These sandwiches are really delicious and easy to make. They are one of my family's fix-it-quick favorites. I like to serve them with big bowls of steaming vegetable soup and dill pickles on the side. Enjoy!

2 tablespoons butter
8 slices rye bread
8 slices deli sliced corned beef
8 slices Swiss cheese
1 cup sauerkraut, drained
½ cup Thousand Island dressing

Steps:

  • Preheat a large skillet or griddle on medium heat.
  • Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing. On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese. Top with remaining bread slices, buttered sides out.
  • Grill sandwiches until both sides are golden brown, about 5 minutes per side. Serve hot.

I made these this year as one of the many appetizers for our Christmas Eve get together. Perfect!

1 small loaf deli cocktail rye bread or pumpernickel bread
1 bottle thousand island dressing
3/4 lb corned beef or pastrami,sliced very thin
1 can(s) sauerkraut, drained
3/4 lb swiss cheese, sliced thin

Steps:

  • 1. Preheat oven to 350º.
  • 2. Place all bread slices on an ungreased cookie sheet.
  • 3. Spread each slice with Thousand Island dressing, followed by a slice of corned beef or pastrami, folded in square to fit bread slice, followed by a tablespoon of sauerkraut, followed by a square of Swiss cheese.
  • 4. Bake in preheated oven at 350 degrees for 10 to 12 minutes or until cheese is melted.
  • 5. They're best warm from the oven,but still very good after they cool off. ***My tip or trick is to place a heating pad on low. Set the tray of sandwiches on this while the party is going on.*** This keeps them a nice temperture for eating.

1 pkg. (16 oz.) OSCAR MAYER Selects Uncured Angus Beef Franks
2 cans (8 oz. each) refrigerated crescent dinner rolls
1 cup drained and patted dry CLAUSSEN Sauerkraut
1 cup KRAFT Thousand Island Dressing
2 Tbsp. KRAFT Prepared Horseradish

Steps:

  • Heat oven to 375ºF.
  • Cut each frank into 6 pieces. Unroll dough into 16 triangles; cut each triangle lengthwise into thirds. Place 1 tsp. sauerkraut and 1 frank on wide end of each triangle; roll up. Place, point-sides down, on baking sheet.
  • Bake 12 to 14 min. or until golden brown.
  • Mix dressing and horseradish; serve with franks.

These are great little appetizers and so easy to make. Prepare in advance and pop in the oven just before serving.

1 loaf rye cocktail bread
1 (16 ounce) can sauerkraut
1/2 lb corned beef, sliced very thin and quartered
1/2 lb swiss cheese, sliced and quartered
thousand island dressing

Steps:

  • Drain sauerkraut.
  • Place coctail ryes on cookie sheet in single layer.
  • Carefully place corn beef on each slice of rye.
  • Add 1 tablespoon saurerkraut on top of corn beef.
  • Squeeze a dash of thousand island dressing on top of saurkraut.
  • Top with swiss cheese.
  • Preheat oven to 350 degrees.
  • Just before serving slide cookie sheet into oven for 5-8 minutes -- just until cheese has melted.

1 medium onion, chopped
1 medium green pepper, chopped
2 teaspoons olive oil
2 cups cubed cooked beef roast
1 can (14 ounces) sauerkraut, rinsed and well drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1-1/4 cups shredded Swiss cheese, divided
1/3 cup 2% milk
1/2 cup Thousand Island salad dressing
2 slices rye bread, cubed
1 tablespoon butter, melted
1/2 teaspoon onion powder

Steps:

  • Preheat oven to 350°. In a large skillet, saute onion and pepper in oil until tender. Stir in meat, sauerkraut, soup, 1 cup cheese, milk and salad dressing; heat through. Transfer to 4 greased 10-oz. ramekins or custard cups. Place ramekins on a baking sheet., In a small bowl, toss bread cubes with butter and onion powder. Arrange over tops. Bake, uncovered, 15 minutes. Sprinkle with remaining cheese. Bake until cheese is melted, 5-10 minutes longer.

1 cup sauerkraut, rinsed and patted dry
1 (16 ounce) package Little Smokies sausages (for lunch) or 2 (8 count) packages hot dogs (for lunch)
1 cup thousand island dressing
1 teaspoon prepared horseradish (or to taste)

Steps:

  • Unroll dough into 16 triangles; cut each triangle lengthwise into thirds and place one Little Smokey on each piece; If using hot dogs, leave dough in original size and place one hot dogs on each crescent roll.
  • Place 1 tbsp.(for hot dogs) or 1/2 tablespoons (for Smokies) sauerkraut around meat, and roll up --ending with point of triangle. Place on ungreased cookie sheet; Bake at 375° for 12 minutes or until golden brown.
  • Mix dressing and horseradish; Serve as dipping sauce.

The intro says, "Last spring, I was asked by the Good Morning America producers to create a menu for people to enjoy while watching the Academy Awards. This recipe was inspired by a scene in the Oscar-nominated film Quiz Show. Now that fall is here, serve these mini-sandwiches during the half-time show on football Sundays, or rent the movie, make full-sized sandwiches and have a relaxing Friday night."

2 tablespoons reduced-fat mayonnaise (I don't use reduced-fat products)
4 teaspoons Dijon mustard
1 pinch cayenne
2 loaves pumpernickel cocktail bread (8 ounces each, about 44 slices) or 2 loaves rye cocktail bread (8 ounces each, about 44 slices)
1 cup Fontina cheese (4 ounces) or 1 cup swiss cheese, grated (4 ounces)
6 ounces turkey pastrami, very thinly sliced
fresh ground black pepper
1 cup sauerkraut, drained, rinsed and squeezed dry
2 teaspoons vegetable oil, preferably canola oil

Steps:

  • In a small bowl, stir together mayonnaise, mustard and ground red pepper.
  • Spread the mayonnaise mixture over the bread slices.
  • Sprinkle half of the cheese over half of the bread slices.
  • Add a layer of turkey pastrami, black papper, sauerkraut and the remaining cheese.
  • Firmly place the remaining bread slices on top.
  • In a large nonstick skillet or griddle, brush a little oil evenly over the bottoms, and heat over medium heat.
  • Add sandwiches in batches and cook until the undersides are lightly toasted and the cheese has melted, about 45 seconds per side.
  • Add additional oil to pan as needed.
  • Cut each sandwich into 2 triangles and serve warm.

9 inches pie pastry
1 cup corned beef, cooked and thinly sliced
1 cup sauerkraut
1 teaspoon caraway seed
1/2 cup swiss cheese, grated
2 tablespoons brown mustard

Steps:

  • If you haven't cooked your own corned beef, you can find some at the deli - but either way, make sure it's sliced super thin. I find my inexpensive hand slicer is ideal for making short work of slicing chilled meats.
  • Put the sauerkraut in a cast iron or other non-stick skillet on medium heat. For every cup of sauerkraut, add about 1/2 teaspoon of caraway seeds and several grinds of black pepper. Saute the sauerkraut until just begining to brown slightly and the moisture is absorbed. Add the corned beef and mix together well, breaking up the corned beef slices as you do until all is well incorporated. Turn off the heat, add 1 cup grated Swiss cheese for every two cups of corned beef/sauerkraut mix and stir well. Cool to room temperature.
  • Roll out your pastry dough - I used a store-bought dough from the refrigerated section, brought it to room temperature and rolled it out just slightly. You don't want it too thin - the filling is heavy and things could break apart. Cut circles from the dough using a glass, small bowl, pastry round -- whatever you have, and what ever size you'd like. You could make a mega-pie and eat with a fork, but hand-held is fun! Smear a bit of strong mustard on half of the dough circle and put on a good mound of the filling. Fold over, align the edges and crimp with a fork. Brush on a thin layer of egg wash (one egg, well beaten) and poke a couple of small air holes.
  • Bake in a 350 degree oven for 10-15 minutes (this depends on the size of your pie!) until golden brown. Serve with any or all of : Strong mustard, horseradish sauce, Russian dressing. Enjoy!

1 cup thousand island dressing
1 ½ pounds deli sliced corned beef
1 (16 ounce) jar sauerkraut, rinsed and well drained
1 pound sliced Swiss cheese

Steps:

  • Preheat the oven's broiler.
  • Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.
  • Broil for 3 to 5 minutes, until cheese is melted. Serve warm.
