1 tablespoon unsalted butter
Reserved diced 1/2 medium onion from Corn Salsa recipe
Reserved 2 hot dogs from Corn Dogs recipe, sliced into 1/2-inch thick slices
4 large eggs
Kosher salt and freshly ground black pepper
1/2 cup shredded Cheddar

Steps:

  • In a medium skillet over medium heat, add the butter. When it is melted, add the onions and cook until they begin to soften, about 5 minutes. Add the hot dogs and cook to heat them through.
  • Whisk the eggs and season with salt and pepper. Lower the heat in the skillet, pour in the eggs, and sprinkle the cheese on top. Cook, stirring often, until the eggs are cooked to your liking. Serve hot.

1 hot dog bun
1 Tbsp mayonnaise
1 hot dog, sliced
2 Tbsp onion, diced
1/2 can(s) tomato sauce
1/2 can(s) hot dog sauce
1/2 can(s) pork and beans
1 slice american cheese, crumbled
1/2 c dill pickles,slices
3 Tbsp chow chow relish
1 tsp ketchup
1 tsp yellow mustard
1/2 c oyster crackers

Steps:

  • 1. Open the bun flat and spread the cut side with the mayonnaise. Heat a skillet on medium high heat. Lay the bun, mayonnaise side down, on the hot pan. Leave it on the heat until the bun browns. Check it frequently and don't let it burn. It can take 2-5 minutes. Only brown the side with the mayonnaise. Transfer the fried bun to a plate, fried side facing up. Return skillet to the heat.
  • 2. Cut the hot dog into thin coins. Add cut hot dog to the skillet.
  • 3. Add the onion in with the hot dog. Stir/toss occasionally. There should be enough "oil" in the skillet from the mayo and the hotdog but a few drops of olive oil may be needed. Cook till the onion starts to turn clear and the hot dog starts to brown. Spread the hot dog and onion onto the bun. Return the skillet to the heat.
  • 4. Add the tomato sauce to the skillet. (about 6-8oz)
  • 5. Add the hot dog sauce to the tomato sauce. I used Vietti. You can use your favorite brand or homemade. (about 6-8 oz). Stir the tomato sauce and hot dog sauce together and heat thru. Pour or spoon the sauce over the hot dog and onion. Return the skillet to the heat.
  • 6. Add the crumbled cheese on top of the hod dog sauce.
  • 7. add the pickle slices over the cheese.
  • 8. Add the pork and beans with sauce into the skillet and heat it thru. Pour or spoon the beans over the hot dog sauce, cheese and pickle. Turn off the heat and set the skillet aside on a heat proof surface.
  • 9. Add the Chow Chow (you may use hot dog relish) over the pickles. I used hot Chow Chow. You can use mild. You can leave this out if you can't find either one. If you want it to be a bit spicy I do recommend a few dashes of your favorite hot sauce like Texas Pete.
  • 10. Squirt on the ketchup and mustard. (the ketchup is optional but the mustard is really needed) I used yellow mustard but you can use any mustard you have.
  • 11. Top the whole thing with oyster crackers and serve with a fork or spoon. There should be plenty of hot dog sauce (chili) to need a spoon.

1 hot dog bun
1 hot dog, warmed
1/4 cup Coleslaw
1/2 cup chili con carne (your choice of brand)
2 tablespoons chopped onions
1 ounce cheddar cheese, grated
4 slices jalapeno peppers
2 tablespoons oyster crackers

Steps:

  • Warm the hot dog bun.
  • Place bun open faced on a plate.
  • Put your "hot" hot dog in the middle of the bun.
  • Put the coleslaw on top, then the chili. Sprinkle the onions and cheese on top of that.
  • Place your peppers evenly.
  • Sprinkle crackers on top of all this.

10 ounces all-purpose flour
1/2 teaspoon salt
1 teaspoon bicarbonate of soda
3 tablespoons caster sugar
4 ounces dried fruit
1 egg, beaten
7 fluid ounces buttermilk (3/4 Tblsp cream of tartar mixed in 7 fl.oz. milk makes buttermilk)

Steps:

  • Preheat oven 190 degrees Celsius, gas 5.
  • Grease a 2 lb loaf tin.
  • Sift into a large bowl the flour, salt and bicarbonate of soda.
  • Stir in the caster sugar.
  • Make a well in the centre and add the dried fruit, egg and buttermilk.
  • Mix lightly and quickly into the flour for a soft dough.
  • Using floured hands remove dough and knead very briefly.
  • Press into prepared tin.
  • Bake 35 to 40 minutes until top is a dark golden and loaf feels firm.
  • Turn out to cool.

At a flea market in Albany, Ga., I bought a collection of recipes a person that owned a restaurant had put together. Many of the recipes that were included were Pillsbury, Redbook, Better Homes and a few handwritten ones. Many of the clippings were from the 60's and 70's. This particular recipe is a Pillsbury recipe, though I could not find it listed on their web site. The recipe calls for using Pillsbury's All-Purpose Flour or Pillsbury's Self-Rising Flour. It also calls for using solid shortening, though I used margarine. It reminds me very much of a cake like cobbler. I hope you like it.

1 cup miniature marshmallow
2 cups strawberries (two 10 oz. pkgs. frozen, sliced berries in syrup)
3 ounces strawberry gelatin (one 3 oz. pkg.)
2 1/4 cups all-purpose flour
1 1/2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup margarine
1 cup milk
1 teaspoon vanilla
3 eggs

Steps:

  • NOTE: If you use self-rising flour, omit the baking powder and salt. (I use self-rising flour all the time now so I don't have to add the other ingredients in all-purpose flour except when I make bread.) For high altitude adjustment, decrease baking powder to 2 1/2 teaspoons.
  • Preheat oven to 350 degrees. Completely thaw strawberries. Generously grease bottom only of a 13 x 9 inch baking pan. (I used cooking spray.) Sprinkle marshmallows evenly over bottom of pan. Thoroughly combine thawed berries with dry gelatin. Set aside. (No need to sift flour; measure by lightly spooning into cup and leveling off.) In a large mixing bowl, combine remaining ingredients. Blend at low speed until moistened; beat 3 minutes at medium speed, scraping sides and bottom of bowl occasionally. (It's very important to beat for the 3 minutes.) Pour batter evenly over marshmallows. (I used a large spoon instead of pouring.) Spoon strawberry mixture evenly over batter. During baking, the strawberry mixture sinks to the bottom and the cake is on top. Bake at 350 degrees for 45-50 minutes until golden brown and toothpick inserted in center comes out clean. Serve warm or cool with ice cream or whipped cream.
