SKINNY SALSA RANCH DRESSING
Lighten up your favorite salad with this fantastic, salsa ranch dressing! It also makes a yummy sandwich spread or a dip for veggies and reduced-fat tortilla chips. Happily, each tablespoon has only 12 calories and 1 gram of fat.

- In a large bowl, mix together, ranch dressing, salsa, yogurt, and taco seasoning. Mix well.
- This dressing will keep in the refrigerator for at least 1 week. Even longer, depending on the shelf life of the buttermilk in the ranch dressing.

Steps:
- Chop onions finely, then add 2 tbsp vinegar and 1 tbsp salt. Soak overnight if possible. If you prefer a less pungent flavour, microwave the onions for 1-2 minutes.
- Finely dice the tomato, celery and cucumber.
- Roast the bell pepper until skin is slightly charred. Discard the skin, then chop pepper roughly. Add to tomato, celery, cucumber and onions.
- Add the rest of the salt, pepper, oregano, chilli flakes and Worcestershire sauce to the vegetables. If you prefer a less chunky salsa.
