BEST TAHINI SAUCE
Learn how to make ultra creamy tahini sauce! The best tahini sauce is ultra creamy, deliciously tangy and irresistible. This recipe is easy to make, too. You'll just need a whisk! Recipe yields 1 to 1 1/4 cup; double if desired.

Steps:
- In a medium bowl, combine the garlic and lemon juice. Let the mixture rest for 10 minutes, to give the garlic time to infuse the lemon juice with flavor.
- Pour the mixture through a fine-mesh sieve into another medium bowl. Press the garlic solids with a spatula to extract as much liquid as possible. Discard the garlic.
- Add the tahini, salt and cumin to the bowl. Whisk until the mixture is thoroughly blended.
- Add water 2 tablespoons at a time, whisking after each addition until smooth. (It may seize up, don't worry.) After about 6 tablespoons, you will have a perfectly creamy and smooth, light-colored tahini sauce.
- If desired, thin with additional water for a more drizzly sauce. Adjust if necessary-if you'd like more tang, add more lemon, or for more overall flavor, add another pinch of salt. Your tahini sauce is ready to serve!

TAHINI SAUCE
There's a difference between tahini (sesame paste sold in jars) and tahini sauce (a mixture of tahini, lemon, and garlic). The paste is a great base note for sweet and savory dishes; the sauce is a stand-alone condiment worth drizzling over soups, sandwiches, and much more. Tahini sauce is also essential for great hummus (see box). We follow the Michael Solomonov method of steeping the garlic in lemon juice to remove its bite and let the tahini shine through. - 1. Combine all the ingredients in a small saucepan and stir to dissolve the arrowroot. (Be sure the water is cold or at room temperature, or the arrowroot won't dissolve well.) 2. Place the pan over medium-high heat and bring the mixture to a boil while stirring constantly. Cook while stirring for 1 to 2 minutes or until the sauce thickens. 3. Use immediately. For a Change . . . * For a Sweet and Sour version of this sauce, add 1 1/2 tablespoons rice syrup and 1 1/2 to 2 tablespoons rice or cider vinegar. * For a Light Mushroom version, add 1 cup sliced mushrooms. * For a Ginger Sauce, add 2 tablespoons grated ginger or 1 tablespoon ginger juice.
