Steps:
- Spray baking sheet with cooking spray. In a large bowl combine pumpkin and egg whites. In a separate bowl combine sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and raisins. (Batter will be very dry at first.) Mix ingredients together just until moistened.
- Drop cookies by tablespoonfuls onto prepared baking sheet, 2" apart. You can leave the cookies in the shape of a ball (the baked cookie will still be a ball) or flatten them out with the bottom of a glass before baking.
- Bake at 350 degrees for 15 minutes.

- Mix sugars and applesauce.
- Add egg, vanilla, pumpkin and pineapple and beat well.
- In a separate bowl, blend flour, oatmeal, baking soda, salt and cinnamon. Add to above ingredients and blend.
- Add chocolate chips and blend well.
- Drop heaping tablespoons onto lightly greased cookie sheets and bake 20-25 minutes.

- Preheat oven to 350 degrees F. Combine the first 5 ingredients in a large mixing bowl. Stir until blended. In another bowl combine all of the remaining ingredients. Slowly add the dry ingredients to the pumpkin mixture stirring until well blended. Cover cookie sheets with aluminum foil, and lightly grease with a non-stick cooking spray. Drop small spoonfuls of dough onto the sheet and bake for 10-15 minutes. Allow to cool. I love to refrigerate these cookies and serve them cold, but I'm sure they would taste great at room temperature as well.

A recipe I developed when wanted a lower fat, lower sugar cookie for tea time. If you've never made low fat cookies before, don't expect the texture to be like a higher fat cookie. Low fat cookies can be just as tasty, but have a more muffin like texture. Make sure you use plain pumpkin, not pumpkin pie filling.

- Preheat oven to 375 degrees. Line a large baking sheet with parchment paper.
- In a large mixing bowl, stir together applesauce, sugar, splenda, egg whites, pumpkin, and vanilla until well mixed. Stir in chocolate chips.

- Add baking soda, baking powder, salt, pumpkin pie spice and flour. Stir until well combined
- Fold in dark chocolate chips.
- Drop by large, rounded tablespoons onto a baking sheet sprayed with nonstick cooking spray or covered in parchment paper or a silicone baking mat.
- Bake for 12-15 minutes or until cookies are just beginning to brown around the edges.
- Let the cookies cool on the baking sheet for two minutes, then transfer to a wire cooling rack and cool completely.
