Number Of Ingredients 13

2 heads broccoli, trimmed into florets and steamed for 4 to 5 minutes
2 tablespoons sherry vinegar
1 tablespoon light brown sugar
1/2 teaspoon red chili flakes
1/4 cup extra-virgin olive oil
2 large cloves garlic, thinly sliced
4 to 5 long strips lemon peel
1 teaspoon salt
1/4 cup olive oil
2 cloves garlic, smashed and thinly sliced
2 long, wide strips lemon peel
1 lemon, juiced
Salt and about 10 grinds freshly ground pepper

Steps:

  • Divide the cooked broccoli into 2 serving bowls.
  • In a small bowl, whisk together the vinegar, brown sugar, and chili flakes until the sugar has dissolved. Set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the garlic and lemon peel and cook briefly until beginning to turn golden brown, about 1 1/2 to 2 minutes. Add the vinegar mixture and salt and simmer 2 minutes longer.
  • Pour dressing over half the broccoli florets and serve immediately.
  • Heat the olive oil, garlic, and lemon peel over medium heat and let sizzle gently for a few minutes until garlic is lightly browned. Add lemon juice, salt, and pepper and heat for another minute. Pour dressing over half the broccoli florets and serve immediately.

4 cups fresh broccoli florets
1 medium onion, halved and sliced
2/3 cup water
1/3 cup Italian salad dressing
1 tablespoon butter
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley flakes
1/4 teaspoon salt

Steps:

  • Place the broccoli, onion and water in a large skillet. Bring to a boil. Reduce heat; cover and simmer for 3 minutes. Add the remaining ingredients. Cook and stir over medium heat for 2-4 minutes or until vegetables are tender and liquid is reduced.

  • Trim woody ends from broccoli stalks, then cut heads away from stems. Peel stems and halve lengthwise. Cut broccoli heads in half through the crown to create two lobes (don’t separate into florets).
  • Heat a large skillet over medium-high heat. Add 2-3 teaspoons oil to pan. Place broccoli in skillet cut side down. Season all over with salt and pepper to taste. Cook undisturbed for about 5 minutes or until the undersides are well browned but broccoli is still crunchy — a cake tester should meet firm resistance when inserted into thickest part of stem.
  • Turn heads over onto floret size for a minute, just to lightly brown rounded sides, then transfer to a cutting board.
  • When cool enough to handle, cut broccoli heads and stems into 1/4-inch (or slightly larger) slices and transfer to a large serving bowl. Add the vinegar, 1 tablespoon olive oil and the honey. Season generously with sea salt. Toss. Taste. Adjust seasoning with more olive oil, vinegar, and salt to taste — I’ve consistently been adding at least another tablespoon each of oil and vinegar. And I find the broccoli can really handle the sea salt, so don’t be shy — salt till it tastes good.
