ROASTED BROCCOLI AND CHEDDAR CHEESE DIP
This savory dip features the classic combo of earthy broccoli and rich, tangy Cheddar. Like most cheese dips it's best devoured immediately after it's prepared, while the sauce is piping hot. Be sure to use mild Cheddar in this recipe since sharp Cheddars tend to get grainy when cooked in this type of sauce.

- Position an oven rack in the center of the oven and preheat to 450 degrees F.
- Toss the broccoli florets with the oil, 1/2 teaspoon salt and a few grinds of pepper on a baking sheet and spread out in a single layer. Roast the broccoli until browned in parts and tender but not mushy, 15 to 20 minutes. Transfer the broccoli to a cutting board to cool. Coarsely chop the broccoli.
- Meanwhile, melt the butter in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until softened, 6 to 8 minutes. Add the garlic and stir until softened, about 2 minutes. Stir in the flour and cook until the flour is lightly browned and has a paste-like consistency, 3 to 5 minutes. Stir in the half-and-half and continue to cook, stirring frequently, until the mixture just comes to a bare simmer and has thickened to the consistency of heavy cream, 10 to 15 minutes. Turn off the heat and stir in the Cheddar and Monterey Jack until melted. Gently stir in the roasted broccoli and mustard. Season with salt and pepper.
- Transfer to a serving dish and serve with roasted potato wedges or other dippers.
ROASTED CHEDDAR BROCCOLI
Steps:
- Cut 1 large head broccoli into long spears. Toss with 2 tablespoons olive oil on a baking sheet; season with salt. Roast at 450 degrees F until almost tender, 15 minutes. Toss 1/2 cup breadcrumbs (preferably panko) with 1 cup grated sharp cheddar, 1 bunch sliced scallions, 1 tablespoon olive oil and a pinch of nutmeg. Sprinkle on the broccoli and roast 15 more minutes.

CHEDDAR CHEESE DIP
Steps:
- Grate the cheddar cheese while very chilled, but then let the grated cheese get back to room temperature. In the bowl of a food processor, whirl the cheese, butter, mustard, sherry and cayenne pepper until smooth and creamy
- Transfer to a mixing bowl, cover and refrigerate until needed. (You can do 2 weeks before serving.) Remove from refrigerator 1 hour before serving; fold in the nuts and repack into four 1 cup ramekins of crocks. Dust with chives for garnish
- Serve with crackers, or a crunchy vegetable like celery or fennel or jicama.
BROCCOLI-CHEDDAR POTATOES

- Preheat the broiler. Bring a pot of salted water to a boil. Pierce each potato several times with a fork; put on a plate and microwave until tender, 10 to 20 minutes.
- Cook the bacon in a large ovenproof skillet until crisp. Drain on paper towels. Pour the fat into a bowl; wipe out and reserve the skillet.
- Add the broccoli to the boiling water and cook 3 minutes, then drain.
- Halve the potatoes lengthwise, then scoop the flesh into a bowl, leaving a 1/2-inch-thick shell. Place the shells cut-side down in the skillet and brush with the reserved bacon fat. Transfer the skillet to the broiler; broil until golden, about 3 minutes.
- Mash the potato flesh with the butter and sour cream; season with 1 1/4 teaspoons salt, and pepper to taste. Toss in the broccoli, scallions, bacon and half of the cheddar. Turn the potato shells cut-side up in the skillet. Stuff with the broccoli mixture and sprinkle with the remaining 3/4 cup cheese. Broil until the cheese melts, 3 to 4 minutes. Toss the spinach with the dressing; serve with the potatoes.
ROASTED POTATO WEDGES WITH CHEDDAR CHEESE
I love these potates with barbecued chicken. The cheese sauce is also nice on baked potatoes with broccoli added.

- Preheat oven to 425 degrees.
- In a resealable plastic bag, toss potatoes with oil, salt and pepper.
- Spread evenly onto baking pan and cover with foil.
- Bake for 30 minutes, remove cover and turn potatoes.
- Bake for 10 additional minutes or until lightly browned.
- Heat oil in medium saucepan.
- Add flour and stir over medium heat for 30 seconds.
- Add milk and stir until thickened.
- Reduce heat to low; stir in cheese, green onions, bacon bits and pepper.
- Serve potato wedges with warm cheese sauce.

This is SO delicious. Different from the warm dips you usually see at parties. Everyone just raves when this is served and I am constantly writing down the recipe. It is great with Wheat Thins or Club Crackers. It can easily be made in a crockpot, as well.

- Thaw broccoli, rinse with water, then put in microwavable dish and microwave for 2 minutes. Drain again.
- Add cream cheese and mix well.
- Then add the remaining ingredients and stir until well blended. Bake for 30 minutes or until hot and bubbly. Top with cheddar cheese and continue baking until the cheese is melted, about 5-10 minutes. Serve with crackers.
- This can also be combined in a crockpot and cooked on high for a few hours.
