LEMON YOGURT PANCAKES WITH BLUEBERRY TOPPING



Lemon Yogurt Pancakes with Blueberry Topping image

Number Of Ingredients 14

1 1/2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon kosher salt
3/4 cup milk, plus more if necessary
1/2 cup plain Greek yogurt (see Cook's Note)
2 large eggs
2 teaspoons lemon zest
1 teaspoon vanilla extract
Unsalted butter or nonstick cooking spray, for cooking
Blueberry Topping, recipe follows
1 1/2 cup frozen blueberries
1/4 cup sugar
2 tablespoons lemon juice

Steps:

  • Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, yogurt, eggs, lemon zest and vanilla in a separate bowl. Stir the wet ingredients into the dry until just combined. If the mixture is too dry, add 1 to 2 tablespoons of milk to thin it out. Allow the batter to rest at least 15 minutes.
  • Preheat a griddle or nonstick skillet over medium-low heat and preheat the oven to 200 degrees F.
  • Coat with the griddle or skillet with butter or nonstick spray. Ladle the pancake batter on the griddle. Cook until bubbles begin to form and the bottom of the pancake is golden brown, 2 to 3 minutes. Flip and cook an additional 2 minutes. Repeat with the remaining batter. Keep the pancakes warm in the oven until ready to serve. Top with Blueberry Topping and serve warm.
  • Combine the blueberries, sugar, lemon juice and 1/4 cup water in a small saucepan and cook over medium heat. Use a fork to gently mash some of the blueberries and release their juices. Cook until the sugar completely dissolves, 5 to 7 minutes.

I've seen several lemon pancake recipes, but they had either cottage cheese or ricotta. These are made with yogurt. They're low fat too. From Outpost Natural Foods. Instead of lemon flavored yogurt, I use plain and add 1/2 lemon to a double batch. 8 pancakes wouldn't go very far in this family!

1 egg
1/2 cup fat-free lemon yogurt or 1/2 cup plain nonfat yogurt
1/2 cup milk
2 tablespoons canola oil
1 tablespoon sugar
1/2 teaspoon nutmeg
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda

Steps:

  • In bowl, beat the egg and mix in the yogurt, milk and oil.
  • Stir in sugar and nutmeg.
  • In separate bowl, combine flour, baking powder and baking soda.
  • Add the flour mixture to the liquid and mix. The batter will be thick.
  • Grease and heat a griddle and pour out 1/4 C batter.
  • Cook pancakes until they begin to bubble, then turn and cook on other side.
  • Serve warm with maple syrup or Cherry Pancake Syrup.

Basic pancakes are simple to throw together and are guaranteed to delight a crowd. But go one step further, separating the eggs and beating the whites, and you turn the ordinary pancake into something almost soufflé-like. These also contain ricotta, for extra richness that doesn't weigh the pancakes down.

1 cup ricotta or cottage cheese
1 cup sour cream or plain yogurt
3 eggs, separated
1/2 teaspoon baking soda
1 cup all-purpose flour
Dash salt
1 tablespoon sugar
2 tablespoons lemon juice
2 teaspoons grated lemon zest
Butter or grapeseed or other neutral oil as needed

Steps:

  • Beat together the ricotta or cottage cheese, sour cream or yogurt and egg yolks. Combine baking soda, flour, salt and sugar. Beat egg whites until fairly stiff but not dry.
  • Heat a griddle or large skillet over medium-low heat while you finish batter. Stir flour mixture into cheese mixture, blending well but not beating. Stir in lemon juice and zest, then gently fold in beaten egg whites; they should remain somewhat distinct in batter.
  • Add about 1 tablespoon butter or oil to griddle or skillet and coat surface. When it is hot, add batter by the heaping tablespoon, making sure to include some egg white in each spoonful. Cook until lightly browned on bottom, 3 to 5 minutes, then turn and cook second side. Serve immediately.
