My grandmother used to always have these cookies when we went to visit. They are the best oatmeal cookie you'll ever eat.

1 ½ cups brown sugar
1 cup white sugar
¾ cup butter, softened
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 cup oats
1 cup crispy rice cereal (such as Rice Krispies®)
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat brown sugar, white sugar, and butter together with an electric mixer in a large bowl until smooth. Add 1 egg one at a time, allowing the first to blend into the butter mixture before adding the next with the vanilla.
  • Stir flour, baking soda, salt, and baking powder together in a bowl. Beat into the butter mixture until just incorporated into a dough. Fold oats, crispy rice cereal, and coconut into the dough; mixing just enough to evenly combine.
  • Drop cookie dough by teaspoonful onto baking sheets.
  • Bake in preheated oven until browned, 8 to 9 minutes. Cool cookies slightly on baking sheets before moving to cooling racks to cool completely.

These cookies do not have white flour in them, just oatmeal that has been run though a food processor. Has raisins. This is a very soft cookie that really expands. I am putting in the option of almond flour with this. Rudy likes them both ways. This is a very old cookie recipe; they must have made these cookies when they ran out of white flour.

Number Of Ingredients 9

3 tablespoons butter
1 cup sugar
3 egg yolks
1 teaspoon vanilla
2 teaspoons baking powder
2 1/2 cups oatmeal, made into flour by running through food processor, Libbie calls it fine oatmeal
1/2 cup almond flour (optional)
3/4 cup raisins
3 egg whites, beaten stiff

Steps:

  • Cream sugar butter together.
  • Add egg yolks; add vanilla.
  • Add baking powder.
  • Add fine oatmeal and almond flour if you want.
  • Add raisins; fold in beaten egg whites.
  • Dough will wet; it takes some stirring to get whites into dough.
  • Using a teaspoon, because these cookies get big and really expand without the almond flour, place onto buttered cookie sheet because they want to stick.
  • Bake in 425 degree Fahrenheit oven for 7 minutes to 10 minutes. Don't let the almond flour cookies get too brown; they are better a little softer.

When our family gathered at my aunt's summer home on Mackinac Island a few years back, she pulled out her tried-and-true recipe and made these wholesome cookies. I think of her and that memorable vacation every time I make these for my own family.

Number Of Ingredients 13

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups quick-cooking oats
2 cups cornflakes
1 cup sweetened shredded coconut
1 cup salted peanuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in remaining ingredients. , Drop by level tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

My grand-daughter sent me this recipe she says they are delicious. These cookies work very well using Splenda or Splenda for Baking,in place of the white sugar. (note, I have been trying different ways to cut down on sugar, using 2 tablespoons molasses in stead of the brown sugar works good and using the splenda for baking, I have also used all butter instead of shortening & butter with good results)

1/2 cup shortening
1 cup brown sugar, packed or 2 tablespoons molasses
1 cup white sugar (or Splenda or 1/2 cup Splenda for Baking)
2 large eggs
1 teaspoon vanilla
1/2 cup butter
2 cups flour
1 cup flaked coconut
1 teaspoon baking powder
1 teaspoon baking soda
2 cups rolled oats
1 cup raisins (optional) or 1 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350°.
  • In mixing bowl cream shortening,butter,and sugars.
  • Add eggs and vanilla until blended.
  • Set aside.
  • In separate bowl, combine dry ingredients.
  • Withholding coconut until all other ingredients are blended.
  • Add coconut.
  • Combine wet and dry ingredients until moist.
  • Drop on greased cookie sheet about 1-2 inches apart.
  • Bake for 10 minutes or until golden brown.
  • Remove from oven immedietly- if overcooked cookies get HARD.

An old recipe from my MIL Libby.The directions for baking are not here as she used a wood stove. Watch them as I am guessing on the time and temperature. She made these a lot when Rudy was growing up. They are wonderful. She loves anything with coconut. Her Mother kept a jar of it just for her.
