Limoncello Macerated Strawberries With Mascarpone And Pistachios Recipes

STRAWBERRIES WITH RICOTTA CREAM AND PISTACHIOS

Steps:

• Place the ricotta in a small strainer set over a bowl and refrigerate for 30 minutes to drain the excess liquid.
• Transfer the drained ricotta to a food processor or blender, add the brown sugar and orange liqueur, and process until smooth. (The ricotta mixture can be made up to 8 hours in advance, covered and kept refrigerated.)
• Divide the strawberries among 4 dessert bowls and top each with a 1/4 cup of the ricotta mixture and sprinkle with the pistachios.

FRESH STRAWBERRIES WITH LIMONCELLO

Steps:

• Place cut strawberries in a bowl.
• Pour over the liqueur, orange juice and sprinkle over with freshly ground pepper. Allow to marinate for at least 30 minutes.
• Serve as is, or if desired, with Italian biscuits.

MIXED BERRIES WITH MASCARPONE-LIMONCELLO CREAM

Steps:

• Combine whipping cream, mascarpone, 3 tablespoons sugar, and limoncello in large bowl. Beat until soft peaks form.
• Combine all berries, raspberry preserves, lemon peel, and remaining 1/2 cup sugar in another large bowl; toss gently. Divide berry mixture among 8 coupes. Top with mascarpone cream.
