Cover with foil and bake until bubbly. Add reserved cheese and bake until melted.

4 corn tortillas
1 1/2 cups shredded cooked chicken breasts (skinless, white meat)
1/2 cup black beans
1/2 cup sweet corn
hot salsa
1 cup plain low-fat yogurt
1/2 cup reduced-fat sour cream
1/2 cup shredded reduced-fat monterey jack cheese

Steps:

  • Preheat oven to 350 degrees.
  • Coat an 8-inch by 8-inch baking dish with nonstick cooking spray. Warm tortillas according to instructions on package.
  • Combine shredded chicken with black beans and sweet corn.
  • Mix salsa, yogurt and sour cream and spoon half the salsa mixture into the chicken, beans and corn. Blend well.Divide chicken mixture among the tortillas. I know you're thinking, "Yeah, it's low-cal because I only get one measly enchilada." Not true. Okay, partially true, you only get one enchilada per serving, but they're really big. By making larger enchiladas, you can pack them with all the good stuff and still save a couple hundred calories from skipping the extra tortillas.

Number Of Ingredients 8

1 small onion
1/2 pound extra-lean ground beef
2 teaspoons Mexican seasoning
2 cups salsa
1 (4-ounce) can diced green chiles
1 (15-ounce) can pinto or black beans
4 6-inch low-fat flour tortillas
1/2 cup low-fat shredded cheddar or Jack cheese

Steps:

  • Preheat the oven to 350°F. Lightly spray an 8-inch baking pan with cooking spray.
  • Peel the onion and chop into 1/4- to 1/2-inch pieces. Place the onion and ground beef in a large sauté pan and cook over medium-high heat for 10 minutes, or until completely browned. Drain off any grease and add the Mexican seasoning, 1 cup of the salsa, and the green chiles with the juice. Drain the liquid from the beans and stir into the mixture. Cook for 7 to 10 minutes, until the liquid is absorbed. Spoon one quarter of the meat mixture into the center of each tortilla and roll them up. Place the enchiladas seam side down in the pan, cover with the remaining 1 cup of salsa, and top with the cheese. Bake for 15 minutes, or until the cheese is melted. Serve immediately.
