Keto Low-Carb Parmesan Breaded Pan Fried Shrimp image

Keto Low-Carb Parmesan Breaded Pan Fried Shrimp is a quick, healthy, and gluten-free recipe that uses almond flour and only a handful of ingredients to make crispy and crunchy shrimp. Toss these shrimp on salads, in tacos, or serve them with sugar-free, low carb cocktail sauce.

1 pound jumbo shrimp or prawns (peeled and deveined)
1/3 cup finely grated parmesan cheese
3/4 -1 cup blanched almond flour
salt and pepper to taste
seafood seasoning (such as Old Bay) to taste
2 eggs, beaten
1 tablespoon olive oil
3 tablespoons butter

Steps:

  • Get the recipe for the Keto Sugar-Free Cocktail Sauce here.
  • Combine the almond flour, parmesan cheese, seafood seasoning, and salt and pepper to taste in a bowl large enough to dredge the shrimp.
  • Place the beaten eggs in another bowl.
  • Dredge the shrimp in the eggs and then the almond flour mixture. Keep a moist towel nearby to wipe your hands as needed. If your hands are really sticky it will be difficult to keep the breading on the remaining shrimp.
  • Heat a skillet on medium-high heat. When hot, add the olive oil and butter. Allow the butter to melt and add the shrimp.
  • Once you have added the shrimp, try not to move them around much until a crust forms on the bottom of the shrimp. If you move them, you may lose some of the breading.
  • Once a crust forms on the bottom of the shrimp and the breading is golden brown, flip the shrimp. This should take about 3-4 minutes. It could be less depending on the size of your shrimp. Monitor the shrimp closely.
  • Fry the other side of the shrimp for a couple of minutes.
  • Remove the shrimp from the pan. Cool before serving.

This fried shrimp recipe is low carb! It uses pork rinds for the breading, which ends up being versatile and adding a wonderful crunch to the shrimp.

2 pounds large shrimp
1 teaspoon garlic powder
1 large egg
1 tsp, ground pepper
1 teaspoon salt
1 cup of finely crushed pork rinds (they should be like bread crumbs).

Steps:

  • In a bowl, mix together your salt, garlic powder, and crushed pork rinds.
  • In a separte bowl, beat your egg and add your ground pepper.
  • Dip your shrimp in the egg, and then in the pork rind and spice mixture. You can do this multiple times to make sure it's well-coated on all sides.
  • Spray the tray of your air fryer with non-stick spray and add your shrimp in an even layer.
  • Cook according to the specifications of your air fryer. My Gourmia Air Fryer took 20 minutes at 325 degrees. You can check yours halfway through. Measure that the internal temp reads 145 degrees.
  • Eat with chilli sauce, or spritz with lemon and sriracha. Plate and enjoy.

I created this looking for a way to bread shrimp without the ridiculous number of carbs in flour and/or cornmeal. We love it.

Number Of Ingredients 5

2 cups Atkins baking mix
1/3-1/2 cup Old Bay Seasoning
20 ounces peeled deveined, tails on shrimp
oil (for frying)
fresh ground pepper

Steps:

  • Combine baking mix and Old Bay - adjust amount of Old Bay to your own taste.
  • Toss shrimp in breading mixture to coat.
  • Fry in oil preheated in deep skillet on stove. Shrimp should only take 2 mins or so to fry.
  • Top lightly with fresh ground pepper.
