BRATWURST WITH POTATO CAKES

3 medium Yukon gold potatoes (about 3/4 pound total)
1 pound sauerkraut, drained, rinsed and squeezed dry
1/4 cup chopped fresh parsley and/or dill
2 large eggs, lightly beaten
1 bunch scallions, thinly sliced
Kosher salt and freshly ground pepper
2 tablespoons all-purpose flour
1 teaspoon extra-virgin olive oil, plus more for frying
4 links bratwurst (about 1 pound total)
6 tablespoons whole-grain mustard
2 tablespoons sour cream

Steps:

  • Pierce the potatoes in a few places with a fork; microwave until slightly softened, about 4 minutes, then halve lengthwise. When cool enough to handle, grate the cut sides on the large holes of a box grater into a large bowl.
  • Add the sauerkraut to the grated potatoes along with the herbs, eggs, three-quarters of the scallions, 1 teaspoon salt, and pepper to taste. Stir in 1 tablespoon flour, then form into four 1/2-inch-thick patties. Sprinkle the patties with the remaining 1 tablespoon flour.
  • Heat the olive oil in a medium skillet over medium heat. Pierce the bratwurst all over with a fork, add to the pan and cook, turning, until golden brown, 5 minutes per side. Meanwhile, heat 1/3 inch olive oil in a large skillet over medium heat. Add the potato patties and cook until golden, 6 minutes per side. Drain on paper towels.
  • Remove the bratwurst from the skillet and reduce the heat to medium low. Add 1/2 cup water and bring to a simmer, then add the mustard and sour cream and stir until hot. Cut the bratwurst into pieces and serve with the potato cakes, sauce and the remaining scallions.

Kosher salt
1 1/4 pounds red-skinned potatoes, cut into 1/2-inch chunks
3 tablespoons unsalted butter
6 fully cooked bratwurst, halved lengthwise (about 11/4 pounds)
2 Golden Delicious apples, cut into 1/2-inch chunks
Freshly ground pepper
1 bunch scallions, chopped
1 tablespoon chopped fresh sage
1 tablespoon apple cider vinegar
1 tablespoon honey
1/4 cup sour cream
1 tablespoon grainy mustard
1 cup sauerkraut, drained, rinsed and warmed

Steps:

  • Preheat the oven to 250 degrees F. Bring a large saucepan of salted water to a boil; add the potatoes and cook until just tender, about 5 minutes. Drain and pat dry.
  • Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the bratwurst and cook, turning, until browned, about 4 minutes. Remove to a rimmed baking sheet and keep warm in the oven.
  • Add 1 tablespoon butter to the skillet along with the potatoes and apples; toss. Season with 3/4 teaspoon salt and a few grinds of pepper. Increase the heat to medium high and cook, tossing occasionally, until the potatoes and apples are golden brown and tender, 8 to 10 minutes. Add the scallions and sage and cook until the scallions are wilted, about 2 minutes. Add the vinegar, honey and the remaining 1 tablespoon butter. Cook, stirring, until the potatoes and apples are glazed, about 1 more minute.
  • Mix the sour cream with the mustard in a small bowl. Serve the bratwurst with the potatoes and apples, sauerkraut and sour cream mixture.

1 cup beef broth
5 fully cooked bratwurst links, cut into 1/2-inch slices
2 medium tart apples, peeled and cubed
1 medium onion, chopped
1 teaspoon salt
2 tablespoons sugar
3 tablespoons butter

Steps:

  • In a skillet, bring potatoes and broth to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add bratwurst, apples, onion and salt; cook for 5-10 minutes or until potatoes are tender and broth has evaporated., Push bratwurst mixture to the sides of pan. Place sugar in the center of pan; cook until sugar is melted and golden brown. Add butter; cook and stir until butter is melted. Toss with the bratwurst mixture; serve immediately.

1 pound sauerkraut (1 can), drained
1 onion, sliced thin
1 tablespoon butter
1/2 cup dry white wine
1 cup chicken stock
1 tablespoon brown sugar
1 tablespoon white wine vinegar
Coarse salt and freshly ground pepper to taste
8 bratwurst sausages
12 small red-skinned potatoes

Steps:

  • Simmer the sauerkraut for 10 minutes in boiling salted water. Drain.
  • Meanwhile, in a large skillet, soften the onions in the butter, browning lightly. Add the sauerkraut, wine, stock, sugar, vinegar, salt and pepper. Bring to boil, turn down, cover and simmer, stirring occasionally, for 30 minutes.
  • Meanwhile, simmer the bratwurst in water to cover for 20 minutes.
  • Add the potatoes to the sauerkraut in the skillet and cook, covered, for 15 to 20 minutes or until tender.
  • While the potatoes are cooking, drain the bratwurst and brown lightly on all sides under a hot broiler.
  • To serve, put the sauerkraut and potatoes on a heated platter and arrange the bratwurst over the top.

green pepper 1 cup chopped
soy sauce 6 tablespoons
orange juice 3 tablespoons
basil 1 1/2 teaspoons dried
salt 3/4 teaspoon
pepper dash

Steps:

  • In a heavy skillet, heat oil over medium-high heat. Add the potatoes cover and cook for 6 minutes or until browned and crisp-tender, stirring occasionally. Add bratwurst, onion and green pepper. Cook and stir for 5 minutes or until meat is heated through and vegetables are crisp-tender. Combine the soy sauce, orange juice, basil, salt and pepper add to the skillet. Cook and stir 1-2 minutes longer or until meat and vegetables are evenly coated.

This was really surprisingly good for such a quick and easy meal. The flavors blended well together and Dave added the mustard on the side. I thought this would serve 4 but Dave was hungry so I stated between 2-4 servings. He kept taking the brats out of the pan while I was cooking. From American Home Town Cookbook made my way.

2 teaspoons extra virgin olive oil
2 medium potatoes, cut in half lengthwise and sliced
4 -6 fully cooked bratwursts, cut into bite size pieces (I used Johnsonville)
1 small red onion, sliced
1/2 red pepper, sliced
1/2 yellow pepper, sliced
2 tablespoons teriyaki sauce
1 tablespoon orange juice
1/2 teaspoon dried basil
1/8 teaspoon black pepper (or more)

Steps:

  • In a large heavy skillet heat the oil over medium heat.
  • Cook the potatoes until they are lightly browned and crisp-tender, about 20 minutes turning occasionally.
  • Add the bratwurst, onion, and red and yellow bell peppers.
  • Stirring occasionally, cook until the vegetables are crisp-tender and heated through, 10-15 minutes.
  • Combine the teriyaki sauce, orange juice, basil,and pepper in a small bowl.
  • Stir the sauce mixture into the brats and vegetables, and heat through, about 5-10 minutes.
  • We served this with Stone Ground Mustard on the side for dipping the brats.
