Easy, cheesy, and totally decadent baked spinach!

20 ounces frozen spinach, thawed and squeezed dry
4 ounces cream cheese, cut into small cubes
1 1/2 cups shredded monterey jack cheese
6 slices bacon, fried and crumbled
4 large eggs, beaten
1/4 cup butter, melted
2 cloves garlic, minced
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Add all of the ingredients to a large mixing bowl and stir well to combine.
  • Spread mixture into a 8x8 baking dish and bake for 35-40 minutes or until the edges are golden and the center is set.
  • Serve immediately.

Low-carb egg, and cheese veggie muffins perfect for on the go. You can make them ahead and reheat in the microwave a few seconds. A great change from the usual low-carb bacon and eggs!

cooking spray
4 slices thick-cut bacon, diced
½ (12 ounce) package frozen chopped spinach, thawed and drained
4 mushrooms, chopped
¼ green bell pepper, chopped
2 slices onion, chopped
1 pinch salt and ground black pepper to taste
6 eggs
1 tablespoon heavy whipping cream
1 ¼ cups shredded Colby-Jack cheese, divided
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch onion powder
1 pinch garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Cook and stir bacon in a skillet over medium-high heat until crisp, about 10 minutes. Transfer bacon to a bowl, reserving bacon grease in the skillet.
  • Combine spinach, mushrooms, green bell pepper, onion, salt, and ground black pepper to taste in the skillet with bacon grease; cook and stir until softened, about 5 minutes. Transfer vegetable mixture to a bowl and place in the freezer to cool, about 5 minutes.
  • Whisk eggs and cream together in a bowl; stir in 1 cup Colby-Jack cheese, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, onion powder, and garlic powder. Add cooled vegetables and bacon to egg mixture and mix gently.
  • Scoop 1/4 cup egg mixture into each muffin cup; top each with remaining Colby-Jack cheese.
  • Bake in the preheated oven until egg cups are set, about 20 minutes.

This is very similar to a famous Missouri bakery's recipe for spinach bacon egg souffle. This method is faster and easier, so it works better for families!

8 eggs
¾ cup whole milk
1 teaspoon garlic salt
¼ teaspoon ground black pepper
½ pound bacon
1 red bell pepper, chopped
¼ cup minced onion
1 (10 ounce) package frozen chopped spinach, thawed and drained
½ cup shredded Monterey Jack cheese
¼ cup finely shredded Asiago cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Beat eggs in a bowl using a fork. Add milk, garlic salt, and black pepper to eggs and beat until fully integrated.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate and drain grease from skillet. Chop bacon.
  • Saute red bell pepper and onion in the same skillet over medium-high heat until tender, 5 to 10 minutes.
  • Spread spinach into the bottom of the prepared baking pan; top with bacon and red bell pepper mixture. Pour egg mixture over bacon mixture and sprinkle Monterey Jack cheese and Asiago cheese over egg mixture.
  • Bake in the preheated oven until a knife inserted in the center comes out clean, 35 to 45 minutes.

1 ½ large white onions, finely chopped
6 slices bacon, cut into 1 inch pieces
2 cloves garlic, minced
½ cup all-purpose flour
1 ½ teaspoons salt
¼ teaspoon ground black pepper
2 ½ cups milk
3 (10 ounce) packages frozen chopped spinach - thawed, drained, and squeezed dry
½ cup half-and-half

Steps:

  • Heat butter in a large skillet over medium heat. Cook and stir onion, bacon, and garlic until bacon is crisp, 5 to 7 minutes.
  • Whisk flour, salt, and black pepper into onion mixture until blended and the flour and drippings form a paste, 1 to 2 minutes.
  • Slowly whisk milk into onion mixture. Bring to a boil, continuously whisking, until sauce is thick and creamy, 3 to 5 minutes.
  • Stir spinach and half-and-half into sauce; cook until spinach is heated through, 4 to 6 minutes.

2 Eggs
2/3 Cup Egg Whites (I use the All Whites Liquid Eggs)
2 Cups Fresh Spinach ,packed somewhat firm
3 Slices Swiss Cheese
5 Slices Bacon
1/4 Cup Mushrooms, sliced
2 Green Onion Stems, diced
2 Tablespoons Parmesan Cheese, Shredded
1/2 Teaspoon Mrs Dash
Fresh Ground Black Pepper

Steps:

  • 1. Preheat oven to 375 degrees 2. Cook Bacon in a frying pan, then remove from pan. Reserve 1 Tablespoon of Bacon fat in pan 3. Add Spinach and Green Onions to the frying pan and cook just until the Spinach has wilted 4. Spray a 1 Quart Baking Dish with Non Stick Cooking Spray and layer the Spinach and Onion on the bottom of the pan 5. Next layer the Sliced Mushrooms on top of the Spinach layer 6. The Swiss Cheese comes next. Layer it right on top of the Mushrooms. You may have to cut the slices to fit in a single layer depending on the shape of your Baking Dish 7. In a small mixing bowl, combine the Eggs, Egg Whites, Mrs Dash and Black Pepper, then pour over the Cheese layer in your Baking Dish 8. Now cut your Bacon into bite size pieces and layer on top of the Egg mixture 9. Finally, sprinkle the Parmesan Cheese on top and add another dash of Freshly Ground Black Pepper 10.   • Brown bacon in a medium non-stick skillet over medium heat, using a wooden spoon to ensure even browning. Cook until bacon is browned, about 7-9 minutes. Strain on to a plate lined with a paper towel. Remove all but 2 tablespoons of the bacon grease from the pan then add in spinach. Saute until spinach is wilted, about 3-4 minutes.
  • While bacon and spinach are cooking, whisk eggs, water, salt and pepper in a large bowl. Add cooked, strained bacon and cooked spinach to the egg mixture and mix well. Pour mixture into prepared baking dish.
  • Sprinkle pan with shredded cheese then bake until eggs are set, about 30 minutes. Serve warm or refrigerate for up to 7 days.
