- Preheat the oven to 350°F. Butter and flour 9x5-inch metal loaf pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder and salt.
- In the bowl of an electric mixer, beat the butter and sugar until light and fluffy, about 2 minutes. Add the eggs one at a time, beating well after each addition. Add the mashed bananas, lemon juice and vanilla extract and mix well. It will look a little curdled at this point; that's okay.
- Add the flour mixture and beat on low speed until just incorporated. Do not over mix. Pour the batter into the prepared loaf pan and bake until a tester inserted into the center comes out clean, 40 to 45 minutes. Let cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.
- Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight on the countertop before serving.

- Preheat the oven to 350°F. Prick the bananas with a fork and place on a baking sheet, still in their peel. Roast for 18 to 22 minutes or until the skins are black. Remove the bananas from the oven and let cool. Then peel the bananas and mash the pulp. Stir in the buttermilk.
- Spray 2 9" x 5" loaf pans with nonstick baking spray containing flour and set aside.
- In a large bowl, combine the butter with 3/4 cup granulated sugar and brown sugar and beat well.
- Beat in the eggs, one at a time. Beat in the vanilla.
- In a medium bowl, combine the flour, baking powder, baking soda, and salt.
- Add the flour mixture to the butter mixture alternately with the banana mixture, beginning and ending with the flour mixture.
- Soon the batter into the prepared pans and sprinkle with the 1/4 cup granulated sugar, using 2 tablespoons for each loaf.
- Bake for 50 to 60 minutes. Remove the bread from the pans and let cool on a wire rack. Store in an airtight container at room temperature.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking pan.
- In a large bowl, cream together the sugar and margarine until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.
- In a large bowl, sift together flour, baking soda and salt. Blend this mixture into the egg mixture, alternately with the buttermilk; stir just to combine. Fold in the mashed bananas; mixing just enough to evenly combine. Pour batter into prepared pan.

- Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Grease a 9×5-inch loaf pan or coat with nonstick spray. Set aside.
- Whisk the flour, baking soda, salt, and cinnamon together in a large bowl.
- Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and brown sugar together on high speed until smooth and creamy, about 2 minutes. On medium speed, add the eggs one at a time, beating well after each addition. Beat in the yogurt, mashed bananas, and vanilla extract on medium speed until combined. With the mixer running on low speed, slowly beat the dry ingredients into the wet ingredients until no flour pockets remain. Do not overmix. Fold in the nuts, if using.
- Spoon the batter into the prepared baking pan and bake for 60-65 minutes. Loosely cover the bread with aluminum foil after 30 minutes to help prevent the top and sides from getting too brown. A toothpick inserted in the center of the loaf will come out clean when the bread is done. Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.
- Cover and store banana bread at room temperature for 2 days or in the refrigerator for up to 1 week. Banana bread tastes best on day 2 after the flavors have settled together. See post above for freezing instructions.

- Heat the oven to 350 degrees. Grease an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan with coconut oil and line it with parchment.
- Wash the bananas then trim and discard the tips. Peel the bananas, then slice the peels crosswise into 1/4-inch-thick strips. Place them in a small bowl and toss with 1 1/2 teaspoons flour to coat; set aside.
- In a large bowl, use a fork to smush the bananas into a rough purée. (Don't worry about small lumps.) Add the coconut oil, tahini, oat milk, almond and vanilla extracts, and salt. Beat together with a whisk to thoroughly incorporate and create a thick batter. Add the sugar and beat with the whisk to combine.
- Sift the flour, cocoa powder and baking powder into the batter and fold it in using a rubber spatula until no streaks remain. Fold the floured banana peels into the batter.
- Scrape the batter into the prepared loaf pan and smooth the top into an even layer. Bake for about 55 to 65 minutes, until a cake tester or toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10 to 15 minutes, then lift it out onto a baking rack using the parchment. Let it cool a bit, then serve warm with butter slathered on top, if using, or let it cool completely if you want to store it for later. (Wrapped tightly, the bread will keep at room temperature for about 4 days.)
AUNT LYNDA'S CREAM CHEESE FILLED BANANA BREAD
Yummy! The filling in this banana bread is a really neat surprise when you first cut into this loaf. We did put some nuts, sugar, and cinnamon on the top of the loaf before baking. We enjoyed it while it was still just a little warm and then again when it was entirely cool. Both were tasty, but we must say we liked it a little...

- 1. Mix 1 cup sugar, butter and 2 eggs.
- 2. Add bananas, salt, the baking soda dissolved in sour cream, and 2 cups flour. Mix well and add nuts.
- 3. Divide 1/2 of this mixture into 2 greased and floured loaf pans.
- 4. Combine cream cheese mixture ingredients and spread over mixture in pans.
- 5. Spread remaining banana bread batter on top.
- 6. PS ~ I like to sprinkle a few extra nuts on to. Or, sprinkle top with 1 Tbsp sugar mixed with 1/2 tsp cinnamon before baking. Makes a nice crunchy top. But that's totally optional.
