1 (3 lb) chicken, cleaned
2 bunches green onions
1 tablespoon light soy sauce
1 tablespoon sesame oil
2 teaspoons salt
1/2 cup peanut oil, heated to smoking point

Steps:

  • Fill a large kettle with water and bring to a boil. (An 8-quart pot two-thirds filled with water works great for a 2 1/2 to 3-pound bird.)
  • When the water boils, place the whole cleaned chicken into it. When the water stops boiling, take the chicken out.
  • Cover the pot and when the water again boils, place the chicken back in the pot. Cover the pot and turn off the heat. Leave the chicken in the pot and the pot on the burner. After one hour, the chicken is done. Remove, and cool.
  • Debone the chicken and tear the meat into small strips.
  • Place them on a large platter.
  • Clean the green onions, and split each onion down the middle. Then cut them up into 1/2-inch pieces and place over the mound of chicken.
  • Pour the soy sauce and the sesame oil over the chicken.
  • Pour the salt over the onions.
  • When you are ready to serve, pour the hot peanut oil over onions and chicken.
  • Toss like salad and serve.

2 lbs chicken thighs, boneless, cut into 1/2 inch slice
1 garlic clove, finely minced
1 slice fresh ginger, finely minced
2 tablespoons green onions, minced
2 tablespoons parsley, Chinese and minced
1 teaspoon salt
1 tablespoon oil
1/2 teaspoon sesame oil
1 tablespoon soy sauce
2 tablespoons sugar
2 tablespoons oyster sauce
1/3 cup hoisin sauce
36 sheets aluminum foil, 5 inch x 5 inch
oil

Steps:

  • Set the foil aside. Mix all of the ingredients together and marinate overnight. Place about a tablespoon of the chicken mixture onto a sheet of the foil and fold diagonally. One side of the diagonally make a 1/4" fold onto and then the other side make the same fold and at the same time press all of the air from the foil, than go back on the other side fold again and repeat on the other side. Finish the off the chicken mixture.
  • Heat the oil a skillet to 375 degree and deep fry the chicken wrap for 2 minutes.

1 lb chicken, cut into bite sized pieces (pork, tofu or beef can be substituted)
3 cups coconut milk
2 tablespoons roasted peanuts (unsalted)
5 white pearl onions, peeled and left whole
3 medium yukon gold potatoes, peeled and parboiled
3 bay leaves
5 cardamom seeds
1 inch piece roasted cinnamon stick
2 tablespoons palm sugar
1 tablespoon tamarind paste, mixed with
2 1/2 tablespoons water
3 tablespoons lime juice
2 -3 tablespoons masaman curry paste (*see Massamun Curry Paste)
1 -3 teaspoon crushed garlic
1 teaspoon fish sauce
thai jasmine rice, cooked
4 tablespoons rice vinegar
1 teaspoon sugar
2 -3 tablespoons cucumbers, sliced
1 shallot, minced
1 -2 Thai red chili pepper, thinly sliced

Steps:

  • *Masaman curry paste is also available in Asian markets.
  • Peel potatoes, parboil in a cooking pot for 10-15 minutes, then cut in 1 to 2-inch chunks.
  • Allow the coconut milk to separate and you will have about two cups of thick "cream" and one cup of thin "milk".
  • In a small saucepan bring the coconut milk to a simmer and add the meat of your choice or tofu.
  • NOTE: If you are using beef you will need another two cups of coconut milk. Simmer the meat until it begins to become tender because beef takes longer, hence the additional milk.
  • Put the coconut cream in a wok and bring to almost a boil, add the massaman paste and "stir fry" until the flavor is maximized. Add the remaining cream and curry paste to the meat.
  • Add the peanuts. Taste and adjust the flavor until it is a good balance of sweet (by adding sugar), sour and salty (by adding tamarind juice, lime juice and fish sauce).
  • Add the remaining ingredients and cook until heated through.
  • Serve with jasmine rice and ajad condiment.
  • To prepare the ajad, combine the ingredients in a non-reactive bowl. Leave to stand overnight or prepare several hours in advance.

3 med. boneless skinless chicken breasts, par-boiled, cooled and torn into bite-size pieces
4 cups iceberg lettuce, washed, patted dry (important) torn into med. sized pieces
1 cup thinly sliced red onion
1/3 cup soy sauce
1/3 cup peanut oil

Steps:

  • Toss cooked chicken pieces, lettuce, onion and soy sauce in glass bowl. Heat peanut oil in saucepan over med.-med. high heat just until smoke begins to roll off top of oil. Quickly remove oil from heat and pour over tossed mixture being careful of splattering due to residual water in lettuce. Toss mixture gently. Lettuce and onion will wilt and soy sauce will be absorbed into veggies and chicken when hot oil is added.

  • Combine all the marinade ingredients in a medium-sized saucepan. Bring to a simmer. Stir and cook until the sugar dissolves. Set aside to cool.
  • Place the chicken in a gallon-size ziplock bag. Carefully pour the cooled marinade mixture into the bag with all the ingredients. Seal the bag and squeeze out as much as air possible. Massage the bag a few times to evenly distribute the marinade. Place the bag in a large deep bowl so it “pushes” the marinade to fully cover the chicken. Plus the marinade won’t cause a mess if your bag accidently leaks. You can marinate the chicken in a large bowl, too. In this case, you might need to flip the chicken 2 to 3 times during the marinating process. Cover with a plastic bag if using a bowl. Let marinate overnight.
  • Chose a pot that is deep and just wide enough to hold the chicken. Add the chicken into the pot, breast-side-up. Pour in all the marinade with the ingredients. If the chicken is not covered, add up to 4 cups water. It’s OK if a small part of the chicken breast is not covered in the liquid.
  • Bring to a boil over medium high heat. Turn to medium-low or low heat. Use a fine mesh strainer to skim the foam and discard. When the broth reduces to a simmer, cover the pot. Simmer for 25 minutes. Turn off the heat. Let the chicken sit in the hot broth, covered, for another 30 minutes, or until the chicken is just cooked. To test, you can either insert a thermometer into the thickest part of the thigh or slice the skin that attaches the thigh to the body: the root of the thigh should no longer be pink. Soak the chicken in the broth, covered, if the chicken is not cooked. If the chicken is still very raw, return the pot to a simmer and cook until the chicken is fully cooked.
