LIGHT AND FLUFFY LEMON POUND CAKE
I know that the description is a bit of a misnomer, but that is what it is. This cake has a light taste. It is not too sweet, but it has plenty of sugar. It is not as dense as most pound cakes.

Steps:
- Pre-heat oven to 350 degrees.
- Sift together the flour and baking soda in a small bowl.
- In a large bowl, cream butter, sugar, cream cheese, and salt together.
- Beat in each egg one at a time. Add the flavors.
- Combine the flour mixture to the wet mixture.
- Finally add the buttermilk.
- Bake in a loaf pan for 50 minutes.

Steps:
- Allow butter to reach room temperature. Cream sugar and butter together until light and fluffy. Add eggs one at a time and mix well. Add in flour, powdered milk, and corn syrup. Beat each in well. Add juice of half a lemon, salt, vanilla, nutmeg and mace. Make sure everything is well blended, and pour into a greased loaf pan.
- Bake at 325 degrees F (165 degrees C) for 45 minutes, checking for doneness by inserting a toothpick and seeing if it comes out clean. You almost want to underbake this.

- Reserve a pinch of salt from the 1/4 teaspoon measurement, then add salt, almond flour, coconut flour, and baking soda to a large mixing bowl. Whisk to combine and break up any lumps.
- Add egg yolks, melted butter/ghee, vanilla, lemon juice and zest, coconut milk, and Lakanto Classic to a large measuring cup, whisk with a fork to combine, then add to the dry ingredients and whisk together until well combined.
- In a medium bowl, whip egg whites with a hand mixer, starting on low and gradually increasing to medium speed, until egg whites form stiff peaks. Add the reserved pinch of salt as soon as the egg whites begin to foam. This will help to stiffen them up. This step sounds like a lot of work but it’s not. It takes about a minute, and the texture of the pound cake is light and fluffy because of this step.
