LOADED MASHED POTATOES
This is like the best parts of a loaded baked potato and traditional mashed potatoes all rolled into one. For extra fun, take your leftovers, add some milk or cream, reheat, and you've got a kickin' loaded potato soup!

Steps:
- Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
- Place potatoes into a large pot of lightly salted water; bring to a boil, reduce heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and return them to the pot.
- Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely into the potatoes; add sour cream and continue to beat until combined. Crumble bacon into the potato mixture; add Cheddar cheese and chives and stir. Season potatoes with salt and pepper.

- Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and place in a large bowl. Add the sour cream, milk, butter, salt and pepper. Beat on medium-low speed until light and fluffy. Stir in 2 cups cheese, bacon and onions., Transfer to a greased 3-qt. baking dish. Top with remaining cheese. Bake, uncovered, at 350° for 30 minutes or until heated through and cheese is melted.

These mashed potato fries are a refreshing twist for the classic French fries. Fried mashed potato sticks are made of mashed potatoes, cheese and herbs. These homemade mashed potato fries are crispy on the outside and soft and cheesy from the inside. They are easy to make and perfect as a snack for any meal.

- Peel and cut potatoes into small chunks.Fill a large pot with water, add 1 teaspoon of salt. Add potatoes and bring to a boil. Cook until fork tender, about 20 minutes.Drain and transfer to a large bowl, add salt, pepper, oregano, crushed garlic and shredded cheese. Mash the potatoes into smooth puree. Add cornstarch and mix/mash.Transfer into a piping bag fitted with a round tip and pipe into long strips (on a cutting board or a parchment paper).If you don't have a piping bag, you also can divide the mixture into small balls and roll then into a strips.In a wide pan heat oil to 350F (180C).Fry mashed potato strips until golden brown. Transfer to paper towels to drain excess oil.

- Preheat oven to 350, use 1tbls. butter to grease a 9x13 in backing dish.
- In a frying pan, brown the bacon on medium high turning until desired color, approximately 10 minutes, when bacon is finished, chop up into small bacon bit size pieces.
- In a bowel mix 1 1/2c cheddar cheese, 2/3 ranch packet and mashed potatoes together and spread into casserole dish, put in oven for 15-20 min or until the casserole is blended.
- Add bacon and remaining cheese, remove when cheese is melted, approximately five more minutes.

- Prepare mashed potatoes as instructed in the Simply Potatoes® Traditional Mashed Potatoes package.
- Roll out Pillsbury® Crescent Recipe Creations Seamless Dough Sheet on a flour dusted surface and spoon tablespoons of mashed potatoes onto the dough sheet, leaving an inch between the mounds.
- With a pastry brush, brush a bit of water around the mounds of filling. Lay a second sheet of pasta on top and press to seal the sheets together.
- Press around the mounds to eliminate air in the pocket that contains the filling.
- Cut the ravioli into rectangles using a sharp knife, and press again to seal completely.
- Place each ravioli ½ inch apart onto a baking sheet and bake for 15 minutes at 350 F, or until golden brown.

- Mix potatoes, 1/2 cup flour and cheese in a large mixing bowl. Fry bacon until very crispy. Drain bacon on paper towel. Let cool. After bacon is cool, chop bacon very finely. Add and mix bacon to batter. Preheat oil to 180 degrees. While oil is heating, pour 1 cup of flour out on a baking sheet. Add batter to baking sheet and knead in flour. Roll batter into one long round strip. Cut potatoe batter into 1 1/2 inch stripes. Roll strips in leftover flour and gentle lay the strips in oil and let fry for 2-3 minutes Lay crokettes on paper towel and transfer to dinner plate and enjoy! These tasty treats can be served alone or with you favor meal. These could also be enjoyed with sour cream or your favorite gravy. - - Preheat the oven to 350 degrees.
- - Line a stainless steel baking sheet with parchment paper.
- - Warm the potatoes in the microwave for 5 minutes.
- - Place the mashed potatoes into a bowl and whip with a hand mixer for 1-2 minutes. Add in the shredded cheese, crumbled bacon, and scallions. Fold together with a rubber spatula.
- - Unroll one of the pie crusts directly onto the parchment paper.
- - Gently spread the mashed potato mixture onto the pie crust, leaving 1/4" border all around.
- - Top with the second pie crust, gently pressing the crust into the mashed potatoes. Press the edges together.
