This strawberry-spinach salad makes a wonderful light summer meal. All of the flavors and colors complement one another very nicely. Farmers here in Washington grow a lot of strawberries, and they're the sweetest ones I've ever tasted. I'm always looking for new and different ways to use them. -Perlene Hoekema, Lynden, Washington

2 tablespoons sesame seeds
1-1/2 pounds fresh spinach
1/3 cup canola oil
1/3 cup red wine vinegar
1 tablespoon sugar
2 teaspoons minced green onion
1/2 teaspoon paprika
1/4 teaspoon Worcestershire sauce
2 cups fresh strawberries, washed, hulled and halved

Steps:

In a small skillet over medium heat, cook and stir sesame seeds until golden; set aside. Wash spinach thoroughly; dry on paper towels and tear into bite-sized pieces. Blend oil, vinegar, sugar, onion, paprika and Worcestershire sauce. In a large bowl, mix together spinach, strawberries, dressing and seeds. Serve immediately.

Someone brought this salad to a pot luck dinner and I had to have the recipe. I have made it many, many times since then and I have been asked for the recipe every time I bring it somewhere. It is also a great way to get kids to eat spinach!

Ingredients

2 tablespoons sesame seeds
1 tablespoon poppy seeds
½ cup white sugar
½ cup olive oil
¼ cup distilled white vinegar
¼ teaspoon paprika
¼ teaspoon Worcestershire sauce
1 tablespoon minced onion
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
¼ cup almonds, blanched and slivered

Steps:

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.

2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
½ cup vegetable oil
¼ cup white wine vinegar
½ cup white sugar
¼ teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

Steps:

In a large bowl, toss together the spinach and strawberries.
In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

Ingredients

1 lemon
2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil
1 teaspoon poppy seed
1/4 cup sliced natural almonds, toasted
1 1/2 cups strawberries, hulled and quartered
1/2 cup cucumber, sliced and cut in half
1/4 cup red onion, sliced into thin wedges
1 (6 ounce) package Baby Spinach

Steps:

Dressing: Zest lemon to measure ½ teaspoon zest. Juice the lemon to measure 2 tablespoons of juice. Combine zest, juice, vinegar, sugar, oil and poppy seeds in small bowl. Whisk until well blended. Cover; refrigerate until ready to use.
Preheat oven to 350°F.
Salad: Spread almonds in single layer over bottom of small pan. Bake 10-12 minutes or until lightly toasted. Remove from oven; cool almonds in pan.
Meanwhile, hull strawberries; cut strawberries into quarters. Score cucumber lengthwise; remove seeds. Slice cucumber; cut slices in half. Slice onion into thin wedges. Place spinach in large serving bowl; add strawberries; cucumber and onion. Whisk dressing; pour over salad, gently tossing to coat. Sprinkle with almonds. Serve immediately.

1 pint fresh strawberries, hulled and sliced
1/2 cup sugar

1/4 teaspoon paprika
1/2 cup vegetable oil
1/4 cup cider vinegar

Steps:
