PARMESAN-PESTO WAFFLES

Steps:
- Spray waffle maker with cooking spray; heat until hot. In large bowl, stir together Bisquick mix, milk, oil and 1 egg just until combined (don't overmix). Fold in cheese and pesto.
- Pour batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.
- Meanwhile, fry or poach 6 eggs.
- To serve, place 2 waffles on each plate; top with 1 fried egg.

- In a small saucepan, combine vinegar and brown sugar. Bring to a boil; cook until liquid is reduced to 1/3 cup. In a small skillet, cook bacon over medium heat until crisp. Transfer bacon and drippings to a small bowl; cool slightly. Add butter and goat cheese; beat until blended. , In a large skillet, saute mushrooms in oil until tender; cool slightly. Place 1/4 cup mushrooms in a food processor. Cover and process until very finely chopped. In a large bowl, combine the flour, baking powder, baking soda, thyme, pepper and salt. In another bowl, combine the eggs, milk, oil and chopped mushrooms; add to dry ingredients just until moistened. Fold in the cubed mushrooms. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with goat cheese butter and balsamic syrup.,

Steps:
- Spray a waffle iron with cooking spray and preheat according to manufacturer's instructions.
- Arrange 4 bread slices on a work surface and spread 1 tablespoon pesto onto each slice. Drizzle 1 teaspoon balsamic vinegar onto each of the remaining 4 bread slices. Arrange 1 mozzarella cheese slice and 1 ham slice on pesto bread and top with balsamic bread.
- Cook each sandwich in the prepared waffle iron until cheese is melted and bread is golden brown, 3 to 5 minutes. Spray waffle iron with more cooking spray before cooking each sandwich.
