CANDIED BACON

This sugary candy-coated bacon is always a crowd pleaser and is surprisingly easy to make. I like to use sorghum, a grass much like sugar cane, which came to the Americas via Africa during the slave trade. The juice is extracted from the crushed plant and then boiled down into a syrup. I love the rich flavor of it, but feel free to use maple syrup or molasses instead if you like.

Time 40m

Yield 12 slices

Number Of Ingredients 5

Nonstick cooking spray, for the rack
1 pound thick-cut bacon
1/3 cup sorghum (or molasses)
1/2 cup firmly packed light brown sugar
1 tablespoon coarsely ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil and place a wire rack on top. Coat the rack with nonstick cooking spray.
  • Arrange the bacon slices on the wire rack in a single layer. Brush the bacon slices with half the sorghum. Sprinkle with half the brown sugar and half the pepper, pressing to adhere to the sorghum. Turn the bacon over and repeat the process with the remaining sorghum, brown sugar and pepper. Bake until the fat renders, 20 to 25 minutes.
  • Let stand 5 minutes. (The bacon will crisp as it stands.)

Time 19m

Yield 4 servings

Number Of Ingredients 2

10 strips thick-cut bacon
About 1/4 cup brown sugar

Steps:

  • Preheat oven to 400 degrees F.
  • Position a cooling rack over a foil- or parchment-lined baking sheet (for easy clean up). Lay the strips of bacon on the rack and place in the oven to bake for 6 to 8 minutes.
  • Sprinkle each strip with brown sugar and bake until the sugar melts and caramelizes and the bacon is crispy, another 6 to 8 minutes; don't let them burn. Remove from the pan and lay on the cooling rack to solidify and come to an eat-able temperature.
  • Resist the temptation to eat all of them yourself.

Provided by Russell Jackson, Food Network Star Season 9 Finalist

Time 1h25m

Yield about 5 pounds

Number Of Ingredients 8

1 bottle bourbon
1 ounce loose leaf chamomile tea
5 pounds slab bacon, cubed
1 pound light brown sugar
3 tablespoons ground coffee
3 tablespoons cocoa powder
3 tablespoons sea salt
1 tablespoon espelette pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large pot over medium-high heat, bring the bourbon, 2 cups water and loose tea to a simmer. Drop the bacon cubes into the pot and continue to simmer until the bacon is cooked through and the liquid has reduced.
  • In a shallow bowl, combine the brown sugar, coffee, cocoa, salt and espelette. Using a slotted spoon, removed the bacon cubes from the bourbon mixture and toss with the sugar and spices. Reserve the bourbon mixture.
  • Place the coated bacon cubes in a glass baking dish and bake for 20 to 25 minutes. Remove from the oven and place on wire cooling racks set over lined sheet trays. Spoon the leftover bourbon mixture over the bacon cubes. Cool to room temperature and wrap individually in wax paper.

CANDIED BACON

This is a really easy breakfast item because you can put it in the oven, set the timer and forget about it while you make everything else and pull it out just before sitting down so it's piping hot.

Provided by Alex Guarnaschelli

Categories     side-dish

Time 45m

Yield 4 servings

Number Of Ingredients 3

12 slices bacon, about 1/4-inch thick
Finely ground black pepper
1/3 cup light brown sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
  • Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!

Time 45m

Yield 1 pound (about 16 slices)

Number Of Ingredients 2

1 pound bacon
1 cup packed light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment.
  • Separate the bacon into strips and blot each dry. Spread the sugar on a large plate. Press both sides of each bacon strip in the sugar. Arrange the coated bacon on the prepared baking sheets. Sprinkle with any remaining sugar.
  • Bake the bacon for 15 minutes, turn the strips over and continue to bake until golden and glazed, 15 to 20 minutes more (it will still be pliable). Remove to a rack and let cool; the bacon will harden but it won't be super crispy.

Bacon cooked in the oven (my preferred method of always cooking bacon), with some special additions. Especially good on a BLT! This recipe comes from the Loveless Cafe in Nashville Tennessee.

CANDIED BACON

Candied Bacon image

Provided by Charlie Palmer

Yield Makes 10 slices

Number Of Ingredients 4

1/2 pound bacon slices (10 slices)
1/2 cup Demerara sugar
Special Equipment
brown paper such as a grocery bag or butcher paper

Steps:

  • Cook bacon in 2 batches in a 12-inch heavy skillet over moderate heat, turning over once, until bacon is lightly browned on edges but still flexible, 5 to 6 minutes total per batch. Transfer bacon as cooked to paper towels to drain.
  • Pour off fat from skillet and arrange bacon in skillet in 1 layer. Sprinkle Demerara sugar over bacon and cook over low heat, turning occasionally with tongs, until sugar is dissolved, caramelized (sugar melts very slowly and burns easily; reduce heat if necessary after sugar begins to caramelize), and coats bacon, 8 to 10 minutes. (Bacon will be dark and look lacquered.) Transfer bacon with tongs to brown paper to cool.
