A flavorful homemade recipe for those who are tired of sweet pasta sauces. Serve over your favorite pasta with a tossed green salad and crusty garlic bread.

1 pound Italian sausage links
½ pound lean ground beef
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, chopped
1 (16 ounce) can canned tomatoes
1 (15 ounce) can canned tomato sauce
1 teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf

Steps:

  • Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
  • In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
  • Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

A delicious cream sauce made with sweet Italian sausage. A super satisfying Italian comfort food recipe.

1 pound pappardelle pasta
1.5-2 pounds sweet Italian sausage
8 cloves chopped garlic
1 medium chopped onion
28 oz whole plum tomatoes
6 oz tomato paste
1 cup heavy cream
1 tsp kosher salt
1/4 tsp crushed red pepper
1/2 tsp dried oregano
2 Tbsp olive oil
3 cups pasta water
1 cup grated Parmigiano or Pecorino
1/4 cup fresh chopped basil

Steps:

  • Chop onion and garlic roughly. Pulse plum tomatoes in blender or break about gently in large bowl with hands. Remove all the sausage from casings.
  • Saute garlic and onions on medium-low heat for 5 minutes to soften.
  • Add ground sausage to pan and turn heat to medium. Saute sausage for roughly 20 minutes. Break sausage apart with wooden spoon during the saute process.
  • Add the salt, crushed pepper, oregano, crushed tomatoes, and tomato paste to the sausage and stir it all together. Cover and cook on medium to medium low for 30 minutes.
  • Boil pasta according to package directions. Before draining pasta reserve 3 cups of pasta water.
  • Remove lid from sauce at 30 minutes and add 1 cup of pasta water. Stir together and cook for 5 more minutes uncovered.
  • Turn heat to low and add cream. Stir together well and cook for 2 more minutes. Taste sauce and adjust salt or pepper if necessary.
  • Place cooked pasta in a large bowl and spoon the sausage sauce all over the pasta. Do not go overboard with the sauce as you might have extra.
  • Mix the sauce and pasta together and if it is not creamy enough add a 1/2 cup of pasta water to loosen the sauce. Do this in small increments to get the perfect consistency.
  • Finally add the chopped basil and serve in bowls with Italian bread, grated cheese, and (if any) the extra sauce. Enjoy!

Pasta and sausage are a combination that usually suggests a dense, heavy tomato sauce. But it can also mean the very opposite. Sausage, used in small amounts, can contribute to a relatively light, almost delicate pasta sauce. In fact, sausage is a gift to the minimalist cook: it comes already seasoned, and its seasoning can be used to flavor whatever goes with it. The technique is simple. It's easiest to start with bulk sausage, or patties, because then there's no need to remove the meat from a casing. (Though that is easy to do: Just slit the casing with a sharp knife and peel it off.) You crumble the sausage into a little melted butter, which adds smoothness to the final sauce (omit it if you prefer), add water or other liquid and finish with grated Parmesan.

1 tablespoon butter
1/2 pound sweet or hot Italian sausage (if using link sausage, remove it from the casing)
1/2 cup water, white wine or red wine
1/2 pound cut pasta like ziti
1/2 cup or more freshly grated Parmesan
Salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Put the butter in a medium skillet over medium-low heat. As it melts, crumble the sausage meat into it, making the bits quite small, 1/2 inch or less. Add the liquid, and adjust the heat so that the mixture simmers gently.
  • Cook the pasta until it is tender but not at all mushy. Reserve about 1/2 cup of the pasta cooking water.
  • Drain the pasta, and dress with the sauce, adding a little of the reserved cooking liquid if necessary. Toss with salt, pepper and Parmesan, and serve.

2 pounds bulk Italian sausage
2 medium onions, chopped
2 medium sweet red peppers, chopped
2 medium green peppers, chopped
6 to 8 garlic cloves, minced
2 tablespoons olive oil
2 cans (29 ounces each) tomato sauce
2 cans (14-1/2 ounces each) Italian stewed tomatoes, drained
2 tablespoons brown sugar
4 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon pepper
1/4 to 1/2 teaspoon cayenne pepper
1-1/2 pounds uncooked bow tie pasta
1/2 cup heavy whipping cream
Shredded Parmesan cheese

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. In a Dutch oven, saute the onions, peppers and garlic in oil until tender. Stir in the tomato sauce, tomatoes, brown sugar and seasonings., Cook pasta according to package directions. Meanwhile, in a blender, process tomato mixture in batches until smooth. Return to the pan. Add sausage; heat through. Gradually stir in cream. Cook and stir over low heat for 5 minutes. Drain pasta; top with sauce. Sprinkle with cheese.

We are Italian and if you go through my recipes you'll find alot of wonderful, quick and easy pasta dishes. We love our pasta and we love garlic, too! Serve this with garlic Texas toast. I can't eat pasta much anymore because I'm diabetic but my husband and daughter love it so I keep making it for them. I usually eat salmon (I have one or two good ones for salmon, too- check them out).

1 lb penne pasta
1 lb broccoli floret (I use frozen)
8 ounces Italian sausage, cut in bite-size chunks (sweet & mild)
2 tablespoons garlic, minced (you can use less if you want)
2 tablespoons olive oil
2 tablespoons butter
1/2 cup grated pecorino romano cheese

Steps:

  • Boil the water and cook the penne according to package directions. DO NOT ever add oil to the water! It will make your sauce slide off the pasta later.
  • Meanwhile, heat the oil (medium-high heat) in a large skillet and saute the broccoli, sausage and garlic until tender and starting to brown, about 15 to 20 minutes.
  • Toss the butter, hot pasta, sausage mixture and romano cheese together and serve. Pass the grated cheese at the table.
