3 cups mashed potatoes
1-1/2 cups shredded sharp cheddar cheese
3/4 cup crumbled cooked bacon
1/2 cup chopped green onions
2 ounces Colby-Monterey Jack cheese, cut into eighteen 1/2-inch cubes
1/2 cup panko bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 large egg, beaten
Oil for deep-fat frying

Steps:

  • In a large bowl, combine potatoes, shredded cheese, bacon and green onions. Divide into eighteen 1/4-cup portions. Shape each portion around a cheese cube to cover completely, forming a ball. Refrigerate, covered, at least 30 minutes., In a shallow bowl, mix bread crumbs, Parmesan cheese, salt and pepper. Place egg in a separate shallow bowl. Dip potato balls in egg, then in crumb mixture, patting to help coating adhere., In an electric skillet or a deep-fat fryer, heat oil to 375°. Fry potato balls, a few at a time, until golden brown, about 2 minutes. Drain on paper towels.

Need to use leftover mashed potatoes? Try these mashed potato bites. They taste like a loaded baked potato. They're so good, you may make mashed potatoes just to enjoy them. Great for a party or an afternoon snack.

2 c leftover mashed potatoes
1 egg, beaten
3/4 c shredded cheddar cheese
1/4 c minced onion
1/4 c bacon bits
1/2 c Panko bread crumbs
1 Tbsp chives
1/4 tsp salt and pepper
oil for frying

Steps:

  • 1. Mix all ingredients, except for Panko crumbs, in a large bowl. (This recipe calls for leftover mashed potatoes so the potatoes will most likely already be seasoned so add just a bit more salt and pepper.)
  • 2. Shape into 1-inch balls or use a cookie scoop. Roll balls in Panko crumbs to coat completely.
  • 3. Heat 1 inch of oil to 375 degrees in an electric skillet or a large frying pan on the stovetop. Fry potato balls in small batches for 2-3 minutes until golden brown. Drain on paper towels.

5 pounds potatoes, peeled and cubed
3/4 cup sour cream
1/2 cup milk
3 tablespoons butter
Salt and pepper to taste
3 cups shredded cheddar cheese blend, divided
1/2 pound sliced bacon, cooked and crumbled
3 green onions, sliced

Steps:

  • Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and place in a large bowl. Add the sour cream, milk, butter, salt and pepper. Beat on medium-low speed until light and fluffy. Stir in 2 cups cheese, bacon and onions., Transfer to a greased 3-qt. baking dish. Top with remaining cheese. Bake, uncovered, at 350° for 30 minutes or until heated through and cheese is melted.

4 slices bacon, or more to taste
3 pounds potatoes, or more to taste, peeled and cut into chunks
½ cup butter
1 (16 ounce) container sour cream
8 ounces shredded Cheddar cheese
½ chopped fresh chives
salt and ground black pepper to taste

Steps:

  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  • Place potatoes into a large pot of lightly salted water; bring to a boil, reduce heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and return them to the pot.
  • Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely into the potatoes; add sour cream and continue to beat until combined. Crumble bacon into the potato mixture; add Cheddar cheese and chives and stir. Season potatoes with salt and pepper.

Two favorite side dishes-mashed potatoes and biscuits-make a terrific combination in this easy-prep recipe that uses Bisquick and ready-to-make mashed potato mix.

4 1/2 cups Original Bisquick™ mix
1 1/3 cups milk
10 slices (12 oz) cooked and crumbled bacon
1/2 cup chopped green onions (8 medium)
1/4 teaspoon garlic powder
1 pouch Betty Crocker™ homestyle creamy butter mashed potatoes, prepared as directed on pouch
1 cup shredded sharp Cheddar or Monterey Jack cheese (4 oz)
3/4 cup shredded mozzarella cheese (3 oz)

Steps:

  • Heat oven to 375°F. Lightly grease or spray bottom and side of 9-inch round cake pan.
  • In large bowl, mix Original Bisquick® mix, milk, 1/2 cup of the crumbled bacon, 1/4 cup of the green onions and the garlic powder until smooth soft dough forms.
  • On surface lightly sprinkled with Bisquick mix, pat dough 1/2 inch thick. Use round biscuit cutter to cut dough into 16 (3-inch) biscuits.
  • On 8 of the biscuits, spoon a heaping tablespoon of the mashed potatoes and a tablespoon of the crumbled bacon onto the centers (you may not use all the potatoes). Top with another biscuit; pinch edges to seal. Transfer to cake pan. Arrange biscuits evenly in pan, with 1 biscuit in the center and 7 surrounding it. Sprinkle tops and sides of biscuits with 3/4 cup of the shredded Cheddar cheese.
  • Bake biscuits about 20 minutes or until golden brown on top and toothpick inserted in center comes out clean. Sprinkle remaining 1/4 cup Cheddar cheese and the mozzarella cheese on top of biscuits. Bake about 5 minutes longer or until cheese is melted. Top with remaining green onions and crumbled bacon.

  • Take potatoes out of the fridge and let sit for a few minutes to take the chill off a bit. Meanwhile shred the cheese, chop scallions, and cook bacon then dice finely. Add potatoes and flour to a large mixing bowl and stir to combine well, then add cheese, bacon, and scallions. Take about a heaping tablespoon of mixture and roll with hands into a small ball. It if doesn’t hold its shape, add a little more flour to make the potatoes sturdy. Repeat until done.
  • Heat oil in a medium sauce pan – or use your fryer – over medium/medium high heat to about 350-375 degrees. Whisk egg into a small bowl and season with salt and pepper. Place bread crumbs in an additional bowl. Dip each ball in egg and then roll in bread crumbs until fully coated. Set aside on a sheet pan.
  • Test oil with one ball. The oil should bubble when potato is in oil and ball should take about 1-2 minutes to brown and cook through. (If takes longer the oil needs to be hotter, if it browned too quickly on the outside and the inside is still cold, the temperature needs to be lower.) Once oil is ready, add potato balls in small batches and fry for 1-2 minutes – it will depend on size. Remove with slotted spoon and place on paper lined plate to allow excess oil to drain off. Repeat until done.
